    Sushi dinner 'A' and Santa Fe roll

    Go ahead, coastal snobs, snicker all you want about a sushi bar 1000 miles from the ocean and a mile and half above sea level. The sushi here is top notch, always very fresh, expertly prepared, and in generous portions: big three-inch long, quarter-inch thick slabs of fish, not those paper-thin little slices a lot of places serve. (And by the way, US food safety regulations require that all sushi everywhere be frozen before being served, in order to kill parasites, so those 1000 horizontal and 1.5 vertical miles don't mean much in this day and age.) Spicy tuna salad is particularly tasty, with a generous pile of big chunks of sashimi tuna and an excellent sesame/vinegar/spice sauce. Shrimp and octopus salads are great too. Service is always friendly and welcoming in this mom-and-pop operation. I'd give this place five stars and then some, because the food is truly excellent. But I'm knocking off a star for their ridiculously short hours - an hour and a half for (early) lunch, and an hour and a half for (extremely early) dinner. Who ever heard of a restaurant that stops serving dinner at 6:30? I normally don't even start thinking about dinner until about 7. So, much as I love their food, I rarely manage to eat here. Pretty much the only time I do is if (1) I miss lunch so that I'm hungry early, and (2) I can somehow get off work early. Too bad, they could do a booming business if they wanted to.

    Lunch Sashimi set with side order of dempura roll.  Was expected more than 6 cuts, consider it was almost $8.

    This is an awesome if unassuming sushi spot. Best advice is to get there when they open because it tends to fill up fast.

    A wonderful surprise in the mountains of Northern New Mexico. The menu is limited. However, the food and service are fantastic!

    Flavor was there, but the rice in the rolls was not cooked properly. Half of them where falling apart and the presentation looked sloppy.

    The best spicy tuna rolls I've found in New Mexico. The Chef makes them different then you usually find. Prices good also.

They have an extensive sake menu categorized by flavor profile designed for pairings, along with a lean but modern wine list including detailed tasting notes. Japanese whisky and exotic green tea (try the kuki cha!) round out a full beverage program, and deep booths offer private views of the lush valley below. Chef Kiko Rodriguez offers a four-course tasting menu at an exceptional value for $65 - trying this or any of Paloma's suggestions from their fresh sushi menu (only restaurant in New Mexico with fish flown in from Japan daily) will surely please. Gloriously chilled tuna sashimi was thinly sliced cut with heat from fresh wasabi and a savory ginger shoyu. Hand rolls are served in pairs, and the spicy tuna was simple, elegant, and delightful - a perfect showcase of the freshest fish. Before switching to dessert, shaved ginger is also snappy and cleansing.
