Fantastic spot on the corner of the town center/loop with wifi. It is bright, modern, lots of nice people, plenty of tables, and good coffee. They don't have entree food, but have plenty of bake goods and some other local snacks. Come here for the coffee, tea, and a local beer flight. read more

Fan-frickin-tastic. Ever since I started traveling for work to Springfield on the regular, it seems that the Queen City finds another establishment to impress me. Well, The Coffee Ethic absolutely blows my mind. This is a top tier coffee shop, Springfield or otherwise. You'd be wise to check it out. First of all and most importantly, they pour an incredibly high quality product that they're knowledgeable about to boot! Whether you want a pour-over or an espresso drink, they've got you covered. It looks like they're currently serving beans from PT's Coffee out of Topeka, KS. Learn that name, coffee geeks. You'll be hearing it a lot more in the future. Oh, and they have beer, wine and liquor, if that's how you'd prefer to start your day. The atmosphere is on point. I absolutely love their coffee bar, with its Frank Gehry-esque facade made of curved dark woods. Table options range from private spots for one to larger spots for meetings spaces, and even communal tables with reclaimed wood beams as seats. With great lighting (a mix of natural and store-bought) and brick walls, this place is like a sexy sexy loft that happens to sell great coffee. As I write the review, I go back and forth on the music. Sometimes it's great. Currently being played? Spin Doctors, which isn't even good ironically. But, that's why Jesus gave us headphones, right? Prior to living in SGF I was not big into coffee but a friend invited me along to go to The Ethic with him. One of the BEST decisions of my life! Does not disappoint!! Location is great: theater/downtown area seems posed for a breakthrough, with a number of trendy/young evening stops. Ambience is excellent, upscale casual: professional, intellectual and artistic. The Coffee was...THE BEST! This place goes on my personal list of Best Coffee Houses in the US (alongside Klatch, Intelligentsia, Madcap, Handlebar and few others). I had a Guatemalan pour-over. It came in a mug on a wooden tray, with glass carafe holding the rest of the pour, and a printed card describing the bean, the region (with map), the farm and farm owner. I like my coffees with milk, but this coffee was perfect black: strong but not too..., smooth, balanced and slightly bright. Just perfect! Wife had oat milk latte, thrilled with the flavor (and the breath of lactose free options). We sat outside in the warm June sun, and shared a chocolate chip cookie-scone (something new to me, and even better than it sounds). read more

I happened to be downtown this afternoon, pondering whether to go for coffee or beer. In the end, I decided that I could drink beer at home, but had no way of making coffee for myself. So I headed to the Coffee Ethic, about which I had heard good things on #SGF twitter. I was impressed when I got there by the nice open space, the assortment of comfortable chairs mixed with tables, and the walkway through to the Park Central Branch of the Greene County Library next door. The prices were about what I would expect for a coffee and espresso place. I ordered my old standby, a 12 oz mocha, and when the barista brought it out to me it was so pretty I almost didn't want to drink it! I've never been confronted with actual milk-foam art before. It was a very tasty and gorgeous-looking mocha. My only complaint is that it was gone all too soon! Friendly staff, efficient service, good selection, easy connection to a library, three different open WiFi networks (their own, the library's, and downtown Springfield's)--I will definitely go back when I have the chance. read more

No question about it, in Springfield, MO, Coffee Ethic is the best thing in town when it comes to the urban hipster vibe that used to be reserved for Portland, Oregon's Stumptown Coffee. Meeting Tom the owner, his ears perked up when he overheard me mentioning a little something reminding me of Stumptown Coffee in urban Southeast Portland. Apparently that was by design according to Tom. He drew inspiration from our Stumptown owners. I'm guessing like them, Tom may even be a recovering Evangelical or Pentecostal ;-) He created a slogan because of it-- "Springfield, the new Portland?" Don't think we can go quite that far in this Bible Belt Mecca, but when it comes to coffee, it's absolute truth. Ethic's coffee is smooth...and flavorfully full-bodied. PT Coffee is the local roaster. They are THE Coffee Bean Masters in Southwest Missouri. My coffee today was the outstanding- Ethic's House, PT's Old 93, a blend of Medium Roast Ethiopian Amarogayo and Sumatra Rhino. Of course there is free wifi, great art displays and warm space to work or converse with a friend. I will pilgrimage to Coffee Ethic anytime I am near Springfield. You should too! read more

