There was a 20-25 minute wait on a Friday evening. The staff was polite and kept us informed with seating arrangement updates. The seating area is a bit small so that justified the wait time. The vegan ramen broth was very flavorful. Hot sake was a kept us warm on a very cold night in Santa Fe. Japanese chicken wings were tasty too. This place punches way above its weight class here in Santa Fe. I was a bit nervous bringing a visiting friend here since she's from Chicago and eats a lot of good ramen, but she loved her tonkotsu ramen and was also really into the red chile ramen I ordered. I loved this place! It is a small location, so definitely don't come in large parties. If you do, please just order takeout! There's only a few small tables meant for 2, though they can easily be combined for groups of 4. Today was Pork Gyoza to start with Hot Jasmine Tea for me. A nice treat on a rainy day! I was pleasantly surprised at this restaurant. While I think it was overpriced I was satisfied with my ramen and hot tea. I switched out the Shoyo pork for brisket because I don't like super fatty meat. The chicken karaage was delicious and hit the spot while we were waiting for our meal. They have their own free small lot with spaces around back and on the side. LOCATION/AMBIANCE At first I didn't see it because a police officer had someone in custody in the lot nearby. It doesn't stand out from the road to be honest. It's a good place for a sit down meal for solos or small groups. Its minimal decorations and beautiful menus reeled me in. The main pitfall for me was the restrooms shared with a nearby business. The women's was unsightly and a bit rundown. THE GRUB + Black Tonkotsu Ramen ($15.95) was good. The broth was weak in flavor. The pork was only slightly tender. Still, it was enjoyable on a rather chilly day. + Iced Jasmine Tea ($3.75)... I requested it to go! The nice waitress brought me out a bottled tea and a coffee cup full of ice. LITTLE YELPER'S CLUB Without my own kids with me, I didn't request a kid's menu not did I see one on the regular menu. Ramen in Santa Fe, NM?? Ya' betcha'!! Mampuku is located in a non-descrip area at 1965 Cerillos Road. And I'm not sure we would have known about this place except for the fortunate visit with local friends. Mampuku Ramen is a regular stop for these friends and I totally understand. We came in at their opening hour, warmly welcomed, and our party of five was settled quickly in a quiet alcove. The bright, quiet decor is both traditional and eclectic. They serve a ramen and Izakaya menu but we were there for the ramen. Independent of each other and without prior discussions, we all opted for the BLACK GARLIC TONKATSU RAMEN. A House-made pork bone broth with roasted black garlic oil, nori, green onions, bamboo shoots, Naruto fish cake, chashu pork, and a seasoned egg. This was a good vibe of what was to come. This has to be one of the best bowls of ramen I've had and this includes the San Francisco Bay area and Tokyo! The broth was deep, clean, and flavorful. You could taste and savor the time and care that went into the broth alone. The ramen noodles toothsome, the chashu pork, fish cake and egg, all perfect accompaniments to the ramen. With ramen, I normally order a salad, edamame and maybe gyozas but not this time. Ramen was enough. Seriously we left empty bowls, and with full bellies! We also ordered hot green tea and I enjoyed that we each received our own personal tea kettle. Mampuku is a definite must visit for a delicious bowl of ramen when in Santa Fe. Would love to try their Izakaya menu like a local-inspired Shrimp Stuffed Green Chile Tempura or other ramens like Red Chile or Naruto. This is our first order and it was take out delivery. I ordered the curry with the additional price for gluten-free noodles. The noodles were at the bottom in a big clump obviously not fresh. The so-called homemade broth was salty and terrible. My husband ordered stirfry pork rice. It was all clumped together, and there was white rice in it. It was not even mixed with the rest of it. I will not order from this place again. It does not Worth even 1/3 of the price and then I would still now to order it. Terrible. After eating a little bit of that food, I found that I could not sleep for most of the night and it makes me wonder if they even gave me gluten-free noodles because I don't sleep when I have gluten. We had to throw it away. It should be outlawed that we are charged so much money for terrible food that probably made me feel ill . If you're looking for an authentic bowl of Japanese ramen, Mampuku is where you've gotta go! The location on the south side is right off Cerrillos with its own parking lot. Ambiance was similar to other ramen joints I've visited outside of NM. Prices range from $13-17 for a bowl and if you want extra meat, add another $4. It's worth the price point to me because there really is no other place with ramen this good! I've had takeout twice now and not only was pickup a breeze, because the service is friendly and fast, but the packaging is awesome. The 25-30 minute journey back home was smooth and peaceful knowing that my ramen broth wasn't spilling all over my car. I LOVE that they package the noodles and toppings separately from the broth. This ensures that your noodles don't become over cooked. I got 4 orders: 2 Tonkotsu, 1 black garlic Tonkotsu and 1 red Chile miso. The Tonkotsu is a house made pork broth that is rich, creamy and comforting. The black garlic is the same broth but with a flavorful roasted black garlic oil and a piece of nori in it. The red Chile miso is a chicken broth mixed with miso and red chile that is a lighter choice in terms of thickness, but with lots of spice. It's hard to decide which is my favorite, because they are all so delicious! read more

The noodles were good and chewy, perfectly cooked. The chashu was well prepared; charred and nice amounts of fat, though I had the feeling it was yesterday's preparation. I was happy to have revisited this shop based on the stellar review of a trusted food friend and am so glad I did! I went with a friend and we both ordered the same dish. It was delicious. The noodles were wonderfully chewy, pork tender, and the broth flavorful. The egg was salty but I think that is just the nature of the marinated egg and I enjoyed the jammy center. The food was good. Sadly I forgot to take a picture of the Takoyaki - phenomenal. I went with a smallish group (4adults, 1 child) and we split the apps. I wish there was more of both apps but that's on me. The Ramen wasn't salty enough for me but I think I was just dehydrated. What was nice is they gave my friend whose child came a small bowl so her daughter could have some ramen. It was too spicy so the restaurant made her a separate bowl (not for free) and gave them the leftover noodles which was super nice. The service was ok. The service took our order quickly, checked on us frequently but never refilled our waters. We definitely could've asked but by then we were leaving and they were super busy so it was ok. This was my first time to eat there. I was extremely impressed with the food. I ordered the Black Tonkotsu Ramen. It was definitely delicious! The Chashu Pork simple melted in my mouth. Amazing Food and ambiance! Coming in here to enjoy a conversation with my friend was amazing. The music is so calming and relaxing that I just wanted to stay in all night. Oh my. Mampuku is some of the best ramen and karaage I've ever had. This time, I got the spicy tonkatsu and chicken karaage. I can safely say this is the best fried chicken (karaage) in Santa Fe. It's marinated thigh meat served crispy with what I think is spicy kewpie Mayo. The spicy tonkatsu broth left me with a tolerably warm mouth while inundated by deep flavor. The noodles are perfectly chewy, not overdone by any means. Service is excellent. The front of house person was very nice and seemed to be having a good day. He pointed me to my food quickly, and the rest is history! In my humble opinion, this place deserves more traffic. It's one of the hidden gems of Santa Fe that isn't New Mexican.
