We recently experienced the Spring 2025 Chef's Experience, complete with a thoughtfully curated wine pairing, and it was a night to remember. Before diving into the culinary highlights, I have to praise the service. The staff orchestrated each course with impeccable timing; plates and glasses were whisked away and replaced with the next pairing almost as soon as we finished, all with an effortless grace that made us feel truly cared for.
This eight-course tasting menu featured smaller, refined versions of dishes from the regular menu, each one a showcase of creativity and technique. The evening began with a trio of amuse-bouches: a smoked beef carpaccio tartlet, trout chicharrónes, and a foie gras doughnut. Each was a perfect single-bite delight. The tartlet offered a satisfying crunch, with sweet mustard and caramelized onion beautifully complementing the cured beef. The trout chicharrónes were a playful contrast of textures, combining crispy chicharrón with silky raw trout, briny roe, and a touch of dill cream cheese, a visually striking and balanced bite. The foie gras doughnut was a revelation, pairing rich foie gras with apple butterscotch and a cider glaze for a sweet-savory finish.
Next came the hiramasa crudo, paired with Carvoniste Albariño. Presented in a deep bowl, the fish was arranged like a delicate flower, its subtle flavor elevated by a blood orange ponzu. The sparkling wine brought a crisp, refreshing note that made the dish sing.
The golden Kaluga caviar course was a visual and culinary treat, served atop smoked sablefish in a shimmering pond of shiro dashi. Paired with Telmont Reserve Brut Champagne, this was our first experience with caviar, and the combination was nothing short of luxurious.
Crispy gundi followed, matched with Fabbrica Pienza Toscano Rosso, Sangiovese. The dish was topped with a delicate Parmesan tuile, adding texture and a hint of umami, while the gundi itself was light and flavorful.
The BBQ'd sablefish, paired with Mlat Ried Hohlgraben Grüner Veltliner, was subtly smoky, accompanied by a crisp cabbage salad. The wine's freshness complemented the fish without overpowering its gentle flavors.
For the main course, grilled beef short rib arrived with a Tempranillo Blend Rioja. The short rib was meltingly tender, topped with a smoked béarnaise sauce, and accompanied by a playful crab rangoon. The Spanish wine was a perfect partner, its acidity cutting through the richness of the meat.
Dessert was a two-part finale: an Earl Grey sorbet and a Jivara milk chocolate "frosty," paired with a Corvina blend from Veneto, Italy. The sorbet was crisp and refreshing, cleansing the palate, while the chocolate frosty dazzled both visually and with its rich, creamy flavor, a fitting end to a night of exquisite flavors, textures, and artful presentation.
