For the uninitiated, mofongo is a dish from Puerto Rico featuring plantains as its main ingredient. If you are a fan of Guy Fieri's Diners, Drive-Ins & Dives, you know that he is a mofongo freak. I've had mofongo before & definitely enjoy it, hubby was new to the experience. We selected the Shrimp Creole Mofongo & it was spectacular. We heard the pounding of the plantains in the back as we waited for our food so I knew it was being made special for us.
