Told them we added two more people on and he recommended how much and cut it. I asked him to slice off the bone and butcher twine it back together. They had told me there was $5 charge when I preordered on the phone and I told him that was fine. When I told the guy today that I was smoking it and would cut off the twine, season the part where the bone was and twine back together, he told me he would net it after cutting the bone off and didn't charged me. This is choice meat but it is as close to prime as can be and their price was cheaper than other butchers I checked with.
