After a really emotional day (I had just lost my job), I found myself fully leaning into comfort food mode, and wow... this was exactly the kind of therapy I needed. Kia was incredibly kind, patient, and genuinely sweet. She gracefully listened while I shared a little of my story, offered compassion, and then proceeded to create what may have been the most ridiculously delicious dessert I've ever had. We did a gluten-free double chocolate + chocolate chip cookie ice cream sandwich with toasted marshmallow ice cream, drizzled with hot fudge, and they heated it up... I am not exaggerating when I say I nearly cried. Actually, I did cry (just lost my job and It was that good ). Warm gooey cookie + cold melty toasted marshmallow + hot fudge magic = absolute perfection. Thank you, Kia, for your kindness on a hard day and for making a dessert I will absolutely be dreaming about.
I'm a HUGE fan of the cookie and ice-cream combo. It's a lovely pairing especially when the cookie is warm. I'm glad I came across this cuuute shop with cool vibes. There's a wide variety of ice cream flavors, toppings and cookies to choose from...wish peanut butter was in the mix. The service was pretty good and I definitely want to go back.
The angle here is the ice cream sandwich, your choice of ice cream sandwiched between your choice of cookies (they can be the same type or different). They offer many varieties of ice cream and many varieties of cookies so go crazy, why don't you. I don't personally have a sweet tooth but I find their cookies better than their ice cream. And put them all together, it is a decadent ice cream sandwich. The employees were all very friendly. Parking in downtown Encinitas is extremely difficult but if you know where the train parking lot is located, there is a ton of free parking almost always available.
It reminded me of a similar place Austin, Texas called Moojo's. The ice cream is so good! I loved the creativity. The Gooey Butter cookie was freaking tasty! The Snickerdoodle was spot on! We even got lemon cookie for good measure and don't tell her but they were better than our friends! We got the Cookie Monster ice cream to pair with the cookies. It was got in a quick second! You gotta try this place!!
Honestly the most embarrassing moment of my entire life I take the love of my life out for ice cream at baked bear (it's both of our first time) I work a blue collar job and get paid cash daily so the only reason behind my 1 star rating is they have no signs posted about them not being able to take big bills. Especially considering the fact that these two sandwiches cost almost 25$ and they couldn't break a 100$ bill when we sat outside and watched them serve probably 30+ people in a span of 15 mins. Maybe they should train all of their underage staff to count cash or even maybe just check the register instead of just flat out denying me. Thankfully my date (my wife) had a debit card or else we wouldn't have been left with sticky fingers cause they cheap out on the cups to they serve the ice cream in. At the end of the day the ice cream sandwich's weren't terrible just the experience.
Stopped by just to get a cookie after. Eating sushi. A few doors away. We got the white Chocolate Chip Macadamia Nut cookie. It was good but , for me, a lil pricey at $3.00 each. Friendly service, though.
Can't go wrong with this ice cream place!! Service is great! Limited seating but they have a standing area inside, 2 tables outside and then a bench outside! Make sure to ask them to warm up your cookies and brownies!!
Tried the vanilla ice cream and monster cookie the first time I visited Baked Bear. The vanilla ice cream was deliciously creamy with a strong vanilla flavor. I love the ability to customize your ice cream sandwich and I can't wait to go back to try different combinations!
I had Baked Bear before for the first time on Valentine's Day and definitely had to come back! I usually don't like super sweet desserts but this one satisfies my sweet tooth every time. It's a small little dessert spot in the Encinitas located on Coastal Highway. Both times I got lucky that it wasn't as busy and I was able to get helped right away. The employees are super nice and ready to serve! I love the concept of ice cream sandwiches and having it with a warm brownie and chocolate chip cookie is soooooo good! The first time I had it with cookies and cream but I switched it out for the caramel pretzel fudge and it was an amazing, decadent combination. The pretzel added a good texture and the right amount of salty with sweet flavors. There's so many different combinations for people with different tastes, I hope to come back and try something different next time!
Customer service was amazing here! I missed a photo for what my daughter ordered, she said it was delicious! I ordered just a cone, plenty of creamy, flavorful icecream in my waffle cone! We will definitely return! Being a chilly night, wish they had indoor seating, just outdoors.

I was low key disappointed that they hid all the vegan options in the back... but can't complain too much since they at least give the option. The cookie was decent and I really liked the oat milk chocolate chip ice cream. The kiddo lived her creation and devoured it. Parking can be a hassle as it's in the heart of D-town Encinitas, but was a yummy treat, so we will get back.

