Jeff, the bartender, even created a custom cocktail just for me, and it was absolutely phenomenal. He clearly knows what he's doing, creating drinks that are expertly crafted, delicious, and the perfect complement to the meal. The food is absolutely outstanding every course is flavorful, delicate, and beautifully presented. You can truly taste the care, precision, and creativity that goes into every course. Each bite was memorable and perfectly balanced. The ambiance is elegant, comforting, and beautiful. The restaurant has a warm, inviting atmosphere that allows you to relax while still feeling like you're enjoying a truly special occasion. One of the highlights of the evening was when Chef came out to speak with us. What an amazing experience. He was incredibly charming, gracious, and passionate about his craft. Taking the time to connect with guests added such a personal touch and made the evening even more memorable. To top it all off, our server, Alex, provided the best service I have ever received anywhere, from the patio experience to inside the dining room. We had a reservation at 6:30 but my husband and I arrived 15 minutes early. We checked in with the front desk and they informed us that all parties had to be there before we're being seated and were told that we can walk around until reservations time then come back. We've been to many Michelin stars restaurants but the first experience was never like this. Usually, we'd be offered a seat or the bar while we waited. Our parties were finally arrived so we were seated out on the patio. Can't complain much since we had live summer concert from the beach and the sun kissing your skin. We were offered a refreshment drink which tasted refreshing. Champagne and caviar service came after. The condiments that came with the caviar service were spot on but the vessels they were in were too big, the spoons were too chunky for the tiny diced egg whites, yokes, shallots and chives. The summer menu was much better compared to the fall menu. We enjoyed the foods thoroughly. Final bill were 2,400 for a party of five with no wine pairing. This was truly an experience worth trying. I'm just not sure how likely we are to come back, but that just may be the point. This Michelin star restaurant takes you on a journey through the culinary world of chef Roberto Alcocer. His attention to detail is next to none and really exemplifies what's possible through food. I don't want to go spoil the experience by detailing every bit of it. What I will say, is, it's enjoyable and worth experiencing. The service is quick, vibrant, and performs like a well oiled machine. The experience runs between 2 and a half hours so be ready to spend some time. The food is uniquely prepared and exquisitely presented. The food is really unlike anything we've ever seen and or tasted and that's an amazing quality of this restaurant. 2 reasons I couldn't give Valle a 5 star review. First, the design and decor of the interior of the restaurant is where Valle falls short for me. Very plain, lack of colors, and missing the spirit and heritage of Mexico. Second, they make you pay for the entire meal when you make your reservation. I understand you're a Michelin star, but charging $650 in advance for two people, then giving a separate bill of $120 after dinner concluded, was a bit of a turn off. For context on the second bill, was for what I assume were the 3 drinks we had with dinner. 2 signature cocktails and 1 Diet Coke. In conclusion, this restaurant is still worth going and experiencing if you can afford it. I listened to an interview with Chef Alcocer and he said, "every night we serve, it's like the Super Bowl". This is well beyond any other place in Oceanside and it's absolutely gorgeous inside. When we arrived, the sun was so bright and we sat outside and were served by Alex and he's so sweet. The welcoming appetizers are individually crafted and so creative! Everything is absolutely perfect and so phenomenal we are going back tonight with my son and his Fiance to surprise them with an engagement dinner! The service is impeccable and the food is incredibly elevated. They have several different experiences you can prepay for. Interesting but just missed on a few dishes. One of the Michelin starred restaurants here in San Diego. It's located in a hotel right on the water in Oceanside. Mexican themed, it features an 8 or so course menu. Service is good. Seating is comfortable and the ambience elegant but chill. The food, was inventive but for me a number of dishes missed. The highlight was the Wagyu tacos. The Wagyu was perfect. The tortillas were almost superfluous. The carrot flan dish really missed. The desserts were really solid. Quantity of food was pretty good. Wow, just wow. I am still on cloud 9 after dining here last night with friends. The whole experience had us in complete awe, from the warmest welcome at the door, to being escorted outside for our first courses and cocktails, to every detail in between. The ambiance transports you. Dark woods, a central fireplace, and candlelit tables that make everything feel intentional and just right. The food, drinks, and service all delivered. One of my friends said it was on par with French Laundry. iykyk. I am intentionally leaving out