I found out about Authentic Empanada this year at VegFest. They had 3 different empanadas to choose from: Sweet potato, rice and beans, and spinach with vegan cheese. I opted for the spinach and vegan cheese. After I paid they immediately began forming the dough, stuffing it, and frying it up right there before my eyes so it was a visual treat as well as a delicious one. Everyone inside the tent was super nice, and the homemade sauces (one avocado, and the other a sweet habanero) blew my socks off. Super delicious, great service, what more can you ask for?

The rub had helped to brown the turkey skin to a rich raw umber color as well as season the turkey. The turkey received a lot of ooh's and ah's (and yums). The collards greens were fresh and cooked to tender perfection, perfectly seasoned with smoked turkey wings.
