Surprisingly enough, there was a spot along the Northway just outside of Warrensburg that still managed to show off its rainbow sherbet of colors. Our objective, however, was to meet my sister in Chestertown for dinner at O. P. Fredricks. Arriving at 4 PM when they opened there were already a few people in the bar and in the dining room. They don't take reservations, so it was wise to arrive early. By 4:30 there were people waiting for a table. The atmosphere inside is truly Adirondack with hewn wood beams and paneling. Before I forget, the chairs are really comfortable. The menu was surprisingly, large. In addition to the evening's specials, which included three entrées, there were a dozen shareable appetizers (emphasis on "shareable"), four salads, 19 regular entrées (all accompanied by a fresh salad and bread [we never received any bread, but I didn't see it served to other tables either]), four steaks, at least a dozen different handheld sandwiches, quesadillas, and a kids' menu. There is a full bar including a half dozen drafts. Our beverages to start were a Wolf Hollow draft Camp Out Stout ($8), a Saranac Ginger Beer ($4), and a glass of Mondavi Chardonnay ($7). The portion size of the Baked Brie ($11) was truly shareable. The brie was warmed without being runny, served on top of a tasty garlic bread made from pressed hamburger bun slices, and topped with a melba sauce. It was so delicious! Just like the appetizers, entrée portions are large. We each took half of ours home. My sister was very pleased with her Seafood Stuffed Portobello ($26) - the stuffed portobello was broiled and topped with shrimp scampi and, as all of our entrées, served over the house rice pilaf. My wife's Scallops Rockefeller ($31.95) included sautéed scallops (oddly on one side only), mushrooms, chopped bacon, and baby spinach, finished with an anisette flambé, and served over the previously mentioned rice pilaf. Another tasty dish. My choice was their Jambalaya ($28). It was a delicious combination of sautéed chicken, shrimp, andouille sausage, mixed peppers, onions, and diced tomatoes mixed with the ubiquitous rice pilaf. It had just the right amount of spiciness for my taste to make it a thoroughly enjoyable meal. To wrap things up, we shared the Maple Bread Pudding ($7) with cups of coffee ($3 each). The bread pudding was moist with just enough maple flavor to satisfy a sweet craving. Service throughout was very attentive and friendly. Did I mention how comfortable the chairs are? And yes, their rice pilaf does go very well with everything. We're looking forward to a future visit. UPDATE: The Jambalaya is soooo good the 2nd day, I suggest you order it as takeout to eat the following day. And they are even nice enough to have removed the tails from the shrimp before the dish is served.

Cabo was still hurting from kissing a stingray and getting his tongue scraped...Ouch. I started off with a rum runner and Cabo had a Mai Tai and a shooter of rum. That boy likes screech rum (which they don't have) he carries a bottle all the time in his suitcase. I digress. Place is amazing. Had the Jerk chicken and it was better than in Jamaica and Craig had the fried calamari and burger. Very good and the desert was to die for. We had rum cake and it was soooooo good we had 2 more. I you want island service and high prices and pretty good food, you came to the right place.The waiter loved the fact Cabo was telling him about his new 54 foot sailboat and his plans to retire in 2 years and sail to Grand Cayman with Jenny, who just bought a condo there just so we could come visit and hang on the boat.