the details because I think the discovery is part of what makes dining here so special. We stopped in tonight for a glass of wine, and to see what Valle is all about. We had two delicious glasses of wine, and when the bill came the very nice waiter told us they automatically add a 20% "service charge". He told us we can add a tip on top if we want, but not necessary. I'm sorry, but the owner of valle should just have the balls to charge 20% more instead of adding a "service charge". That i can respect. After we paid our bill, we walked over to the dining room to check it out and see if we wanted to dine there sometime. But as we entered, the apparent manager intercepted us and told us he couldn't let us just walk around the restaurant. Maybe he thought we just walked in off the street. He asked if we'd ever seen a "chef's table" (of course we have, having dined at a number of Michelin star restaurants) and he showed us the chef's table. Too bad he so disrespected us, as we have long wanted to dine there, but will forever take our business to the many nearby restaurants. This review is long overdue, but dining at Valle was a unique and memorable experience for us! As we were being seated, they also brought a tree out to hang my purse on which was a fun touch. We started with a clarified margarita which was perfectly clear and refreshing. The amuse bouche bites were playful and the deconstructed fish taco bite was my favorite of those. The prix fixe was curated perfectly and very seafood heavy which I loved, highlighting the region's unique ingredients! Valle is a nice experience. Personally for us, it def wasn't 5 stars. If I'm comparing experiences to other Michelin-esque restaurants in the area I liked Jeune et Jolie in Carlsbad over Valle but the location is better at Valle. We opted for the 8 course primavera meal with some drinks. It was our anniversary (we got a couple happy birthdays while there from the staff). You pay for everything ahead of time (tip, meal, etc) and when you leave any add ons are charged also. It's pretty at the bar and in the restaurant. The bathroom is the shared public one outside, which is strange. Service was ok - not friendly. There was a lot of assuming we knew things and then asking us the same things multiple times. We had to ask questions about what things were as well. The food was good and lots of wonderful flavors. My fav was the charred onion which isn't normally my jam but I loved the crust it came in. The item I liked least was the vegetarian oyster snack. Loved the extra dessert they gave us (the tiniest macrons and the cake that looked like a candle). All the wine I had was great. The first Michelin Mexican restaurant I've been to, and I believe one of two in SoCal. Focus of menu is Baja/Valle De Guadalupe food, and the food was excellent. The service is what you would expect of a Michelin restaurant. They have a sommelier, and usually one to two waiters that help you with getting plates, and delivering and explaining the food to you. Eight course meal. I decided to get the add on waygu which was perfectly tender. Aside from that entree, my other favorite was the black cod. I've really become a fan of black cod, and the expazote was a great add on for flavor. Ambiance is somewhat dimly lit, and I loved that aspect. Truly amazing experience here. They did a great job of creating balance with the menu with a variety of proteins (cod, lobster, lamb, and beef). Valle deserves a their star! read more

First visit to this GEM in Oceanside! Part of The Seabird Hyatt. I came across this restaurant in my online search. Their specialty, aside from everything, is the Tasting Menu. We opted for the 1st Come 1st Serve bar seating. So where do I begin.....I am drawn to restaurants that provide an Experience. Food is a big part, Staff is the other big part. Connecting with staff and staff connecting with their customer is my number one thing and I can tell you this. Many restaurants fail at this. I have a handful of favorites in SoCal: The Ranch, The Lanterns Edge at Laguna Cliffs, Mimmos in Palm Desert, several others and have added Valle to this list. First time and on first name basis with this extraordinary staff. Let's start with Jeff at the bar. The craft cocktails (in my case mocktail) but man, does he have one of the most organized bars I have ever seen. He was training Candi at the time we went, Two Rockstars behind the bar. I bumped into Mel as I was roaming about and checking out the decor. Knocked the tradition of indigenous Mexico cooking out of the park. Don't expect chips and salsa. I finally made it to Valle with friends, and there were only a couple of things I didn't care for, but otherwise it was a wonderful dining experience. Think the Baja Version of the French Laundry in Napa. Latin artistry with unique fresh ingredients & a creative elevated spin on gourmet Mexican food. The main bar & dining rooms are inviting with soothing colors , modern touches & welcoming subtle lighting. We decided to go all out and booked the eight course prix fixe menu. We started with cocktails, ( Fogata (super spicy) & rum cha-cha & Malinche) which were absolutely delicious, but we brought our own wines as we're not complete fans of Mexican ( Valle de Guadalupe) Wines. The