When we pulled up I was a little taken aback to see a food truck parked in the parking lot and realized---this was it! We were looking for a casual sit down dinner. Fortunately, I saw that they had converted the old waiting room into a dining room. It was very basic, but clean. We ordered from a nice young lady. I got the Tallerin Saltado Al Carne, and hubby got the Pollo Broaster. We also tried a Inca Kola. My Tallerin was excellent--the noodles were perfectly cooked and I loved the seasoning on the beef. It was a HUGE portion, so I had enough for lunch tomorrow. The Pollo, sadly, did not fare as well. Peruvian chicken is usually excellent, and I encouraged him to try it. My hubby liked the crispiness of the chicken but was disappointed that there was no white meat--it was the back, leg, and thigh only, and not much of that. He enjoyed the fries, though. We both thought the Kola was cool---kind of a creme soda taste. We will likely come again and try some other dishes (but I could wind up getting the Tallerin again!) The reason for 3 stars instead of 4 or 5 was the wonky food truck/dining room setup and the disappointment on the chicken. These folks have the right idea, and if they can improve the chicken and the ambiance factor, they could do well.

I like how they provide a pager so you didn't have to wait in front of the truck until your food is ready. The owner was friendly and helpful in picking out entrees. I ordered the Scenario sliders and husband ordered the CowDogPig sliders. Each one came with 2 sliders. The Scenario was good but I liked the CowDogPig better. The Scenario contained 2 thin beef patties topped with American cheese, pulled pork, slaw, blue cheese dressing, and bacon jam. The pulled pork didn't have much flavor, just slightly sweet. The combination of all of the ingredients and flavors made it taste good. The CowDogPig had thin beef patties, cheese, Nathan's beef hot dog, grilled jalapenos and onions, and bacon jam. I will definitely get the CowDogPig next time! The Scenario sliders were enough for me but husband was still a little hungry. So you may want to order one of the tator tot sides or more sliders to make your meal filling.

The kids burgers were great portions and the tots were simple but enjoyable. They could spruce up the outside of the truck to bring people in but I'd say they are on the right track overall.

This one man, one truck operation serves up Southern fried goodness and deli classics with a heaping helping of charm. Reubens sit next to fried pork chop sandwiches on the menu of this bright red truck and both are quality lunches for sure. I got the fried pork chop sandwich and after a bit of a wait I was presented with a golden fried, thinly cut piece of pork on top of an artisan roll served with lettuce, tomato, onion and pickle and a huge pile of fries ( I had asked for onion rings but he discovered he was out of them and promised to have them the next time I came). The sandwich was fantastic; crunchy with good flavor. My one comment is that an aoili or other sauce would have made it perfect. Fries were good too. I also tried some of my friends Reuben and it was juicy and full of the corned beef and sauerkraut goodness that all Reubens must have. Southern Thyme Grill is a great addition to the growing fleet of food trucks on the NC coast and one that I will be visiting again. Finding the truck is a bit of a challenge since the schedule is not currently on there website, but their Facebook page is fairly regularly updated, but when you do find it, you will be glad that you did!