Honestly, I was surprised at how awesome Springfield is and The Coffee Ethic adds to the awesomeness immensely. I've decided all I need in a town is good coffee, craft beer and nice people and I'm set. I came in late Saturday morning on my last day in town and was initially delighted to see a Pride rally happening in the little outdoor space on my walk over... then less delighted to see crazy religious zealot protesters right in front of The Coffee Ethic. I quickly escaped their loud doomsday proclamations and slipped in to the cool, modern space inside. I opted for their iced coffee and a blueberry muffin and settled in at a table to relax and read a book. The iced coffee was quite good, though it was just a little on the watery side while I prefer a more viscous/strong brew. It had distinct caramel notes and wasn't bitter at all though, so I was pleased. The muffin was also OK. Not great, not terrible, just OK. They clearly know what they're doing with coffee and they care about what they do, so they're a-ok in my book. The reason for rounding my 3.5 star review up to 4 is because I saw a weird guy come in and wander up to the counter and ask the guy working "hey, what do you think of those signs out there?" (referring to the crazy religious group) and you could tell from his voice he was trying to start a conversation - my guess was that he was in agreement with that group - to which the dude working professionally replied that he wasn't entirely sure what he was talking about, as he hadn't been outside in a while, but what's the weather like? is it hot? I guess a big part of why I don't work in customer facing roles anymore is that I would have been super challenged to not have yelled "what is wrong with them?! why does anyone care what other people do with their personal lives?!" so the fact this dude was able to re-route the conversation was impressive. read more

Thank goodness we Springfieldians have The Coffee Ethic to remind us what really matters in life: good coffee, good coffee, and more good coffee. First, the location: it's poised heroically on the downtown square, shining like a bigger city beacon amidst the throngs of buzzard-like riff raff and dilapidated buildings that haven't yet checked in their ticket for a renovation. The outside is great - plants line the ample patio space - and the interior is greater. The inside is a lovely testament to modernity and sustainability in that many of its counter tops and decorative pieces are made from local recycled storm wood. Generally, it's a very clean and beautiful place to spend time and separates from the cushy, boho feel of other coffee shops. They sell PT's, which is awesome in itself, but their house drinks make for the most ideal pick-me-up you can imagine. Depending on my mood, I'll order anything from their tiny macchiato to a caramel frappe (they make their own whipped cream for those - helloooooo). It's all good, it's all fairly priced. I also love getting their toast for breakfast some mornings now that they offer that. Depending on the day, they'll have whole wheat / cranberry / regular sourdough (not sure what it's actually called) to choose from. For roughly $2 per nearly 2 inch thick slice, it's a good deal, especially when paired with a macchiato. read more

I have a very hard time finding coffee I like. You know how it is: your first latte is from Starbucks and then every latte thereafter gets compared to it. So yes, I compare every coffee to Starbucks, even though I know Starbucks isn't the best, most gourmet thing out there. It is what it is. Having said that, The Coffee Ethic makes a darn good mocha latte. I mean, the best I've tried in Springfield. I would go here over Starbucks any day, and most likely would if I was a local and had that opportunity. The location downtown is perfect. Right on the square, so if you're an atmosphere nerd like me, you'd appreciate the view. My only regret with coming here is that I didn't sample any of their food items. Maybe next time I'm in town. And since The Coffee Ethic is my new coffee place, there will definitely be a next time. read more

Hip and Nice Downtown Patio but... Too much acidity in the espresso due to the size of their pour combined to their roasting technique. I got served a double espresso in a demitasse cup. Not everyone drink ristretto poured espressos, like not everyone eat rare burgers. Roast slightly longer and darker & ask guests how they like their coffee poured. Nice looking spot, but nothing "ethic" about the coffee and its service. There's better coffee drinking spots in Springfield! read more