corkage fee was outrageous at $65 per bottle so be warned. Appetizers are available for a surcharge, but we felt that would be unnecessary considering the tasting menu as follows: Not oyster: a vegan version w/ sea bean meh Melon soup: chlorophyll in a mini tea cup, just ok Fish taco: a micro mini two bite treat, more please Ajo Blanco de Pistache: Beet, tomato grape w/pistachio . We were able to grab a reservation last minute for dinner on a Tuesday. Reservations are all made online and it does require full payment upfront which also includes a fee for booking. A bit excessive with the fee but oh well. We were able to find parking right outside but there is also valet if needed. We were sat at a booth in the back, which was spacious but intimate. The vibe is perfect for a special date or anniversary. We started with cocktails, where I ordered their version of an old fashioned. It came with a little chocolate truffle which I loved. We were served with a few appetizer dishes first before starting on the courses. The soup was my favorite. It was so flavorful and savory, I wish we had a larger serving. I fully enjoyed all the courses on the menu but I would like to highlight the cebolla, etixtamal, longosta and Chileatole. The onion was charred to perfection. The deconstructed tamale was delicious and the lobster was tender and juicy. The black cod in the Chileatole was perfect and I loved the corn nuts in the dish. We ordered both the barbacoa and Wagyu carne asada and by the time the dishes came out I was already so full! Both were delicious but I had to take my portion home, which was still just as delicious when I had it later! On top of the tascalate, a couple other desserts were brought out as well. The candle cake was fun and creative. We were also served a complimentary champagne as we were celebrating an anniversary. Service was top notch. Everyone was super attentive and informative. From the host, to the waiters, and the food runners. Even when I asked to use the restroom (which is outside), the host walked me all the way there and gave me a little back story on the restaurant on the way. After our meal, our waiter took us back in the kitchen for a quick tour, where we also got more dessert, ice cream! Fun fact: I didn't realize the Top Gun house was relocated right next to the restaurant. Was a fun surprise to see. Overall, I had an amazing experience here. Valle was extremely underwhelming. I chose this restaurant to celebrate a milestone birthday, and it ended up being one of the worst fine-dining experiences I've ever had. The service was mediocre at best and, at times, noticeably lacking. After being seated, we were asked what we would like to drink--but that was the only time anyone asked. No follow-up, no additional drink service throughout the evening. While the first few courses were enjoyable and arrived in a reasonable timeframe, the delays between courses grew longer and longer. Eventually, we were left starving and exhausted. Our reservation was at 6:30 PM (and we arrived on time), yet we didn't receive the final course until 10:30 PM. By then, the experience had completely soured. The last course was steak, which I didn't even touch because I was tired and deeply disappointed. The tasting menu was extremely delicious and we were very full. The service and all of the people were very nice. However for a Michelin restaurant there we just some gaps in service - 1) We got the menus and the eaters and then waited for almost 15-20 minutes before we were asked for the drink options. 2) the private room was reserved and there were multiple people outside o that door but it didn't create a good peaceful ambience for other diners 3) there were multiple times when our wine glass was empty and no one noticed for almost 10 minutes to fill it. Phenomenal! With my 33rd birthday coming up, we decided this would be the perfect opportunity to finally try Valle. Living in the area, we'd heard so much about it and were intrigued by what a Mexican fine dining experience could look like. I'll start off by saying that the service was incredibly and exactly what you'd expect of a Michelin starred restaurant. Very attentive but not overbearing and they absolutely went above and beyond to ensure we had a great night. I didn't realize but my driver's license had expired the day before without realizing so they obviously couldn't serve me alcohol. I could tell they felt awful about this (even though it wasn't their fault at all!) and they made me a lovely mocktail (on the house) and provided a lot of other beautiful and complimentary touches throughout the night. We were seated near the windows so had a lovely view of the ocean. Overall, the restaurant felt very intimate which we appreciated despite many others dining that night. Each course was spectacular and thoughtfully presented. We were blown away by how flavorful each item was and I'll say that the black bean soup during the first course was a standout -- amazing what they can do to such a simple dish. A lot of the courses featured some form of mole which were all delicious and packed with flavor. We were very impressed by the line they towed with the use of char, given how easy it is to burn foods. This added wonderful smokey elements to