Gloriously chilled tuna sashimi was thinly sliced cut with heat from fresh wasabi and a savory ginger shoyu. Hand rolls are served in pairs, and the spicy tuna was simple, elegant, and delightful - a perfect showcase of the freshest fish. Before switching to dessert, shaved ginger is also snappy and cleansing. I was absolutely mind blown by the Sakura Pannacotta - delicate and dreamy custard textured like chawanmushi with soft aromatic cherry blossom and the most delectable shortbread accent. This way they were also very fresh as soon as we were ready to enjoy a different roll. The restaurant is located inside a shopping center building and while it's an older building the restaurant itself was clean and inviting. We ordered to go, but I totally would've hung out in this area. I will know we ordered online and our order was delayed about 15 minutes past what was posted. The rules were very basic, but they were good. I wish they would've had more sauce on them. The portions were great, a solid rice to fillings ratio.

The goodness began with Naomi, who helped me fix an error in my reservation and get a table at a good time tonight. The goodness continued with our server Mitzi, who should be teaching graduate classes in hospitality in every big city. She was friendly without being overbearing, informative without being pedantic, subtle and gracious. Now, the food! My wife chose the vegetarian tasting menu and I had some of each dish: so very flavorful (a green salad with pears, a life-changing mushroom bisque [and I don't like mushrooms!], a chickpea croquette with pickled artichoke hearts and ratatouille, and a substitution of the lemon crepe for three yummy scoops of sorbet and gelato. I chose the scallops, perfectly cooked and moist, over couscous, and a dish of tasty sauteed baby spinach. A wonderful experience, and not overpriced, and everyone treated us sweetly. The interior is classy and very comfortable. We were seated at a nice comfy corner booth. The soft music in the background was soothing and just noticeable enough without being a distraction. We were served complimentary flutes of local sparking wine and a fresh baked bread basket and butter to start. We then ordered cocktails and three starters. First was a split plate of the endive smoked duck salad with a warm bacon vinegarette. Wow...this was nice and refreshing. This was followed by the crab dumplings with fresh corn and peas and lobster sauce. Delicious! The final small plate was seared foie gras on top of banana bread toast. This was very good. I miss foie gras. Unfortunately, it's banned in California. They had a 2023 Sea Smoke "Ten"Pi ot Noir on the wine list. This is one of the best Pinot Noirs produced in California and not easy to find. This was a no doubter and we ordered a bottle to pair with our entrees. My wife ordered their signature elk tenderloin for redemption because the restaurant the night before failed at executing this. I ordered the tomahawk pork chop. This was cooked to perfection with a nice thin crust on the outside and a perfect very light pink juicy center. We ordered a side of brocolini that was pan roasted with shallots and butter. Everything was very good and Michelin grade in our opinion. Lastly we ended the evening and split the tiramasu type of desert. My wife had the expresso martini and I had an 18 year old Glen Morangie scotch neat. The service was excellent and worth the splurge. This is a must when visiting Santa Fe.

He assured me there would be no problem in accommodating that. He started us off with a complementary prickly pear & lemonade drink which we loved! He also provided a complementary appetizer which was very unique and made out of avocado and mascarpone and some other items I don't remember. Why I didn't love it, I did enjoy hasting something so unique and different. We started with the best cornbread I've ever had that shaped like a cob of corn with three different kinds of butters. The cornbread is $12 and worth it! Next came the Caesar salad wrapped in some kind of egg roll wrapper and topped with an anchovy mixture. We split it so we each got two rolls which was plenty. We very much enjoyed the flavors in the salad. Don ordered the Wagyu short rib with polenta. While we don't love polenta, this was tasty and complemented the beef nicely. Don said this was the best short rib he ever had. I wish I had a picture of how they presented it. When they took the lid off, there was a lovely steam cloud and it smelled wonderful. I had scallops with each one placed beautifully on top of of really interesting wild rice and finished with toasted coconut. The pineapple salsa and the Hoja Santa Fe Oil were placed in small rounds in the middle of the dish because they had some kick to them. What was especially impressive, is the gentleman who brought out my meal leaned over and said that the Chef wanted to let me know that the two items in the small dishes had heat to them, but I was encouraged to give them a try for the full flavor. Impressive! I was able to enjoy the pineapple salsa, but the oil was a little too spicy for me, but I'm glad I tried it. We would've loved to try dessert, but we were fully satiated by our delicious meal. It was quite an experience and we look forward to returning.
