What a wonderful restaurant! I treated my daughter to a dinner there and we loved everything we had! We started with pineapple salsa which had a really appealing smoky flavor and just enough heat. I had a hatch chile margarita that was a perfect combination of sweet and spicy while my daughter had an agua fresca that she enjoyed. Both of us had tacos and they were so amazing! Came for an early dinner (5:30) on a Saturday night and there was already a 45 minute wait. Luckily we grabbed a seat at the bar. They have a vibrant lively happy hour going on. Bartenders are friendly and efficient. The margaritas at way too tart for me but I had a glass of rosé vino verde which I have never seen. Bartender suggested my husband have the mussels with a side of bacon which of course he did and he loved it! I had the mushroom enchiladas and they were just a little spicy and the mushroom were cooked perfectly. Was a huge plate so I brought half home. The other bartender suggested that my husband bring the leftover mussel broth home and of course we did and he had it with some cooked shrimp the next day. This was our second time at Santo and we had a great lunch ! One of us had the Calabacitas burrito and the other had the pork burrito and they were very tasty, even without the sauce. The margarita was excellent too! We sat outside and we had to go up to put our order in at the bar, I'm assuming due to Covid staff shortages. Service was very good. Heard good things about this place. Starters were good besides having to get a temperature check at the Dinner table, and being told to wear a mask to place an order with the sassy waitress. Food was great, just seemed like everything was sweet, the salsa, queso, guacamole etc. I would of given this place a 4 Star review If the waitress wasn't so B*tchy to my Sister in law over an extra to go lid... It wasn't like it was cheap food, and they like to tell you about the additional 2% kitchen staff charge after your total bill comes... I think it is bad business to charge you extra for something the owner should be paying out of his over priced food profits, and should have been disclosed upon arrival. One visit and I love it! Very delicious, fabulous flavors. Great service, not intrusive. Fantastic attention to food allergies! I ordered the Short Rib from the new menu, and I have to say, it was cooked absolutely perfectly, no need for a knife, moist and tasty even without the sauce. I wasn't a total fan of their bbq sauce, it was way outshone by just the quality of the meat. I decided against the grits it normally comes with because I'm not a big fan. I have really mixed feelings about this place. We've been here twice -- first when it just opened, and mostly recently, just last night. Can't say that the experience improves over time. Actually, it's the opposite. This time, our evening began with a head-to-head battle. We wanted the Navajo fry bread, Blue corn enchiladas, and Crispy folded tacos. And just a beer. No cocktails, please. Simple, no? But then our waitress countered with a rapid machine gun fire of upselling. Really, no cocktails? What about our Pork special? Salad to go with? Avocado on your tacos? Avocado on the enchiladas? Extra enchilada? Extra mushrooms on the enchilada? Good god. Have you ever gone to battle with the waitstaff? Thoroughly offputting. Felt like we had to defend our choices. And while you will most likely win, you will feel bludgeoned and shamed for wanting what you want. Note: Menu entrees range in price from $16 (crispy folded tacos) to $35 (lamb neck). Seemed like they were trying to push their more expensive menu items. But what if you just want the $16 taco plate (which was tasty)? Or the $18 enchilada plate (which was most definitely not)? On that note, about the food: It's mostly decent. I highly recommend the Navajo fry bread in its latest incarnation. On a previous visit, we liked the half chicken and king salmon (though you can get a better version of these at Oak at Fourteenth, shrug). The crispy tacos (with pork and/or veggies) are great. Some may like the beef tongue (codename: bison lengua), but it was not for me. Too gamey and chewy. Like you're chewing on a... tongue. Enchiladas were a semi-organized but crowded mass (or mess?) of food on a plate. Missing key flavors and very unmemorable. Gotta be honest, it made us miss the simple, low-key enchiladas at Oskar Blues. And the dessert: Really hit or miss. Apple and green chile pie? Solid miss. It was much too soft and more like a cobbler. The surface of the pie was oatmeal-like. Would have much preferred a well-executed slice of regular good ol' apple pie with their Fantastic green chile cheesecake ice cream on the side. Tip: Stick with their ice cream. Pleasant atmosphere. Bonus points for opening up an outdoor patio. And while I'm generally a fan of Chef/Owner Hosea, sorry to say that we're just Not up for another round of this. read more

My first time at Santo was for Saturday Brunch. The environment was great and I loved the natural light (good lighting for pictures!). I had the Brioche French Toast and my mom had the Taoseño Omelette. The French Toast was good and the strawberries added an extra sweetness 7.5/10. My mom loved the Omelette and she would order it again 8.5/10! Being from the border of NM i get super excited to try takes on NM food. To start out I will first say the service was outstanding! We ordered a couple different margs and also tried a mescal drink and the drinks were what I would expect from a higher end spot. I wasn't blown away but there were good. As an app we had the queso fundido and pretty sure it was the best i've maybe ever had. The sunflower seeds in there threw me off a little but it was still awesome! I suggested maybe piñon would be better. For the food we tried the mole, the enchiladas christmas style (nm of course) and the lamb belly tacos. The enchiladas with the red chile were much better than the green and the tacos were outstanding! The mole was not really mole to me and i couldn't in good faith recommend that to my friends. I definitely want to go back and try a few more things and for that red chile! read more

I was convinced that this restaurant location was cursed after I watched a couple restaurants go in and out fairly quickly, but I believe Santo has broken the curse. I love New Mexico, especially the Santa Fe/Taos area. The draw of the red chile...I'm so happy to have found a place that has brought the magic of New Mexico to us. The atmosphere and decor is really great and the food is outstanding. The Red Chile Posole is my favorite menu item (add the duck egg, yum), with the enchiladas being a close second. You wouldn't think pickled veggies would belong with an enchilada, but it's one of my favorite components of the dish. The beans are a bit too smoky for my taste, but if you dig it, don't pass up on the black beans. The only less than positive thing I have to say (and this might just be the nature of chile), is that the heat can vary, so beware. I had the posole dish a couple of weeks ago and again recently and it differed in heat. They start brunch in a few weeks! read more

