I'm telling you. This is not your ordinary local pub…read more Gastronomically, Gorgeous. I could only decide (because there were ingenious choices) when our bar server, Hannah, suggested "Sweet Heat." Listed under "Pinsa Flat Bread" it came out 12"x6" thick bread perfectly browned in oven with gooey garlic/mozzarella but, wait, caramelized onions, thick-diced grilled chicken that tasted like bacon. Every two or three inches, one pickled jalapeño perfectly placed for heat that didn't burn, and over it all, drizzled HOT HONEY!!! My mouth was ecstatic. Pretty soon I couldn't wait to cut with my fork and knife to have my third and fourth triangled piece. Sitting, leaning over the high long bar, I just held the sticky, sweet cheesy spicy bread with all ten fingers tipping my head to catch the drips. Passion Orange Guava Cider washed it all down. I made a trip to the restroom and wash my hands then stopped at the kitchen window to rave about the menu with Clayton, the cook. This was all on a summer Monday night in June, low west sun shining into the cozy wood space, baseball silenced on the three screens, fun, toe-tapping music the whole two hours we stayed. The Gibbons couple have scored the times with their courage to do local, unusual creative food with a dialed-back vintage vibe.

Billy's Bar & Grill based solely on their chicken fried steak (CFS) is just that: a great breakfast spot. If you've read my other reviews, you might have noted that chicken fried steak is the bar against which I rate a restaurant and the chicken fried steak on offer at Frank's Diner, Spokane, WA is the chicken-fried-steak bar. Billy's chicken fried steak is an ever-so-close second to Frank's CFS. Billy's CFS was accompanied by lovely and crispy hash browns, 2 over-easy eggs and a biscuit that I don't believe was hand crafted. The biscuit was, however, light and fluffy. Jenn was my bright and smiley server who fielded my many menu-related questions and provided how Billy's owner is an ardent supporter of all things local. I negligently didn't capture pictures of my breakfast but was so excited by Billy's that I dragged my cousin from hospital discharge to Billy's Soooo, dear reader, the accompanying photos are of my cousin's breakfast, the Wishkah omelette. As a flight attendant and an unapologetic foodie, I've eaten my way through cities all over the world. You learn pretty quickly when a restaurant is simply serving food versus when it's serving something made with genuine care. This place falls firmly into the second category. The customer service? Just the sweet Rainier cherry on top of an already incredible experience (and yes... go look at their bakery case while you're there). Jocelyn was phenomenal. I asked how this little slice of heaven came to be, and she happily shared the story behind it. One owner spent years as an executive chef at a casino, while the other built a career as a professional baker in Aberdeen. Boy, does that expertise show. I ordered the fried chicken and waffles. A little context: I mostly eat pescatarian these days, so when I do splurge on chicken, my expectations are sky high. I've built it up in my head as one of the foods I miss most (right alongside a good ribeye), and it's almost always disappointing. Not this time. This chicken is absolutely ridiculous. They debone a chicken thigh and fry it into the crispiest, juiciest piece of fried chicken I've had in a long time. It's made with a gluten-free batter, which means more people get to enjoy it. And before anyone assumes "gluten-free" means sacrificing flavor... think again. Plenty of great chefs will tell you the best fried coatings come from starches like potato or cornstarch anyway. What really made this meal special, though, was that my partner is vegan. If you've ever dined out with someone who's vegan while you aren't, you know how rare it is for both people to walk away feeling like they had an equally great meal. It almost never happens. Here, it did. She ordered the vegan Indian tacos with corn tortillas, and they looked incredible. She was excited to try the fry bread, and instead of simply serving it, the staff thoughtfully explained it wasn't vegan and helped her choose an alternative. That's the kind of attention to detail you don't forget. Our service was perfectly paced. If you're looking for food in five minutes, there are plenty of places where "cooking" means microwaving something that arrived frozen. This isn't one of those places. Everything tastes intentional, and that takes time. Our food still arrived in under 20 minutes, maybe even less. Slow down, talk to the people you're with, and enjoy the experience. Great food isn't supposed to feel rushed. We stumbled across this gem on our drive home from Ocean Shores, and I'm so glad we did. I only wish it were closer to home because we'd become regulars in a heartbeat. I can't recommend this place enough.

The rangoons were chewy, and the filling was weirdly briny and almost stale tasting. Then, we received the appetizer portion of the meal. The egg rolls and potstickers had a sour and stale taste, and the teriyaki chicken was almost tasteless. I didn't bother with the BBQ rib, but my MIL and wife thought they were tough and not worth the effort of eating. The BBQ pork was dry and sour as well, and the fried prawn was gooey inside (?!). Their sweet and sour sauce is gummy and metallic tasting, very strange. After that was the actual meal portion, and... it got worse. The almond chicken was off putting-ly sweet and mushy, the fried rice was overdone and dry, the sweet and sour pork was dry and tough (with more metallic sweet and sour sauce!), and the broccoli chicken tasted like rancid water chestnuts and was horribly salty. For nearly $100, I expected way more. Additionally, the water tasted strange (unwashed cup? bad filtering?) and the hot tea was unpleasantly bitter and needed a lot of sugar (I usually never add sugar to my tea in a Chinese restaurant). The server was very nice, I think she was the owner? The interior was very dated, and incredibly stuffy and hot despite it only being 65 degrees outside.