many of the courses. Overall, we are very glad we chose to finally done at Valle. I'd been wanting to try this place for a while, so I decided to come in for an early birthday dinner on a Wednesday night. The atmosphere was quiet, with only a few tables occupied, and I was seated in the main dining room--which was absolutely stunning. They offer valet parking, but there's plenty of street parking, and the restaurant has a beautiful ocean view. The eight-course tasting menu was exceptional--every dish was delicious. The staff was incredibly friendly and attentive. I had three different servers helping me, along with two trainees, and they all did a great job walking me through each course in detail. As a self-proclaimed foodie who's dined at several Michelin-starred spots, I had high expectations. They brought out a few special birthday treats at the end, which unfortunately didn't live up to the rest of the meal. I tried a bite of each and found them all disappointing. Also, the nearly $70 corkage fee was a bit outrageous--almost half the price of the tasting menu. Plus, with an automatic 20% gratuity added I was looking at paying $85 just for the corkage. When I brought it up, they graciously removed the charge since I was there celebrating my birthday, which I appreciated. They also gave me a printed menu of the evening's courses to take home--a nice touch. The staff were all very attentive and knowledgeable about the menu. If I had any questions about a particular course, I could call anyone that was available and they were able to answer with confidence. A Transcendent Dining Experience at Valle - Oceanside's Crown Jewel From the moment my wife, my son, and I arrived at Valle in Oceanside, it was immediately clear we were stepping into something far beyond a traditional dining experience. The location alone sets the tone--perched above the coastline with a subtle grandeur that perfectly foreshadows what awaits inside. But nothing, truly nothing, could have prepared us for the level of hospitality that unfolded the second we stepped through the door. We were greeted by a warm, impeccably polished hostess and a bartender who welcomed us as though we were longtime friends returning home. Before we even reached our seats, we were offered beautifully crafted beverages--an N/A tamarind jalapeño margarita that was so balanced, refreshing, and thoughtfully presented it felt like a prelude to something extraordinary. This was before our 5:00 pm reservation even began. Then came the hospitality moment that stopped us in our tracks: we were escorted outside to a glowing fire pit, where our drinks were served alongside the first bites of the evening. It was intimate, refined, and elevated in a way that felt almost surreal. Our server delivered each explanation of the opening bites with an authenticity and passion that is almost impossible to describe--equal parts story, culture, and craftsmanship. It was clear that every detail, every garnish, every technique had meaning. When we were guided inside for the remainder of our dinner, the experience didn't merely continue--it amplified. Course after course arrived like a symphony, each one more expressive of Valle de Guadalupe than the last. The non-alcoholic beverage pairings were a revelation in themselves--creative, complex, and perfectly matched to the dishes in a way that rivaled (and in some cases surpassed) what other Michelin-level restaurants attempt with wine. The service? It bordered on mythical. * Napkins replaced anytime we stepped away * Thoughtful table touches that appeared as if the staff could read our minds * Gentle escorts to and from the restrooms--an elegant, almost old-world gesture * The moment they brought over a dedicated purse holder for my wife's bag * A pacing that felt impossibly smooth and intentional Every interaction was warm but never intrusive, polished but never forced. This wasn't service--it was hospitality at its highest art form. And just when we thought the night had reached its peak, Valle elevated it once again. We were invited into the kitchen--a behind-the-scenes look at the heart and soul of the restaurant--where we were greeted with perfectly formed ice cream cones, a whimsical and heartfelt touch that made my son's night. Then, as we departed, we were handed exquisite chocolates to take home, extending the experience even as we walked out the door. I have dined at Eleven Madison Park four times. I hold it in the highest regard. But I can say without hesitation: Valle surpassed it. In creativity. In intention. In warmth. In execution. In soul. Michelin may hand out stars in New York like candy, but they need to pay far closer attention here. One star simply does not do Valle justice. Not even close. What Chef and the entire team in Oceanside have created deserves to be recognized on the world stage. This was, without question, one of the most extraordinary dining experiences of our lives. There's a lot to unpack at Valle. It's not easy for any restaurant to make it in today's current environment, let alone one that boasts a Michelin star in a metro region that has only five such eateries. So kudos to the owners and chefs at Valle for making everything work. Our eight course degustation is set in a handsome, sedate