Delicious. Quick friendly service. Amazing food combinations and unique salsas. We stumbled on this place while passing through town and we wish it were in our hometown. This was one of the best little spots ever. We had the chicken lettuce wraps, chicken empanadas, roasted chicken, chicken and chorizo tacos as our entrees and we all shared. As sides we had the shredded cabbage which was my fav, the green beans, french fries and a side of Serrano peppers. Everything was memorable and we would highly recommend this spot for lunch or dinner. It is on the main drag with easy on and off from the highway. Our waitress, Olga was wonderful with her menu selections. Forgot to mention the tiny Delicious cornbread Muffins and the over the top yummy flan and chocolate cake combination dessert. read more

So we we're stopping in Gillette on our way back to Oregon. So I used Yelp to look for some local flavor for our dinner. The Coop sounded good so off we went. I had the half rotissore chicken with 2 sides. The wife had the chimichanga. Wow!!! This was the best dinner of our trip and the wife boasted the best dinner ever! We'd love to steal this place and their staff to Baker City Oregon. We had two drinks and appetizers and the meal, total $50. Well worth it and we took food with us. Try the cabbage and rice &beans. I really wanted to like this place. The Rotisserie Chicken was really good, and that is why they still get the 3 stars. The staff was friendly and helpful even while being busy in the middle of a dinner rush. My main complaint here would be the side dishes. Bland, flavorless and overpriced seemed to be the theme through all of their offered side dishes. (We tried a few) It's one thing for a restaurant to "punt" on the side dishes and not try, it's another to do that and then also charge 7 bucks a piece for them. The "homemade" Mac & cheese was lacking cheese and flavor and seemed no better than a box of Kraft. The homemade cornbread was beyond dry and flavorless, it seemed like it was made with a box of Jiffy Cornbread mix. Bottom line: You can have cheap, flavor lacking sides as plenty of restaurants do, but don't charge 7 bucks a piece for them. read more

What a spot! My husband and I were initially drawn to The Coop because it was pet friendly, and boy did they deliver! As soon as we got there, we were seated in their nicely shaded patio out front. The wait staff immediate brought out a water bowl for our pup, and even offered him a scoop of ice cream, which we had to kindly decline given we were en route to South Dakota. As for food - I wouldn't necessarily call this Latin American cuisine. It's more like a chicken spot. As a vegetarian (which I am), you have one entree option of butter leaf tacos. They were delicious when topped with the green and orange salsa they provide. You also have three or four side options, I ordered the steamed broccoli and asked for a side of their spicy BBQ wing sauce, which was the perfect level of spicy. The Coop probably doesn't need another 5 star review but they certainly earned one. While traveling between Yellowstone and Devil's Tower we hit Gillette right at lunch time. Since it was a beautiful June day all of the outside tables were taken as were those inside. But we only waited a few minutes for a waitress to clean off an inside table & bring us water and menus. The entire staff was scurrying around but there was no sense of panic or any indication that this day was different from any other. We shared a chicken quesadilla and each of us had a cup of chicken tortilla soup. Both were delicious. We were pacing ourselves because we wanted to try the Tres Leches cake. While not the best it was still very good. We are so happy that we passed up the local fast food restaurants and decided to try this local favorite. read more

When I first pulled up to this place, my first thought mirrored that of a character on Arrested Development. "I've made a huge mistake." It's true. It looks super divey from the outside, and I LIKE divey. But, I had my concerns. So far, the only other interaction I've had at a place that sold food in Gillette was at a Kum & Go convenience store. The cashier had NO idea what my "Saved by the Bell" t-shirt was referencing. At times, I've felt a little out of my element in a state whose flag has a Buffalo on it. A BUFFALO! Anyway, when I stepped in to The Coop, they were showing sports highlights on two flatscreens. The menu consisted of a great variety of chicken dishes, and they were playing obscure reggae songs. Seriously, I even had to Shazam one of them. I had the wings and pot pie, and eye fucked just about everyone else's order. Sure enough, it tasted as good as it looked. I realize this will probably sound dumb... But I have to say it. The celery was the best I've ever had. If I hit you in the face with one of these things you would really feel it. OK: the stars vary. The chicken gets a 5, the green chile sauce gets a 2 (I'm from Tucson, know from green chile. It is not supposed to be acidic or mucilaginous, it is supposed to be fresh, toasty, green, with lots of cilantro and roasted tomatillo.) the lettuce wraps get a 3 (please please keep all those tasty ingredients separate on the platter so we can compose the things ourselves, otherwise get get soggy! - Sorry!) and the wings.... Ah, the wings. If I could give them 6 stars, I would. Thinking this places ventures into the realm of being overrated. Looks like a former Sonics/A&W turned into something a bit more chic and intimate. The menu is pretty limited with dishes that aren't too exciting. We ordered the peanut chicken wraps that ended being mediocre with a side of sriracha that was overpowering. The beer choices were generic and lacking compared with other nearby venues with brews on draft. Also, take note, the kitchen closes earlier (~8pm). The staff were friendly and helpful, but I think they need develop their menu before they become a legitimate local food destination. A few days ago I had a business meeting here with a few colleagues. They decided lunch would be a good idea and chose The Coop. To be honest I was a little hesitant at first, but I'm actually really glad we went there! At first I thought the little restaurant just served rotisserie style chicken, but I was pleasantly surprised to find it wasn't. They describe themselves as a Puerto Rican styled chicken. My husband and I were driving through Gillette this afternoon and decided to get a quick lunch. Having never lunched in Gillette, we turned to Yelp, and the first choice of nearly five stars was this place called The Coop. I can see why it is called The Coop--it is small and square--but the service and food was far more superior to that of a chicken coop. First, the place was packed, but we were able to get a table fairly fast. Within one minute the waitress stopped by and asked what would we like to drink. So far, so good! Fast service :-) (And friendly). Our order was taken as soon as we put down the menus. My husband had a chicken chimichanga and I had vegetarian lettuce wraps (as opposed to chicken lettuce wraps that was also on the menu). Both dishes were delicious!! They came with a generous serving of guacamole and my plate also had salsa (you could choose green or red or both--I got both). The veggie lettuce wraps were so full of stuff it was impossible to wrap them appropriately, but that did not stop me from inhaling them with the help of a knife and a fork. The beans and rice were delicious and everything tasted so fresh!! My husband's chimichanga was tender and flavorful and absolutely perfect. Now, you have to know my husband well to know that when he says something is pretty good, it's probably amazing. His grade for chimichanga was "pretty good", therefore I assure you, it was amazing. Overall, we loved the place. The staff was very friendly, the restrooms were clean. And the food was amazing. Five stars hands down. I think we might stop there again on the way back!! read more

By far the best food in gillette! So fresh and you can tell everything is made from scratch. The staff is very friendly and makes you feel instantly welcomed. We travel through Wyoming for work every summer and we are always looking for unique places to try. We found the coop and have been twice in the past week! My husband got the empanadas and I got the tacos and taquitos. Tacos come with the most delicious beans and rice. I don't know how they do it, but the rice is almost creamy. The salsa is fresh and the tortillas are homemade and the taquitos are topped with a delicious sauce and cabbage mixture. This is definitely a must-try when in gillette! read more