Coffee shops... These used to be Meccas of style and a clever place to show off your intellectual side with the latest gadget and thick-framed glasses. Now that everyone and their dog has an iPad and a hipster attitude, everyone is at a coffee shop or owns one... That aside, coffee shops do this horrible marketing scheme of overcharging for their goods and demanding a tip all in the name of fair trade and "dude, I put a design in the foam for you." I've worked in coffee shops before and know the ins and outs. Want to know why the Coffee Ethic leaves you (if you're smart) feeling empty in both wallet and soul? (Or, for some of you who will fiercely defend this place--feeling fulfilled in emotion alone?) Simple! GREAT coffee is grown just under the tree line in tropical climates. The higher the altitude, the more amino acid content the coffee has which gives it that smooth, nasal flavor many coffee drinkers enjoy. POOR coffee is grown at the foot of the mountain (or anywhere else) and uses minimal roasting techniques...much like the crap at McDonald's. FAIR TRADE coffee is a BUSINESS PRACTICE only. It does not affect the quality of the coffee in any way. McDonald's could use Fair Trade coffee and it would still suck. Okay, keep that in mind.... Organic =/= good Organic simply means that no more than x% of the growing/manufacturing process used chemical, synthetic, or artificial processes to bring you the final product. I've had shitty organic food. Believe me, it exists. That's it for stock, how about service? Espresso must be pressed. Machines can do it or someone could do it by hand. Is there a difference? Not really, for those of you who claim to know coffee. For those who do, its a debate that'll last until the Jesus of coffee comes down and settles the score. Milk must be heated. Common practice is with a steam wand because it can froth the milk, heat it at a quick speed, and is relatively easy to maintain. Skill level on a 1-10 scale for use of the steam wand is a 2...a teenager could do it...for safety reasons...because people are idiots... What does it take to put it all together? Suppose you want a Mocha. 1. Put Mocha syrup in the cup. 2. Press and brew espresso. 3. Swirl espresso in Mocha syrup. 4. Steam milk, no foam needed. 5. Ladle skim milk from pitcher to cup. 6. Whipped cream topping/garnish as desired with powder, syrup, etc... That's it. Granted, your Barista is working harder than your typical Bartender to bring you ONE drink, so the tipping scale should be a little higher...but I promise you that he's working for minimum wage while the bartender is working a server's wage. What is in that process that warrants a $4.50 8oz drink? NOTHING!!!@! The milk was bought at Price Cutter. The syrup came in powder form at $4/lb and yields enough syrup to last two business days. The bean's price varies, but is highly debatable. Ignore if it's fair trade. The hipster behind the counter took way too long to do anything and has that shitty hipster attitude that he thinks is cool, but makes him appear to be arrogant and still living off of dad's money. My price: $2. Coffee Ethic spent too much time and money in designing the place, paying rent, and using high quality mugs instead of giving you a high quality cup of coffee. Its an illusion. Sure, there's going to be someone who tears me a new one because of what I said here, but I guarantee that there are no quality coffee shops in Springfield. I'm more pissed about the pricing than the actual product. I think it tastes good, as par coffee shops can do, but they charge as if they were actually making a slightly better product. 1. This was my first time at the Coffee Ethic. Certainly, it's going to be my last. I ordered an ice coffee and an oatmeal cookie. Pretty hard to mess it up, right? Well, leave it to Springfield's most pretentious coffee house to achieve just that. I had to wait almost 15 minutes for my ice coffee. (I guess it's called coffee ethic for a reason, because work ethic would be a misnomer here) When I went to pick up the straight black coffee with ice, I asked for some milk to go with it. The barista informed me that I would have to pay for it. Are you f*cking kidding me? The cookie didn't fare much better. I had to remind the sales person to give it to twice. Once I tasted it, it became clear that the cookie was made with palm oil, which while vegan, tastes like soap when used for baking. read more

