It's been great seeing legit ramen shops popping up in Ft. Collins over the past few years. I…read morehaven't patronized Gaku as much as I might like because Old Town parking! Yes, I know there is a paid parking garage not far away, but I dunno. When some of the other ramen shops have ample free parking it is a bit of a turn-off. If I do happen to be passing through Old Town near lunch time I will sometimes take a little detour to see if I can find street parking, and today I happened to score a spot on Linden St. so yay! I was really craving cold noodles for lunch so I stopped in to get some Hiyashi Chuka for take-out. I came in just after noon so I was expecting that there would be a lunch crowd, but the place was empty! Kinda sad, I've enjoyed the food in the past and it has a nice ambiance - I would have stayed if I didn't need to rush home for a conference call - but maybe people wait for happy hour (which starts at 2:00 on Fridays). But, as it was I just ordered at the bar and was on my way in 10 minutes. The Hiyashi Chuka is so satisfying during these heat advisory days - cold noodles with a soy and I think sesame oil dressing, topped with chicken, cucumbers, rolled egg, and pickled ginger. I recommend it! Their Japanese cucumbers are also good as I recall, though I didn't get them this time because it would have been too much food for lunch. If you're wanting ramen even though it has been scorching hot lately I recommend the miso ramen - the dollop of miso butter makes it so so unctuous and delicious. I've heard that the vegetarian ramen is good, too.

If you're anywhere near Fort Collins and haven't tried Kujira Ramen, you're missing out…read more I went all in: gyoza, pork belly steamed buns, and Tonkotsu Ramen -- and every single bite was absolutely unreal. The gyoza came out perfectly pan-seared -- crispy on the bottom, tender on top, and packed with flavor. That dipping sauce had just the right balance of salty, tangy, and savory. You could easily crush two orders without trying. The pork belly steamed buns were next-level. Soft, pillowy buns wrapped around rich, melt-in-your-mouth pork belly. The balance of fat, sweetness, and sauce was perfect. Messy in the best possible way. And then the star -- the Tonkotsu Ramen. The broth was deep, creamy, and packed with flavor -- that slow-simmered richness that tells you it was done right. The noodles had the perfect bite, and the pork was tender and seasoned beautifully. Every spoonful made you slow down just to appreciate it. Hands down one of the best meals I've had in a long time. Clean atmosphere, great service, incredible food. 10/10 -- already planning the next trip back.

But they were also fairly quick with the appetizers that we tried. The barbecue tofu was surprisingly delicious with a great texture and yummy sauce. The Gyoza was also a fan favorite with a light crispy bottom and a good filling. We tried two different ramens with two different proteins. The beef was a bit, tough and dry, but the chashu was nice and soft like melting in your mouth. The broth was also good and the noodles were nice and thin. Overall, I felt like this was a nice bite to eat and definitely filling. The only thing I felt that was lacking was the service on refilling water. I would definitely come back if I was around the area. They definitely got busy pretty quick.

Her recommendations to try anything here are spot on. The food was A1. We had a soup bowl Koi-sho (sp?) with beef, a chicken Thai basil stir fry, crab cheese, and spring rolls. We only regret we can't return in the near future, because we don't live in Colorado. It was completely worth the trip across town from our hotel to enjoy authentic food. The ingredients were fresh, the sauces were put together with expertise, the presentation was just right. I thought the spice level of 1 was perfect--heat that didn't overwhelm the other flavors. My husband didn't complain about his level 2. He thought it was great, but he wouldn't go higher. The restaurant itself is basic tables and chairs, but each table has a beautiful live flower rooting in water. Everything looked and felt clean.

We went there for ramen and were all bummed about that. It was later on a Sat night and we were the only family in the place the whole time. But the chef was very friendly, the cream cheese wontons were the best, and one or two of our dishes were really good. The curry had only a couple potatoes that were way too hard, and it was limited on veggies, but the broths/curries were good flavors. They have mango (in season) sweet coconut rice, which we all love!

We started with the Steelhead Carpaccio. Delightful flavors of salmon, grapefruit, and pistachio prop up the lime cream. All at once makes for a delicious and complex play on a basic Carpaccio. Mains: I went with a Crab Caccio e Pepe, a delicious creamy take on crab and pasta. Just the right amount of Grana Padano and black pepper create the underlying notes for this crab and pasta dish. Delicious. Wife N went with the Blackened Ahi. This was extremely tender, and cooked perfectly (which is to say, absolutely raw with the exception of the flawless eighth-inch sear all around). Fingerling potatoes, horseradish cream and a sweet onion jam routed out the flavors here. Perfect. Place is a bit loud, but has all the vibe you'd expect from an oyster bar. Love Jax! We were welcomed and seated. The service staff was attentive and with the open concept kitchen, one could see the kitchen staff was hustling making all the wonderful food. I had water to drink on this occasion, but my friends enjoyed cocktails and beer. As a table we shared the Brussels Sprouts Tempura. I liked this preparation. The tempura was a crispy coating on the yummy sprouts. One of my favorite vegetables. For dinner, I chose the Wonton Chicken Ramen. The broth was flavorful. It had chicken wontons, spinach, green onions and thin noodles. Two of our party had a good portion left to take home. Jinya has a nice option of purchasing an additional portion of noodles to go with your leftovers. I thought that was a cool touch. With a crowd, it is loud in the restaurant so it was difficult to hear the conversation at our table. That was my only caveat for the evening. Overall good experience.
