What a delicious surprise! The restaurant is in an unassuming building that looks like it used to be a drive in restaurant but is really cute inside. It's a small restaurant- around 10 tables total inside - but has a great ambiance. If you are wondering if the food could actually be authentic Latin American, wonder no more. There are a lot of unimpressive things about The Coop, but the first one we noticed was that the wait staff are VERY slow and misguided with their service. It's painful to sit and wait for a simple meal, while 3 other tables who came in after us were served first. They also paid and left before we did and they were larger parties. We had the displeasure of sitting next to the door where multiple people came in and were handed a mixed up order or incorrect order. We especially did not appreciate the waitress' multiple apologies for our food not being served in a timely manner and it taking way beyond a reasonable wait. One hour wait for an order of soup & empanadas? Geezus. The food here is completely overhyped. You can see from the dining area, that they use a microwave for quite a bit of their "cooking". And it didn't even come to our table hot!! Also, who the F puts cut up hotdogs in charro beans?!?! So GROSS and definitely NOT AUTHENTIC. I guess hotdog soup a la Walmart trailer park is considered good food around here. It pairs well with the bland, white-washed salsa. Will not be back. No thank you. read more

Hands down best place to eat in Gillette! I have had REAL fresh chicken in such a longggg time. I was blown away. The complimentary cornbread is so good! I also really liked the mac & cheese. I was in Gillette for a week last month and ate here at least 3-4 time haha. Great place to go for lunch with co-workers, that wait isn't bad especially since they make everything fresh. Customer service is also great! Mariana was my server majority of the time and she was so sweet, every time! Also the manager (I think her name is Jessica) was very friendly as well! Gillette is just a stopover for us... But we always try to skip the chain restaurants when traveling and pick a local one to support. Besides looking at Yelp, I googled unique restaurants and also looked at trip advisor, and The Coop kept coming up. Even though there were tons of restaurant choices, we picked here and were so glad we did! Terrific service, covered parking and delicious food! The Half Chicken meal was so good and the sides are very generous portions. The charro beans and the guacamole were the best that these two Texans have had in a long time. We also had the Buffadilla for an appetizer, and it was delicious and could have easily been a meal. If we eat out again before leaving town... I will happily come back here! P. We have been traveling cross country from Missouri, we saw that The Coop was one of the best rated close to where we were and it was my son's birthday we wanted one more meal together before he headed off in a different direction. Found this little gem on Yelp as we were in Gillette overnight on a road trip. Really enjoyed the visit to this restaurant. Friendly and fast service, a delicious margarita (not too sweet!), yummy chicken pot pie, tasty tacos. Some of the best red salsa and rice and black beans I've ever tasted. We came across this gem traveling! What a find! My wife had pot pie she said it was the best thing she had eaten in a week!

This is my second review --- can't get enough of this place. I've now tried most menu items (pot pie, rotisserie chicken, empanadas, tres leches) and everything is so, so good. Great crisp on the empanadas, tender chicken, flaky pot pie, and amazing tres leches (massive size too). This place *makes* my business trips to Gillette. Anthony Bourdain or some other show (I guess Diners, Drive-ins, and Dives...although I'm no Guy Fiery fan) needs to showcase this spot. It's the best food in Wyoming by a long shot. And better than many chicken centric and/or Central American spots across the nation too --- it can hold it's own! read more

I ordered the Half Bird with broccoli and guacamole (yes healthy). Oddly enough, spreading guacamole on chicken is really good! Small cornbread muffins are brought when you are seated. The meal was delicious and didn't last long. This place is small - about 10 tables inside the restaurant and 3 tables on their outside patio, but the service is big!! I like it when you're not waiting an eternity next to the "Please Wait to be Seated" sign. After ordering, it wasn't even 10 minutes when my meal arrived. Reggae music was the soundtrack throughout the restaurant (mon!). The Coop does have a limited beverage menu which is fine. A Fat Tire goes well with the Half Bird meal. Not sure if they had Red Stripe to go along with the reggae, Mon. I will certainly be back the next time I'm in Gillette. read more

Such good reviews, I had to check this place out! The service was helpful and friendly! They brought out some mini cornbread muffins. (Good) I then got the half bird - Rotisserie Chicken (Great!!) with a side of green beans (Yummy!) and guacamole (Great). I also asked for both Hot Sauces - these had a kick - they don't mess around! (Great) I made some chicken tacos with the guacamole and hot sauce! (Super yummy!) I saved room for their Impossible Cake (anything with this name needs to be tried - WOW!!! Super tasty!! Woah. Stopped in by chance on our way from Rhode Island to California and the rotisserie based menu sounded fresh and delicious. Totally spot on. Lettuce wrap was a refreshing changeup from rest stop food and it came with fruit! Yay! I am so thankful that I discovered this place during my work travels. This place is amazing. The chicken is cooked to perfection. I ordered the half chicken, peppers, guacamole, and green beans. All of them were a knock-out! The amazing waitress told me that she craves the green beans when she is not working - and I can totally understand why! They are delicious. When the waitress warns you that the grilled seranos are hot, believe her. I love heat, but I had to eat these with slowly. The Coop is the BOMB! Soooo good. I have never had anything bad here. My husband's favorite is the taquitos and mine is the rotisserie tacos. The green salsa is really good. So many people I have talked to say they've never had anything bad there and I can definitely vouch for that. The rotisserie mac & cheese is my second favorite and the guacamole is on point! I have never had bad service. Always friendly and attentive. They have a nice outside patio for when the weather is nice. Perfect portion sizes. Not too big and not too small. It's really rare that both my husband, son and myself enjoy our meal 100%, but at the Coop, we all always leave feeling content and wanting to return. The little corn bread muffins they bring out before the meal are so delicious! Sweet, but small, so not overpowering. Writing this review is making me really hungry! read more

Amazing, amazing, and, again, amazing!! Today was my second time there. The first time was approximately 4 years ago, I was about a couple of months pregnant and very hungry. I do not remember much about my first lunch there, but I remember eating everything I ordered and then wanting more. So, maybe it was the first trimester hunger pangs, whatever. Well, today we were driving through Gillette, WY, and I remembered having a very positive experience at The Coop. I did not even remember the name of the restaurant and, therefore, had to Google "mexican restaurant in Gillette" and look at the photos of the exterior. (And, the restaurant is not even Mexican, it serves LATIN American cuisine; as I said, my memory was blurry). In any event, my very picky husband, extremely picky mother, and a triple-picky three-year-old, were all raving about the food there! Hubs ordered a chicken pot pie, which was delicious according to the grump of a husband who barely ever gives a "good" grade to my home cooked dishes. I overheard my picky mother raving about Buffadilla (kind of like quesadilla, but with mozarella) to her friend after our lunch. My three-year-old had a kid taco with side of mac and cheese. She has been super picky in the last week or so about her food, and she literally scarfed up as much as her little tummy could hold, while exclaiming, "this is nomy!!" [yummy]. I must start by saying the coop has some of the best veggies I have ever tasted in a restaurant. Me and my fiance both ordered half chickens with their green sauce on the side which is also phenomenal. The customer service here was great and they were playing the football game.