Really interesting concept. And thankfully there isn't one near where I live as it would be too tempting. Came here with my kids while on vacation. They got a brownie bowl and a chocolate chip bowl. The bowls come with ample ice cream. I got a cookie sandwich with the yellow butter cookie and cookies and cream cookie. It was great that they warmed it up. In terms of ice cream flavors, we really loved the strawberry shortcake, and also liked the cookies & cream and milk & cookie. They offer a punch card, and a water station which comes in handy. Just a really chill place. Not cheap whatsoever but it's worth the splurge if you're on vacation. read more
I discovered The Baked Bear when they had a storefront in La Costa but that was years ago.....and sadly, that location closed. What's even sadder...my ice cream loving fiancé never had them. I could've swore I introduced it to him, but I was wrong! I know I took my kids to the La Costa location, but they don't remember it! Wow- I've failed on so many levels! So, on a Saturday night, we ventured out to Encinitas for ice cream. Parking is hard...it's Encinitas...but we scored street parking not too far away. The store is tiny! It's probably bigger in the back, but keep this in mind- there's no seating inside and only two or three small tables outside. You're really meant to grab and go. When we arrived, there was a line out the door, but the spot to order is close to the front door, so there really wasn't a long line at all. TBB has a lot of options- everything is centered around their beloved ice cream sandwich. Lots of cookie options and even a brownie option. Mix and match... Everyone really enjoyed what they had- imagine 4 people, 4 different combinations! It's pricey, but worth it! 4 stars! read more

Finally was able to stop by here, since the kiddo really wanted ice cream. I was excited that they offered a vegan ice cream cookie sandwich option. I was low key disappointed that they hid all the vegan options in the back... but can't complain too much since they at least give the option. Situated in downtown Encinitas, the location is easy to find and perfect for grabbing some ice cream and walking around the beautiful area. Street parking is available, but it's best to plan ahead as the area is usually busy and parking can be limited. As for the ice cream and baked goods, I had the Mud Pie ice cream, which was delicious. However, the White Chocolate Macadamia Nut cookie and the brownie toppings were dry. I think the cookie would have tasted better if it had been warmed up. I appreciated how clean Baked Bear was and service was just fine. I would return for the ice cream. read more

$9 is a little pricey for an ice cream sandwich however it's very large and they will cut it in half for you. Tried one cookie and one brownie. Don't forget to ask for it warmed up! Much easier to eat. Taste was good. Pretty sweet but still yummy. They have a small water station near the register. They have outside seating on the sidewalk. Parking: street only, some lots in the area but overall really, really tough to find parking. I would not go here specifically, only if I was I already in the area. Love that you can order your own custom ice cream sandwich! I treated my parents to these, and we all enjoyed them (chocolate chip cookies with vanilla ice cream, brownies with bear batter). There's basically nothing better than a warm cookie with fresh ice cream - well, maybe a glass of cold milk as well. Lol There's so many options here, I love that you build your OWN ice cream cookie sandwich. That way, there's no excuse for loving it. I just wanted one cookie and a scoop of ice cream. That was perfect for me. I'm glad they could accommodate this. Great customer service and the line went pretty quick. read more

Wow my friend took me here, and it did not disappoint! I LOVE cookies and ice cream. A match made in heaven! So this place bakes a variety of cookies which you use to create your own ice cream sandwich. You can pick two of the same cookies or even pick two different cookies to create your perfect dessert. I ended up trying one of their lovely berry ice cream flavors paired with buttercake cookies, and it was amazing! Sooooo delicious! read more

Walking in you can smell the delicious cookies. There's a few options, you can do the ice cream cookie sandwich situation there's also the brownie sandwich, or if you don't want to do the ice cream, grab a few cookies. The ice cream flavors also vary, they have in season flavors & many staples. I personally went with the cookies & cream cookie on top, s'more's ice cream & the cowboy cookie on the bottom with Nutella around. I didn't get to eat the ice cream sandwich right away because I was stuffed from dinner so I had it the next day. It held up pretty well. I've gone to places where the cookie was stiff and crumbled with every bite. Baked Bear cookies did NOT do that. It softened up & I have cookie & ice cream with every bite. They also sell dozen assorted cookies in a box that are about a day or two old, for $9! What a steal! It's 50% off if you get the day old cookies. So I highly recommend! read more

I mean when you talk about a business that has it down this would be it. The flavors are so good. The place itself is cute. Service was great. A good amount of options I mean I was wanting to try it all. You definitely get a good amount! The fact that it's great in a cookie but also on a cone. Just great options. I left with that feeling of wanting to come back. Please keep up the good work! read more
