My daughter and I went on a Mexican dining adventure at Agave Diner in Seymour on Friday on a recommendation from a workmate! We had the Breakfast burrito (no eggs for me which was no issue and they offered sub tofu if you like!) with Longaniza sausage, homemade beans, avocado, home fries, cheese and more .... Fresh chips and salsa, triple tacos with a different filling in each, birria beef, carnitas and chicken tinga. She had to eat a bunch of meat to pick them up they were so loaded! And the most delicious home fries! I had the agua Fresca which was elderberry and lime and so delicious! They rotate flavors daily apparently! The place looks like nothing from the outside but wow!!!!! What a gem! We picked up take out for my hubby too and the whole check was only $62! The owners/servers were lovely, so welcoming and accommodating, this is definitely going to become a repeat spot for us! And there's a parking lot right next to it so no worries about that! read more

I've been meaning to try this place for sometime now. The pictures of their food, and their reviews enticed me and I surely wasn't disappointed. The place is small and is shaped like an old school diner, located in the corner of an intersection I've passed many times but never noticed the diner. The atmosphere was family friendly, clean, and fun to be in. The staff, which is family, were so sweet and attentive and right there when you needed them. I ordered their churro French toast and chilaquiles. The French toast is everything the hype around it is, and the chilaquiles, my first time trying them ever, were out of this world. The chips were covered in sauce but somehow still crispy, despite how long it took me to get through the dish. I got their freshly squeezed juice of the day which was beet based and I loved it. I immediately got in my car after seeing they offer TRES LECHES PANCAKES!? They were extremely moist, fluffy, and down right delicious, i was savoring every bite! They mix Vermont maple syrup with butter for the perfect topping to your pancakes, it was so good, i could literally drink it alone! As a birria connoisseur, ive never had birria in an omelet and it was an absolute game changer. there were huge chunks of birria mixed in with egg, cheese, onion, and cilantro, and i was very impressed. they also have daily aqua fresca specials and the mango lemonade was quite refreshing! I think the guy working was Eddie (?) - so friendly and welcoming, he made me want to come back in a heartbeat! it's a small intimate place that really brings community together. read more

Went here for breakfast this morning for the first time. Not a big menu, no kids meal menu. Ordered French toast, I love brioche for French toast got the 2 slices. Wish they were thicker and more crispy taste was good. Their maple syrup is very good. Also got the churro French toast my son in law said it was good. My daughter good a build your own omelette she said it was good she enjoyed her omelette and the home fries were good abut different then other home fries. Disappointing about the oj, they give you a Tropicana plastic bottle of juice same for apple juice and that is $4 for each juice. Coffee is dark roasted which was ok if you like dark roast and it's only one free refill. read more

The platonic ideal of chilaquiles - crispy and saucy at the same time, very evidently made from homemade tortilla (and if they arent, they are doing a great job of fooling), DELICIOUS tomatoey red sauce and crema. A small diner, but absolutely delicious food. Their breakfast and lunch items have a fun and flavorful Mexican twist. I always like to have a mix of sweet and savory for breakfast, so I ordered the Mexican Benedict, tres leches pancakes and churro French toast. This Benedict consists of two poached eggs and carnitas, topped with chipotle Hollandaise, and served with fresh greens. Filling and perfectly cooked. The tres leches pancakes were simply amazing. The churro French toast was good, but could have used more cinnamon sugar coating to give more of those prominent churro flavors. Will definently be returning to try more of their menu! read more

Cool little diner with a Mexican theme. I stopped in for a late breakfast yesterday, ordered the Churro French Toast with a side of chorizo sausage. The French Toast was to my liking, but I'll usually find anything coated with cinnamon sugar & caramel sauce (dulce de leche syrup) favorable. Chorizo sausage was a spicy, I liked it also, a good complement to the sweetness of the French Toast. Service was friendly & attentive. Street parking, not too far from Rt8. Loved our brunch over at Agave Diner. Snuck in there around 11 on a Sunday, was already busy. It's essentially in a cute trailer with some stools at a long bar and some booths inside, not too many. Staff is great, they know their food rocks and explained some of the hits on the menu and to mention they make their own agua Fresca juices. My wife and I started with some chips and salsa, homemade of course and had excellent flavor, chips were amazing as well. For entrees I got the breakfast burrito, wish they had actual chorizo, they did but it's vegan so I opted for the longitas which is a Mexican sausage, good backup option. Burrito was packed and I left stuffed, my only complaint was I wish the potatoes inside were a little smaller as they caused my first half of the burrito to collapse early. Kudos to them for also having a homemade hot sauce which I enjoyed, definitely packed some heat. My wife got the tacos, birria and carnitas. She highly recommends the birria, the carnitas looked good but was too juicy and disintegrated the tortilla. She also got the watermelon agua fresca and loved it, we will be back to try other stuff! read more

