I think sometimes people that work in restaurants and hotels forget they are all part of the hospitality industry. My friend and I decided try something different than our normal downtown haunt, and he suggested we try The Coffee Ethic. When I walked in, there was a man sitting immediately inside the store roasting beans, and it smelled wonderful. He also greeted me and welcomed me to the store. When I looked at the menu, I saw the prices for a cup of Joe and the price for a cup To Go. What I didn't see was a price for a bottomless cup of coffee. Instead, they charge 50 ¢ for refills, and the cups are pretty small to begin with. When I went back past the man who first welcomed me, I said to him that I was disappointed there was no option for a bottomless cup of coffee. His response was, "we can't give it away." I just wanted to slap him over the head, but I did reply with, "Yeah, that's why we pay more for those types of drinks." I've never had their coffee, and with the attitude of the person that greeted me (who I believe was the manager), I don't know if I ever will. Who knows, I may try them at some point, but if the owners or managers or any of the staff would like to contact me, I would welcome the opportunity to hear them out. read more

The good: The latte I ordered was pretty great, and their wifi worked very swiftly. The bad: Their staff were visibly annoyed with me asking questions and commenting on their facility. As a Barista myself, I was very intrigued with their machines and wanted to know more.. But they didn't seem to think they had the time. Although it wasn't busy at all. Springfield has an amazing coffee culture with a number of excellent coffee shops. None is better than Coffee Ethic. They serve PT's Coffee, which has won a number of awards. Among the potential brewing methods, they have a Clover machine, which makes a fabulous cup of coffee. They'll also brew via a Chemex or other methods. The staff knows the regular customers, and enjoys meeting the new ones. Of course, they have wi-fi, & are conveniently located next to a library on the square. read more

With that being said, The Coffee Ethic is THE place to go for that perfect espresso or latte. Whatever your preferred drink may be, you will find the best quality here. What the menu lacks in variety, they make up for in quality and attention to detail. I always leave satisfied, knowing I have consumed the best possible cup in Springfield. Also available at The Coffee Ethic are baked goods from Nonna's (across the street). Try the banana chocolate muffin, it's really delicious with your espresso drink. As a designer, the space is really amazing, as well. A local firm designed the space using reclaimed wood. The high ceilings can make the space loud if crowded, but an early afternoon the space is perfect to get some work done. I will often bring my laptop in to enjoy the wi-fi with my coffee, as the interior is welcoming and inspiring. One of my favorite things is to get a soy latte and bring it into the magazine section at the library next door and read one while enjoying a latte. When I was going to college in Springfield, all downtown had as far as coffee shops was the Mudhouse, Mudlounge, Rendezvous, and maybe a couple I can't remember at the time. The Mudhouse was the one everyone raved about, but honestly, I only went there because it was the most convenient. Fast forward 3 years. I'm living back in Springfield, touring my Park Central stomping grounds for changes and up/downgrades, and I stumble across a new coffee shop: The Coffee Ethic. "Hmmm...Helvetica? These people might have some style." And style they have. From the elevated, track-lit ceilings to original brick interior/exterior walls and the refurbished hardwood flooring, the Ethic has everything on the checklist for developing an atmosphere for enjoying a cup of coffee. But there are many ways a great look and feel fail to save the overall experience of a coffee shop. Your staff can be rude, you can be overpriced, your coffee can taste awful, you can look like just another run-of-the-mill elitist coffee shop. The Coffee Ethic has none of these. Some of the best hand-pulled espresso I've ever tasted is served daily at The Coffee Ethic, as well as a well-rounded rotation of coffees representing every growing region in the coffee belt brewed daily. For a hot, summery day they also have a terrific iced coffee selection and Fitz's root beer. Not to mention the Clover that can serve up a mean cup of Burundi or other top-shelf roasts and blends that - let's be honest here - kind of make your mouth water just thinking about them. Am I wrong? What makes The Coffee Ethic the best coffee shop in Springfied, the greater Ozarks area, and easily on of the top 10 in the Midwest is it's commitment to the community. The