    Wow! It's incredible dining ! What ambience and a wonderful evening! Restaurant week selections did not disappoint! Staff is spot on....I highly recommend it's delightful and so delicious!

    We've been back a couple times now, both for a birthday dinner celebration, and for poolside lunch. Unfortunately, we've had mixed experiences. The cocktails and food have been pretty good, but service has been a little inconsistent. DRINKS: The cocktails are well made. We especially love to sit at the poolside bar and have drinks and a lite lunch. Inside, I've had an Anejo Old Fashioned, and my wife had a "Don't Call Me Sherry" (Dry Spanish Sherry, Amara, Dry Curacao & Bitters). Both were wonderful. Poolside offers a different cocktail menu, with more refreshing concoctions, like Spicy Margaritas, Paloma Clasica, and Bloody Marias, among others. FOOD: For our dinner visit, we started by sharing the Scallop Croquettes and Chorizo Dates, which were both excellent. We ordered two of the Paella Mixta to share for three people. Smaller sized servings, and lacked some seasoning. It was okay, but would probably not order it again. Poolside, there's a lighter menu with tapas, sandwiches/wraps, and salads. On our last visit, we tried the Brussel Sprouts & Chorizo, Cheese & Ham Croquettes, and the Mussels Fisherman Sauce. All three of these were excellent. I believe that they may currently be closed for the summer, but it's definitely a nice location to experience some decent cocktails and tapas. I'm sure we'll be back.

    Well, I was left with a sour taste in my mouth after my interaction with the bartender. Usually when someone is told there's been a simple error on an order, one simply accepts it and corrects it with a new order. No. It took 3 different people in my party to talk with the bartender and explain to HER that she had made the incorrect drink. The fact that she stared me down in my face and blatantly told me, this is what I ordered, only to see that little tiny glimmer of light in her eye when she finally realized she did in fact make an error and make the wrong drink. That's how our night started and service only snowballed to worse. We were sat at our tables, no menus, no acknowledgment from any server. It took the manager to realize that our party had not been attended to. The tapas are tapas, in order to be satisfied you'll have to order several. The croquetas were the favorite of our group, we also enjoyed the shrimp. I would say the tabla española is simply not worth the price. Overall, I probably will not return.

    What a disappointment I was so excited to try all these new flavors. Every day was mediocre best. The paella did not have any flavor at all. I could've made the stuff at home so disappointed and the bill was ridiculous. Definitely not worth the money. I would not recommend going at all service was good. That's only thing that's why I'm hesitant to write this review but for those foodies out there, this is not your spot.

    Food was 3/5-the paella was good (fortunately not too salty like other reviews), the croquettes were delish, dates yummy, but the corn and cauliflower was very oily. Service 1/4- We had a late rez (8:45pm on a Saturday) and there were still a few tables around--it was honestly the worst service I can remember in a long time. It was like everyone there just wanted to be done w work. One of our party of 4 cleared our table of app plates and other plates by putting on empty table behind him because no was helping us. It's too bad because the food was pretty good and the spot at the hotel is cute. But I hope they get folks in there that can provide service. I can't recommend because of service but wanted to give a few stars as food was good and bad service is not the kitchens fault. Hope they get their act together.

    Sol Y Sombra is the onsite restaurant at The Paloma Resort. It's only open for dinner, except for brunch on Sunday but we were able to order food to be delivered poolside. We just couldn't sit inside the beautiful dining room. We shared the Pan Con Tomate & Manchego Truffle Fries. The fries were hand cut and the smell of the truffle oil was heavenly. They were addictive and dangerously delicious. I was craving them the next day. The Pan Con Tomate was comprised of grilled ciabatta bread topped with a tomato compote and sliced Heirloom tomatoes. It was a nice, light snack. The poolside bar also serves as the bar for the restaurant. However, during dinner tableside craft cocktail service is available. I ordered the Sombrero Purpura (Purple Hat) - Gin, St. Germain, Lavender bitters, Lemon juice. It was light & refreshing - the perfect warm weather drink. Next time we return, I'll be sure to have dinner in the charming dining room and possibly try the Paella and a tableside craft cocktail.

    Sol y Sombra is going though some management changes as of late (and hopefully for the better). The service was completely uncoordinated and frustratingly slow: I understand a new manager was hired to fix this. Food: The brussel sprouts were amazing! The cauliflower was also tasty. Both a must do. However, the vaunted paella was merely OK...needed more saffron and more kick and maybe more than two large shrimp / prawns. We dined outside which was nice since the weather cooperated but was still a bit noisy...outside but not open air. Comfortable seating, overall. I'm hoping SyS gets its service coordinated soon.

    Not our first time, but definitely one of the best. Live music out by the hotel pool set the tone. However, it's the amazing food that keeps us coming back. The Pallea last night was to fresh, delicious and cooked to perfection. I could go on about everything we ate and the incredible service, but just go see for your self!

    CV needs more restaurant variety and this is a nice addition, serving fairly authentic Spanish food in a fun vibey setting. We opted to sit outside for dinner on a warm evening. Very pleasant. I was refraining from alcohol but appreciated seeing 3 drinks named after Sofi Tukker songs on the cocktail menu. Ordered a couple tapas, one starter, a salad, and one main for two to share. Plenty of food (tapas are nice portions). Drinks took a while to come out. They brought my iced tea to the wrong table, went to get another, and almost delivered it to the same wrong table again. Some confusion amongst the staff could use some sharpening. Then our food arrived in reverse order: main first, then tapas, salad & appetizer last. Weird, but we didn't really care. The best things we ate were the mussels, braised pork (main), and jamón serrano. The sauce and puree rounded out the pork perfectly. Chorizo mussel broth had a great spicy kick and deep flavors. And jamón is jamón, it's always good. These dishes were the heartiest things we ordered so we were happy. Misses were the papas bravas and Spanish Caesar. Potatoes weren't fingerlings and barely saucy; the dish didn't resemble papas bravas. Our Caesar was just lettuce and shaved cheese with too much, flavorless, dressing. I had asked for the migas on the side (hubby's allergic to wheat) but received none, and almonds were absent. Not a perfect meal but a good one for the most part. I'll have to try the paella next time.

Personally the salad and jelly didn't work for me but my husband's short rib (which was also cooked perfectly) came on a bed of cauliflower puree which was so delicious that I ate half. On night two, I ordered the lamb chops again but requested they be served with the cauliflower puree, and they happily obliged. My husband got branzino, which he thought was good but I thought it was great, and I usually don't care for it. Pro tip: They offer a $15 corkage fee but I think you may have to ask when you make a reservation and they also have a $15 coupon (business card) at the front desk. The service was great, both of our waitresses were perfectly attentive and the bussers were on point. This is now one of my favorite restaurants in the area and we plan to come back every time we are in town.