It's a small space but we went around noon and had no issues getting a booth. Tips if you are going there, they close at 2 PM. I had lunch today at this cute diner. It was packed, which goes to show how much folks love it. The wait staff was working hard to meet everyone's needs. There is no room inside to wait for a table so people had to wait outside or in their car until called. Luckily we were seated quickly. I had a 3 taco platter, handmade corn tortillas generously stuffed with birria {beef}, chicken and pork. Well seasoned. My friend had the Cubano sandwich, also generously stuffed and very tasty. We washed all these delights down with aqua fresca, a refreshing beverage of strawberry and lime, like a mojito {no alcohol}. The staff is friendly and helpful in explaining the choices. Talk about a Phoenix rising from the ashes. This spot is tiny, but mighty! Everything is made with love and skill and the result is flavorful, creative, fresh excellent breakfast and lunch. Options like tofu or impossible meat for those who are vegan. Avocado toast with pico de gallo and an over easy egg is one of my favorites. Their home fries are very tasty and they leave them on the flat top so they get crispy which is my preference. The Mexican Benedict with poached eggs, Carnitas on an English muffin with chipotle hollandaise is ridiculous. The fluffy French toast is served with their maple butter or the milk custard pancakes with fresh whipped cream and berries is both beautifully presented and very satisfying. This adorable old train car style diner is fantastic. The Birria Beef omelet is like heaven on a dish. The Mexican Benedict is so decadent and a great spin on our classic favorite. Today I had the Birria Quesadilla which was a great splurge after Yoga class. We also tried the Chula Burger and it is so good! The fires are fresh and Simon which we love. The Agua Fresca as so refreshing and not excessively sweet. The flavors rotate which is nice. Go early or late because they fill up and stay that way...it's so good and worth a wait. read more

This has to be the cutest diner in The Valley! There are 4 booths as well as seats at the bar which gives it a retro feel. I absolutely love the mural behind the bar too, it's unique and fits the vibe of the diner completely. We were immediately greeted when we walked in and chose a booth by the window. It was hard to decide between the French toast and the tres leches pancakes so our super friendly server gave me their recommendation. I ordered the churro French toast and it did not disappoint in the slightest! The berries were fresh, it was a normal, human-size portion - which I appreciated, and the dulce de leche syrup was so so good. The Agave Diner is a classic American diner (with a Mexican twist) that opened in Seymour, Connecticut in September 2023. It was founded by husband and wife Antonio Perez and Lauren Hassan. Perez is a chef who has worked at a variety of restaurants while Hassan is a dietician and culinary school graduate. Their first joint venture was the Mexican food truck 'Wandering Agave', which can be found at several breweries, vineyards and popup events around the state as well as private functions. After hitting the road in October 2022, the truck became very popular with its menu of authentic Mexican cuisine. The couple still dreamed to open their own brick & mortar restaurant. Suddenly Tony and Carmella Librandi decided to retire and close "Tony's": their beloved breakfast spot in Seymour which had originally opened as "Nash's" in 1951. Perez and Hassan jumped at the opportunity to make the space their own. Their menu features classic breakfast and lunch diner staples with a Mexican twist. My family and I recently visited the Agave Diner for Sunday brunch. We read all about them in a recent publication and thought that their menu sounded amazing. The interior is tiny and customers may have to wait a while to get a seat, but they were able to accommodate us right away. After looking over the menu, my wife and I decided to order and share the "Breakfast Burrito" (2 eggs, house made heirloom refried beans, homefries, melted cheese, crema, salsa verde, and avocado wrapped in a giant flour tortilla) with "Tequila Shrimp" (shrimp sautéed with a blend of spices and splash of tequila, topped with cilantro lime slaw and seasonal fruit salsa) as our protein, and the "Mexican Benedict" (two poached eggs with carnitas on a toasted English muffin, topped with chipotle hollandaise and served with fresh, lightly dressed greens). The food was SO GOOD; so fresh and bursting with flavor! Our son had the "Cheese Quesadilla" Kids Meal which he happily munched on. The best breakfast in Connecticut, hands down! Went here for the first time this morning and everything about this place is so well done. This is not your typical diner; not a greasy spoon. An amazing amalgamation of Mexican and American flavors. The vibe is still very diner with swivel chairs at the counter and just a few booths. The coffee is so good - not something I'm used to at diners. Me and my friends shared the tres leches pancakes, a short stack of French toast and chilaquiles with their carnitas. Their salsa is delicious, the carnitas were tender and perfectly seasoned and the tortillas were crispy and not greasy. We left the place so full but not feeling gross - a sign of high quality ingredients. I cannot wait to return to try more things on the menu. Oh, and all of the staff are SO NICE!!! read more

We've been here several times and they are consistently fantastic in everything they do. The food is so fresh and delicious I find myself making mmmm....noises with every bite. The diner is small but uniquely charming and the staff is so friendly that you feel like you're a guest in their home. The salad that can with the Benedict was delicious and a nice compliment to the meal. The place was very inviting. There were a number of regular customers. This place is too cute! It's a classic 50's diner with a Mexican twist. There have great options for breakfast and lunch. I've been a few times and the service is always excellent just like the quality of the food. I especially love their burrito and eggs Benedict. My kids love it too, especially the spinning stools at the counter. It's a tiny place with a handful of booths next to the long counter, but I've never had to wait more than a few minutes. Really cool combo of traditional American diner food and Mexican style brunch specialties. The menu had classic bacon egg and cheese, burgers, or simple two eggs with toast for a low price, but we tried out the more exciting stuff like the chilaquiles and tres leches pancakes. I wish I took a picture of the chilaquiles but they went too quick - delicious, thick tortilla chips fried with eggs and cotija cheese, I can't wait to get back and have those again. The tres leches pancakes were also amazing, sweet but not too rich - and don't sleep on the maple butter it comes with, that was next level. The owners were very kind and friendly and seem like they just honestly want to provide a great experience for their customers. We felt cared for and treated well, and service was fast and attentive.