Coffee Ethic shares it's space with the Park Central Library, where customers and bookworms alike can come and go as they please. The Ethic also serves as the hub meeting point for local business owners, employees, and social gadflies in the downtown SGF area. They promote the local comic journal, HIVE, as well as espresso from P.T.'s (based out of Topeka), and specially hand-printed shirts from local print shop SwagBot - inside Vintage Vice. There's never a time when The Coffee Ethic is not showcasing a local artist or photographer, and it is a huge proponent of keeping SGF clean by promoting responsible recycling and eco-friendly to-go containers. A good coffee shop has to have two things: 1. A comfortable, groovy atmosphere. TCE used reclaimed wood from the 2007 ice storm to make some of their furniture/decor and they also have some really sweet playlists, making for an all-around nice setting for getting stuff done or meeting up with an old friend. 2. I really like this cafe. For some reason, Springfield has a large number of coffee shops per capita. I don't know what it is, but I guess y'all really like your coffee to be better than Folgers and Starbucks. I applaud it. Coffee Ethic offers great lattes, and decaf to boot! Their selection of pastries is simple, but they are of a high quality. I had a great white chocolate lemon muffin for breakfast the other day. For My whole childhood I have gone here and now I am 16 and enjoying to coffee shop. My parents and I have known the Owner since I was little and Michelle has done an amazing job, not just being a boring old owner that never shows up but interacting with the customers making sure they are enjoying themselves. I Love the Salted Brownie cookie and the Mocha Latte, it was a nice thing to have first thing in the morning. Another things is the Community is very Safe here, My dad went to a business meeting and was able to trust me and the Community in the building so he can do his job. I love How open they are to everyone here (cute mini pride flag I see you ;] ) and how sweet and kind the staff are. and if I could have a custom rating for this place I would probably say 10/5. The Style is nice, the smell is nice, not to mention then place is extremely clean. It's true...the Coffee Ethic makes a damn good cup of coffee. And the place feels hip but not overly contrived. It hardly fits in Springfield, MO (save for the downtown vibe where it's located). Cool interior design and opens right into the downtown branch of the library. The baristas are friendly enough and I have often witnessed them chatting with some of the regulars. I've been a devoted Mudhouse fan since I frequented it in my youth. Now that I no longer live in Springfield, I often come to The Coffee Ethic instead. But I have to admit...I don't usually stay too long because I like a cozy-ness to my cafes that I don't find here. Update: March 2013: Been back in Springfield for an extended visit and The Coffee Ethic is my go to cafe. Their customer service is excellent. Now that I'm a somewhat familiar face, I feel much more at home there. I often stay and work for a while while I drink the most amazing espresso drinks available in Springfield. I used to be a Mudhouse girl but I tried these guys out the winter before last and I never looked back. Everything is great. I personally love a double mocha and one of those delicious cranberry cookies. Drinks are always perfect and done by hand. This used to be my favorite coffee joint until the owner passed away. You could tell they really loved good coffee. I raved about it to all my friends. The coffee is still better than most places, but it's gradually gone downhill. They serve P.T.s Coffee from Topeka, KS who were voted Micro Roaster of the Year among other honors. The positives; amazing single origin coffees, a limited but well rounded selection of craft beers, competent staff, friendly customers and an inspiring space to work, play or relax. The roaster is on full display, and the fragrance of roasting beans is in the air. The atmosphere is what you would expect from a coffee shop located on a downtown square with its exposed brick walls, and historic hardwood floors. Asked the brunette girl for half & half b/c their container was empty, and in her best rude little attitude advised me to lift the handle for it to come out. Despite the numerous reviews expressing a more enthusiastic level of support, I found The Coffee Ethic to be totally adequate but far from mind-blowing. The coffee was certainly good, but came in a smaller serving than some other options in Springfield and at a slightly higher price. As for ambiance, the decor struck a pleasant balance between minimalism and traditionalism, but the space felt rather cramped - and not just because it was a busy Friday night.
