This place makes me want to move to Ashland. GF or not, the food is amazing. We had the quiche, a frittata, coconut gem, cobbler and carrot muffin. The quiche has more of an egg custard consistency with seasonal zucchini and tomatoes. I think the zucchini and tomatoes were oven dried to avoid making the quiche watery. The frittata had an airy consistency with mushrooms and spinach. Both were delicious. Coconut Gem, Carrot muffin and Cobbler were all delicious without being too sugary. We are already planning our trip back and will fill our freezer. I hope they will start shipping bread or some mixes so I can make some baked goodies at home! read more

This March (2021), Vida Baking Company opened its doors in Ashland, bringing with it the Brazilian pão de queijo (pown-deh-kay-zho) cheese bread. This unique bread, based on cassava root starch, has a pretty amazing texture, almost like a choux pastry, if you know what that is. Vida's focus on Pão de queijo may make it a little bit of a one-trick pony, but it's a fantastic trick. I went for one of their sandwiches, and was quite happy with the result. When given the choice between a sweet or savory direction, I'm a sucker for the savory option, and their lunch option did not disappoint. They are still working out some service issues (several items were out of stock, service was a bit slow, etc.) but it's still early days. Their flagship bread is also gluten-free, but if that scares you off a little, don't be put off by it. It's worth a go, and trying something a little unusual can be a delight. Our whole family is so glad Vida exists! We have a child and adult with Celiac disease, and breakfast/brunch out has been pretty much not an option because of cross contact in restaurants. Vida is an entirely gluten free kitchen, so we can eat knowing they won't be sick. And everything so far has been delicious! They have healthy breakfast and lunch options, and we always buy a few things like muffins, bagels etc to take home for the week. I love their sandwiches, but good to know before you order that they are smaller than you might assume. They are fairly priced for the size though. This bakery is definitely a new part of our routine! read more

First time I visited the Vida bakery due to having received a generous gift card, & ordered a pulled pork sandwich to take home for my son. (I'm a vegetarian so have never seen nor ordered such a sandwich before.) Vida Baking Company is a pleasant little place & there were a couple & a trio enjoying lunch there when i entered. Many these days are gluten intolerant so it's nice this cafe exists for them & I did like the easygoing intimate vibe in there. They also have a nice-looking array of baked goods for sale. So, after having received the wrapped sandwich, it felt like just a half sandwich, but they said all their sandwiches are that size. When i got home, my son unwrapped the sandwich - he did take a bite but didn't like it. It was a spread on top of a single piece of bread, but unfortunately they'd burnt it also. (I'd paid & tipped before it was cooked, & it was To-Go, so I had received it wrapped.) Please click on the photo below to see the whole picture. Probably everything else at Vida Baking Co. is great, but it's important to know that the sandwiches are snack sized - and, with just one english muffin sized piece of bread with a topping, they actually don't fit the definition of a "sandwich." ("Sandwich" means a filling fitted between two pieces of bread, or, for example, a person could be "sandwiched" between two people when standing in a crowd, but they can't be "sandwiched" by just one person.) I'm editing my previous review now to give preponderance to the positives: It's nice the gluten-free bakery is next to Ruby's, so those who are gluten intolerant can buy something at Vida Baking Co. & join their friends at Ruby's, or vice versa. Vida Baking has easily become my favorite place to eat in Ashland. The hardest part about it is choosing what to eat! The pulled pork is my favorite and it's a very unique sandwich. Unlike a typical, American-style pulled pork, this does not have a sauce on it. Instead, it is very well seasoned with a variety of spices and topped with red onions. The onions do not have a strong onion taste to them however because they absorb the flavors from the sandwich and it compliments excellently. This is all on a gluten free bread that is perfectly flakey. (I honestly prefer this over an American pulled pork). The Caprese sandwich is fantastic as well and very refreshing. The Misto Quente (grilled ham and cheese) is fantastic and is a very comforting that reminds me of a home cooked meal. The Turkey comes with a delicious tomato jam which is sweet and cooling. The bakery is a quaint, aesthetic place that is very warm and accepting to all! I haven't tried their breakfast items yet but that is next on my list! read more

If you are gluten free you have to try this place! Second day in a row and everything was delicious and high quality. The texture is soft throughout. The muffins are moist all the way to the bottom. I have celiac and have been gluten free (mostly) since the mid 1980s and bakeries have come a LONG way. I live in Portland, OR and it's one of the best places that those with an intolerance of gluten could find themselves, so when traveling I definitely try to find gluten free friendly spots. In Ashland overnight and our continental breakfast options at our hotel left a lot to be desired so we explored a bit and found Vida gluten free Brazilian style bakery and it's amazing! The best breakfast/brunch I've had in so long! I had the caprese sandwich with a dirty chai, and my husband had a quiche with a light roast coffee. The ingredients for my sandwich and his side salad were fresh cut and absolutely divine! His quiche had asparagus and goat cheese; it was a big slice and so yummy! There's indoor seating with adorable decorations and a super clean interior; plus, there's outdoor seating with a cute view of Main Street. I've had a hard time venturing away from my favorites here (Açaí gringo, muffins, smoked salmon sandwich) but today I tried the Chickpea cakes with avocado and tomatoes and it was incredible. This is the best gluten free cafe I've ever been to and it literally never disappoints. I probably visit 2x a week! The staff is so friendly and the patio seating it's lovely. Very difficult to choose what I'm able to eat with no ingredient list visible for any item. I was not allowed to look at the "ingredient recipe binder" so it was extremely tedious for staff to answer my simple questions regarding the flour, dairy and sweeteners used etc... as they had to flip from page to page reading to me while others in line waited... As a celiac household we have tried gluten free baked goods far and wide. The pesto focaccia was by far the best gf bread we have ever had. I am generally not a fan of gluten free bread, but the pão de queijo is absolutely delicious! It goes really well with their savory sandwiches and makes for a great snack. I do think the sandwiches are on the pricey side for the size, so lunch may end up being more expensive than you would expect from a coffee shop. Otherwise, they have a nice deck with outdoor seating and good coffee! read more
