We had an enjoyable evening at The Rouxbarb!
We were able to find seats at the bar after learning that reservations were strongly encouraged, and we did not have one since it was our first night visiting the area. We were able to get full service at the bar in addition to a more personable experience with our attentive bartender. I ordered a sparkling wine with lavender syrup which helped me get settled in for what will be our dining experience. We had to hike up a small hill to reach the entrance but then realized there was parking on the same level once we made it up. Noted!

The standout for me was absolutely The Rouxbarb 2.0 burger. I did request the jalapeños to be put on the side so that I can decide how many, or if any, I wanted. This burger was like a party in my mouth, packed with flavor but not overly done. The patty wasn't densely packed and almost fell apart in my mouth which made it a much more enjoyable burger. The bartender informed me that this exact burger won 3rd place in a national Canadian contest! After doing some research on my own, it in fact took 3rd place at The Great Burger Showdown held as part of RC Show 2026 which is the major Restaurants Canada hospitality/foodservice show. How awesome! I wish I could've voted, because this burger is a winner, for sure.
Other highlights included the fried chicken appetizer. Their maple gochujang sauce elevated the flavor profile and the chicken had a nice crisp while maintaining its tenderness.
With a full belly that somehow always has room for dessert, I ordered the peach creme brulee. Have I had creme brulee before? Yes, my fav. Peach creme brulee? No, but it sounded like a good time, and was! I couldn't wait to crack that caramelized sugar coating and go to town. The peach flavor was more than a hint. It tasted like the entire peach was blended into a perfectly rich custard.
I would highly recommend this restaurant tucked away at The Hollows Golf Club. It's definitely a small space, but thanks to Chef Kyle Stewart and staff, it's worth stopping by. read more
