    I discovered Spirits Lab through Pleasantville farmers market and am thrilled we have local distillers right here in NY. Their vodka is fantastic and I've also enjoyed their bottled cocktails throughout the summer. Hopefully one day we'll get to check out the tasting room.

The guy (I'm sorry I can't remember your name) was so sweet he walked us through everything and answered all our questions. We waited for lunch which wasn't long after our drinks and got the fries and wings. Id also love to mention that we got free glasses with the purchase of the tastings. We were so enthralled by the beautiful, relaxing, and wonderful experience. It's in a beautiful area next to a gorgeous lake and they had really sweet workers. Even though it was a little over an hour drive we will definitely be coming down here again.

If you don't know where to begin, they have tastings of their wines, spirits, and ciders so you can find your drink of choice. The staff is also super welcoming and knowledgeable during this so you learn so much about each beverage. It does get very crowded in the fall so plan your visit accordingly.

For those who abstain from alcoholic beverages -- they do have a handful of tasty mocktails available. What elevates the experience even further is the exceptional service behind the rail. Instead of the indifferent attitude you get at some trendy spots, the team here is welcoming and highly engaged. Everything about this space feels thoughtfully designed and curated. It's such a fun little gem right here in Pine Bush. The owners are incredibly welcoming, as are the bar staff, and there's a warmth to the place that makes you want to come back. We've really enjoyed the pop-up food vendors they've brought in, and when there isn't a vendor on site, the bites they offer are a great addition. And the cocktails! I honestly haven't had one I didn't like. They're creative, beautifully made, and showcase the spirits so well. I'm also loving the eclectic mix of live music they're bringing into the venue. As they age their barrels they to many eeative things, including double oak (moving the spirit to a new barrel), finishing in a different barrel and moving some spirits across arreks. All of the grains used are grown on their farm. The grains are tracked. Y field and harvest year to help the distillery work to improve their already wonderful products. A tasting is almost mandatory because their are so many expressions and some of the bottles are expensive (but worth it). It was only about an hour or so away from our house, so this was a real treat. Even though it was a cloudy day in March, the distillery was so beautiful. We can only imagine how gorgeous it is in the summer. We ended up having a private tour since no one else had signed up for the 11am time slot - fine by us! Our tour guide, Bob, was very friendly and knowledgeable, explaining everything in great detail. After the tour, we had our tasting. The tour and tasting we chose was The Hillrock Distillery Tour & Barrel Proof Tasting with Cheese & Charcuterie Plate - worth every penny! The bourbons were all absolutely amazing and the charcuterie plates paired perfectly with them. We ended up buying our two favorite bourbons, along with a pair of glasses and a hat for my husband. We are already trying to find another occasion to visit. Who knows...maybe we'll try The Founder's Tour next time. Thank you for making my husband's birthday so special. He was smiling for the rest of the day.
