I was actually in the mood for pho, but unfortuately didn't have the time to dine in so I went with take out. I went with some spring rolls and banh mi. Ambiance: Very contemporary, the staff is very attentive. This is definitely a popular place as I saw people a the tables during lunch time. Food: The springrolls were good and I liked the filling. The banh mi was also good, but I've been spoiled by past places Ive been to where the bread used has the baguette texture. Take note they have specials that are only available once a month, so that on its own has ifs appeal and exclusivity. I tried it for the first time about a week ago and I can't wait to make my next trip over there! They have a variety of dishes that you just can't find anywhere else in the area and I love that they experiment with new dishes like their "Pho-nomenal Tacos". It was quiet when we came in, with soft K-Pop music playing in the background. The waiter was very attentive and friendly, and during our meal the chef came out to greet us. I've been going to snowbite for 6 years now and just when you think they can't get better, THEY DO. They're always up to date with the tastes and trends that everyone loves and do an amazing job at executing them. You can't go wrong with the beef bahn mi, the bread is buttery & toasty heaven and the beef is tender and has so much flavor! And their emperor fried rice is so bomb! It's even good enough to be a meal all on its own! And don't get me started on their teas! The perfect place to satisfy all your cravings and receive great service as well! The owner really takes an individual interest in choosing her employees and it's evident in how welcoming they are to every customer. I would 10/10 recommend snowbite (and I do). read more

I'm from Dallas area and when I head down south with my family this is my go to spot on almost a daily base. Vietnamese restaurants are everywhere where I live, but down south in the valley selections are limited and this restaurant is a godsend. Love the food and daily soups that have been added. Also love the Wednesday's soup selections as well. Staff and owners are great. Menu is super creative and has so many selections. Snowbite is considerably the best Vietnamese/Fusion food eatery place of Edinburg. Snowbite is held in a humble, but quaint small setting near University Draft House. The service is great, and the young, but helpful staff are very knowledgeable about the menu and give great suggestions. Some food items take slightly longer than others, but the food is always served fresh and hot. For an appetizer, I had the Pork Egg rolls which were great. I also had the Banh Mi, which was tasty and very well put together. The cooks use authentic ingredients and every bite has the taste of homemade, but professional talent. If this place keeps it up, they could very well become the hotspot for college students looking for something different, affordable, and tasty. I will definitely be returning to this location for a quick bite every now and then. read more

I was looking for something different and healthy to eat in Edinburg and I decided to try Snowbite after reading the reviews here. I'm SO glad I did! I had the Lemongrass Shrimp Noodle bowl and loved it. I ate every bite and even scooped up every last drop of the sauce. Very fresh and tasty. The waiter was good at explaining the menu items and answering my questions. Very friendly and efficient staff. My only nit was the fried wonton strips. I don't care for them, so next time, I'll ask to have them left off. (Not a big deal, as I just took them off.) I'm looking forward to trying some of the other menu items. I will definitely be coming back soon! I've been back twice since my initial review. The second time was a disaster, but the very attentive owner made it right by comping the meal. I wasn't impressed with it when it finally arrived. I think I'll just stick to the Lemongrass Shrimp noodle bowl from now on. That seems to be the "star" for me. read more

The drinks were good, but when the food arrived it was just disaster from them on. No customer service, the server didn't even know much about the food. We were actually expecting for this place to be amazing as most of the reviews are positive. As soon as we got the food, we went ahead and paid. At checkout, the person who charged didn't even bother asking whether we enjoyed the food. 40 dollars to the trash really. Lol. Will never be going back. My folks and I are vegan/vegetarians and were glad to know that some of their meat dishes could be replaced with tofu and mock-tofu shrimp - it's not officially stated in the menu, but they can make a vegetarian or vegan version of their dishes, with the exception of a few. All you have to do is ask. We ordered the house tostadas, the chicken and shrimp spring rolls replaced with tofu and mock shrimp, the wonton noodle soup, and a noodle dish (I forgot the name.) I gave it four stars as I have yet to try the desserts, but I'll definitely be coming back. read more

i went to snowbite for the first time for lunch after hearing great things and a recommendation from a friend who had dined there. All i can say is wow. As i waited for the meal, i was presented with some wonderful cabbage soup. This is a simple clear broth with a few strips of cabbage. So tasty, i could just eat several bowls. i enjoyed it so much, i tried unsuccessfully to make some following a coupe of recipes found online. I had a the special chicken appetizer that was recommended by the waitress and that too was really tasty. Also favorable was the passion fruit tea. What a fun and different place!! Went here with my fiancé to try the shaved snow. We had the peach one. It was not too sweet, had lots of fresh fruit and a really interesting fluffy texture. Whenever I come home from Austin, I usually make sure to visit Snowbite. The fried pork rolls are to die for, I haven't found a restaurant that can make them as well as they do.
