This place definitely falls into the first category. This morning I went with the single origin Guatemala drip, and it was exactly what a solid cup of coffee should be. Smooth, rich, and balanced with a nice chocolate note that hangs around just long enough to make you take another sip. No bitterness. No burnt taste. Just a clean, well-roasted cup that says someone here actually cares about the beans. The shop itself has a personality, which I always appreciate. It's decorated with fishing lures, fish artwork, and sculptures scattered around the place. Naturally this leads to the obvious conclusion: the owner is either an avid fisherman... or coffee roasting is just the side hustle between trout expeditions. Either way, the theme works. The space feels relaxed, creative, and comfortable. The kind of place where you can sit with a cup and not feel rushed out the door. And speaking of doors, while I was there there was a steady flow of customers coming in and out. That's usually the universal coffee signal for yep, this place is doing something right. There is ample seating both inside and outside, had I not had my toddler with me I would have loved to sit out front but it is right by the road so a no go with a rambunctious little boy... I love the high ceilings and how the interior design is industrial minimalist. Their modern stadium style seating is welcoming and cozy. The various coffees are consistently good as are their baked goods which they usually source from various local bakeries. The service is decent. They rotate their baristas between their local coffeehouses which makes it fun and fresh for them and happy for us patrons. It's great that they are connected to/a part of 505 Central Food Hall because you can order food with your coffee and sit anywhere.