There are great alternatives for coffee "drinks" and coffee containing items, but for COFFEE, for ESPRESSO, for an honest to God CAPPUCCINO, you go to The Coffee Ethic in Springfield. In fact, this is where you go in the whole damn state of Missouri (and Kansas, Arkansas, Oklahoma, etc.) The owner and staff are coffee fanatics. They live and breathe coffee. They roast it, prepare it, brew it, serve it, and they do it with a dedication that is beyond compare. I have on many occasions had a barista pull a shot of espresso or foam some milk for my cappuccino and then DUMP IT OUT because they were not satisfied with what they had produced. They will give NOTHING but the best to their customers. I have become a coffee aficionado thanks to the owner, Tom, and his staff of amazing baristas. I love this place, and I am there almost daily. And let's not forget real, honest to God IRISH COFFEE done perfectly. An amazing treat. Is it wrong for someone who doesn't even drink coffee to write a review for a coffee shop!? This yelper thinks not, as there are a number of other "non-coffee" aspects to The Coffee Ethic that are worth indulging in. I'll start with the saccharine phenomenon that keeps me coming back for more... Imagine a cookie that is a hybrid of a dark chocolate chip and a snicker doodle. Now enlarge this imagined cookie so it is roughly the size of a 7'' record, and behold!! You have my favorite cookie in all of Springfield. This baked specimen is unlike any that I have tried... (& I've had a lot). The bitterness of the dark chocolate coupled with hints of cinnamon and brown sugar almost made me black out with pleasure the first time it made love to my palette... It somehow also manages to maintain a perpetual post oven softness. Other worthy goodies include a hearty vegan cookie, and a pretty tasty peanut butter bar that makes one nostalgic for the cereal containing treats your mom used to make. Additional things worth coming for: -Intoxicating aroma of coffee. -A nice selection of teas including a few herbals -Optional outdoor seating -Adjoining library -Smart and clean modern aesthetic. Speaking of aesthetics, the undulating bar formed from spindly narrow slats is truly one of a kind. Hands-down my favorite coffee shop for years now; here are my reasons why: 1) My all-time favorite lattes. When I first tried Coffee Ethic years ago, I was under the delusion that a latte needed to taste like an exotically flavored dessert, and I was underwhelmed. I've since learned to love the taste of good coffee that needs no disguise. If I'm feeling frisky, though, I'll still order a vanilla latte instead of a plain latte. 2) Mochas made with Askinosie chocolate - a dream for this dark chocolate lover. I actually think the mocha is a bit less sweet than the vanilla latte. 3) In-house roasted beans. Their Rwandan beans are the first of many coffees that have made me finally find my homemade coffee just as enjoyable as coffee purchased out. 4) Chill atmosphere. I would much rather sit and have a quiet conversation or work on a laptop at Coffee Ethic (conveniently located next door to the library) than The Mudhouse, which is often full of noisy groups. 5) Don't feel like coffee? When you're a coffee shop in a college town, you need to bring your a-game on most days. While, looking through the reviews, there are a couple not great reviews but that shouldn't scare anyone away from trying The Coffee Ethic. What's most important is the coffee and in several trips here, I've never been disappointed. The coffee is almost local (Topeka, from what I understand), and it's extraordinary. I think sometimes people that work in restaurants and hotels forget they are all part of the hospitality industry. My friend and I decided try something different than our normal downtown haunt, and he suggested we try The Coffee Ethic. When I walked in, there was a man sitting immediately inside the store roasting beans, and it smelled wonderful. He also greeted me and welcomed me to the store. When I looked at the menu, I saw the prices for a cup of Joe and the price for a cup To Go. What I didn't see was a price for a bottomless cup of coffee. Instead, they charge 50 ¢ for refills, and the cups are pretty small to begin with. When I went back past the man who first welcomed me, I said to him that I was disappointed there was no option for a bottomless cup of coffee. His response was, "we can't give it away." I just wanted to slap him over the head, but I did reply with, "Yeah, that's why we pay more for those types of drinks." I've never had their coffee, and with the attitude of the person that greeted me (who I believe was the manager), I don't know if I ever will. Who knows, I may try them at some point, but if the owners or managers or any of the staff would like to contact me, I would welcome the opportunity to hear them out. read more