dining area, one that is conversely intimate and somewhat grand. It depends on very much where you sit, but the vibe will be different depending on location. I was somewhat reminded of the Grand Kitchen found on the ground floor of the Imperial Hotel in Tokyo. They offer two different wine pairings with the meal, one that features wines from Mexico (almost exclusively from Baja) and a global option. As the cuisine is high end Mexican and I had an embarrassingly limited familiarity with that country's vintners, I chose the former--and I am glad I did. Each course was accompanied by a different vintage, starting with an extremely malty sparkling "champagne" and finishing with a sauterne-like offering that was less viscous than one usually gets with dessert wines. Cumulatively, they tended to be a bit more on the alkaline side than wines in Alto California and there were two or three standouts. I was particularly impressed with the Santo Tomas Viognier. I should also point out that our principal wait person, Kwan, was extraordinarily knowledgeable about the vintages offered and provided great commentary on each. This leads to the service. Although the meal lasted just under three hours and the waitstaff's manner was seemingly casual, in point of fact the dishes and pacing were extremely well-timed. Plates appeared and disappeared with a minimum of fuss, which was greatly appreciated when having an intimate meal with a partner (most of the diners were couples). My wife and I were very much impressed with the way we were treated throughout. One small issue: the restaurant's acoustics are not the best, so there was a fair amount of background noise. Not enough to disturb, but sometimes it was hard to hear our waitstaff, who understandably spoke softly. The dishes themselves, from our non-oyster oyster shooter "butanas" to our mango desserts, were plated and presented beautifully. The attention to detail here is impressive: these dishes are meant to visually impress--and for the most part, succeed. Special kudos to the chayote isa jima (cod in tiger's milk) and the tetela (a chicharron in a salsa verde). Where I thought there might be improvement, unfortunately, was in the food itself. While it was well-prepared and handsomely presented, flavors almost universally failed to pop. For example, their signature charred onion tarte, the cibolla, topped with Beluga caviar, was ambitious and a feast for the eyes, but it did not quite work. Neither of us could really taste the caviar--a criminal waste. The onion was good, but lacked its potential robustness and sweetness. Magnificent to look at, yes, but slightly disappointing to the taste. Another issue: raw greens in several dishes (like the oyster shooters and the molleja, which featured snap peas) tasted too raw and too green. Their flavors could have greatly enhanced each dish had they been ever so slightly altered (whether they be cooked, spiced, fermented, pickled, etc.). As it was, their tastes, while distinctive, were distracting and clashed with the other ingredients. A third point: chef clearly likes a bit of molecular gastronomy. I agree that it has its place, and it only appeared in two of the dishes, but little flavor bubbles really didn't work in this type of cuisine. I enjoy being impressed by the skills of a culinary artist; and they're in evidence, but they seem to be misapplied. There were a couple of exceptions to these slightly less than sapid courses. The lenguado (hallibut with beurre blanc and asparagus) was excellent and the black bean bread with black garlic butter was artisanal cooking done right. But overall, most of the dishes were pleasant and just a bit underwhelming. Were I to rate our experience on the food itself, I would only give the meal three stars. We finished our dinner with a tour of the kitchen, where we met our chef and got tiny sorbet cones. As we left, we also received a small box of sweets to go (an increasingly common part of the degustation experience--Michelin three star Addison down the coast does the same). Everyone seemed genuinely pleased to see us and dedicated to providing a memorable experience. As a customer out for an expensive night of dining, that is very much appreciated. Clearly, restaurants such as Valle are not an every day outing (at least, not for me!). But if money were no object, would I come back again quickly? My fiance and I love exploring the Michelin star restaurants and guide. so this place was top on our list. we made reservations for Valentine's Day which gave us a call Valentine's tasting menu of six courses. are server sierra, was super tentative and shared great knowledge of each dish as it came out. we decided to do the wine pairing with our courses, cause why not, let's get the most out of the flavor experience. the food was amazing, we upgraded one of our main dishes to lagu Rabbi so we at the chance to try the duck and the ribeye. thereby was a company by a mini bone marrow and what tasted like thinly sliced potatoes. the ambience is something of itself, you feel transported to a chic dining restaurant in mexico. I will definitely be back, my fiance is very eager to try other items off of their menu. they also offer a complimentary valet if you're dining, just an fyi! read more
