Let me start by saying overall, Wallington Deli is excellent. The Chicken parm vodka and the bread are delicious. However...... I ordered the eggplant parm sandwich and I will say, unequivocally, do NOT order this. It's a complete and utter failure and I'll explain why. The eggplant itself is cut so thin, about 2mm on a mandolin. Instead of bread crumbs, it's coated with a foamy egg batter. Fried. There is barely any sauce on it and two lumpy pieces of mozzarella on it. Tasteless. And for $14, I tossed it in the garbage. Stick to the chicken parms. This spot is an "if you know you know" Jersey legend. Wallington Deli is renowned for its house-baked bread and freshly made mozzarella. When I say fresh, I mean so fresh that the gentleman pulling the mozzarella to finish it pulled a sheet right in front of me for my sandwich, still hot and melted. This remains the only place where I've seen the mozz on my sandwich being made. I got the chicken parm cutlet. The bread was perfectly crusty and held up to the sauce well. The chicken cutlet was perfectly fried and crispy. The staff was welcoming and friendly.
