It is, simply, a pork loin sautéed in garlic butter on a 6 inch Milano bun toasted with garlic butter. It is SOOO good. So good that I have driven 80 miles, roundtrip, every year for the past 6 years to go get it. They also have an Italian beef version of the pork. It is called the Italian pork. It is like an Italian beef, but it is shredded pork on that same soft, tasty Milano bun. Good eating!!! (I always get mine dipped) This is a summer staple of Will County. It IS a pork WAGON (truck). So you have to follow their schedule which is on their Facebook page. The month they are camped the longest, in one location, is May, setting up in the parking lot of Vilt's Greenhouse. Check the schedule!!! (They are camped in other locations, around Coal City/Wilmington area, from May to Sept.) The workers are family to me. Hell, they treat me better than my own family! We've been here before for their Friday Fish Fry (which is excellent), so we were looking forward to trying something different. I ordered the Mudbugs (crawfish) only, while my wife ordered the combo with Mudbugs and Meatloaf. The underlying motivation? She doesn't eat Mudbugs -- so I knew I'd be getting a bonus portion. The Mudbugs were cooked from live crawfish and seasoned with a classic Cajun blend. They varied in size but were served in generous one-pound portions. The flavor was fresh, well-seasoned, and exactly what you'd hope for in a good boil. Now, the real surprise was the Meatloaf. My wife loves Meatloaf but is extremely picky about it. I can honestly say she loved this one. After trying a bite myself, I agreed completely. It had a rich, beefy flavor, was moist throughout, and the ends had that perfect crunchy outer crust -- which is always the best part. We also ordered the Jalapeño Poppers. They had a nice crunchy exterior, and the pepper and cream cheese filling was creamy without being overcooked -- a solid appetizer choice. Top Fuel has that fun, laid-back dive bar atmosphere with lots of friendly people just enjoying themselves. It's comfortable, welcoming, and easy to settle in for a while.