I'm smitten. Chef Hoses Rosenberg has again captured the attention of my taste buds with his newest restaurant venture in Boulder. Although I'm not a lover of the cuisine from his native New Mexico, I really appreciate how he has brought his modernized take to Boulder. Organic, locally sourced ingredients and a generous amount of spice throughout most dishes. Without a doubt, my two favorite items are the Wood Oven Queso and the Red Chile Posole. The sparse yet warm décor remind me of the stunning adobes of the North; it is a pleasure to eat in that inviting atmosphere. Take a moment to play interior design tourist: plenty of not-so-hidden items (like the bar's lighting fixture in the shape of the Zia symbol for the sun) to discover. Oh... you will also appreciate their breakfast burrito offerings Monday through Friday on the patio. When I visit in the morning, I like to rename the restaurant "Secreto." Update 10/27/2018: Went back for brunch again today, a Saturday around 11:30am. 3 out of the 4 plates my group ordered were nearly cold (my friend said she saw around 15 plates sitting under their kitchen heat lamps,) most of our food was bland, lacked seasoning, and took forever to come out. Our waiter was friendly, but disappeared on multiple occasions (it took 20 minutes before he even took our order) and other waiters ended up coming over to pick up the slack toward the end of the meal. It wasn't even a full house! It was definitely a more enjoyable experience when they first launched their brunch menu. Disappointed and underwhelmed with this place and likely won't be back anytime soon. P.S. When are fine dining establishments going to start putting more love and thought into their coffee program? Ozo's coffee sucks and has grasped Boulder's local businesses by the balls. I don't understand it. Very legit New Mexican cuisine. You can actually get dishes served 'Christmas Style' here, with insanely rich and delicious sauces. The guacamole is the best in town. Options for take-out and dine-in (on the patio) during COVID times which is awesome. Drinks/cocktails are also absolutely delectable. They even provide hand sanitizer at the table which is awesome. Further, you have the choice to order using an online platform (as contactless as it gets) or ordering inside. I give the management big props for considering their employee's safety, as well as their customers-a job well done! While prices are on the higher end for Mexican food, it is justified by the incredible food. Would highly recommend for anyone looking for authentic NM cuisine. read more

Santo is the new Boulder spot for sure. We are fans. We just got back from Santa Fe and loaded up on authentic NM stye cuisine and this was even better (Chef Hosea is from NM, so makes sense.) We had heard of some not-so-great hostess and waiter service leading up to our first time and I can honestly say that they must have fixed some internal issues early on, because we had a very memorable experience from start to finish. The interior is cozy and sophisticated (for being in a strip mall) and some of the touches, like the New Mexico flag branded as the chandelier was insanely cool. Good "sit at the bar" spot too if that's your sorta thing or are traveling alone on a business trip but want a lively Boulder dining experience. As for Apps, our table ordered almost all of them: The guac was on the small side but very satisfying - but the QUESO was unreal. As someone who really dislikes anything with goat cheese, it still knocked my socks off. I recommend sharing this with a table for a filling app. The chile rellenos were a bit disappointing I will say - the breading made them almost flavorless and the cheddar filling was very "meh." I would go back for just apps and margs alone. For entrees, we ordered multiple things and shared. Our favorite BY FAR was the Wood Oven Half Chicken. We also loved the Red Chile Posole - it was so hearty and had great textures. Believe it or not, the Enchiladas (chicken) were the least memorable for us all. They were good... but other items were just better and stood out more. UPDATE per my second visit: Happy Hour: Decent food options and great drink deals. The Chicken and Pork Tacos, as well as the Frito pie are UNREAL! Very well done. However, I felt like my Happy Hour drinks were watered down... not sure about that. Also, our waiter forgot our 2nd order we placed completely - we had to remind her 25 minutes later. No apology or making it right on our bill. Customer service felt pretty weak in that moment. Breakfast Burrito Review: Good, but Centro's still win best BB in town by a landslide. No competition. All in all, congrats Santo for making a strip mall a great destination! It's been a long time since I've raved while leaving a restaurant. Leaving Santo, I raved, I gushed, I already cannot wait to return. The atmosphere is just okay-there are certainly warmer, more welcoming interiors, but the FOOD, my god the food!. The service was excellent- our waiter gave us informative recommendations and it is always appreciated when we are asked up-front about dietary restrictions. Our cocktails were very nice, the Taoseño in particular was interesting and refreshing. We started with the queso, which was delicious. I loved the pepper jelly and the pepitas, which really elevated the dish, although I do think if it was cooked in a deeper bowl so that there was more of the gooey interior and less of the crispy broiled sides/top I would have liked it even more. My husband ordered the burger and absolutely loved it. The one complaint about the entire meal is that we both really hated the tater tots that are served as a side. All it tasted of was fried breading-you could not taste potato at all. It was like empty balls of fried nothing and they were left uneaten so I recommend substituting these for another side. With that in mind, I am still giving Santo 5 stars because everything else was really that good. My vegetarian enchiladas (Christmas style with both red and green sauce) were outstanding! The winter vegetables went so well with the dish and provided a lovely brightness underneath the sauce and also some texture. The sauces must take forever to cook because the depth of flavor achieved in both the red and the green was sheer perfection. Please don't ever change this dish-it is heavenly. The black beans served on the side were also incredible-the amount of smokiness in them was wonderful and they were addictive-I wish the portion was larger because I was scraping the bowl for more! This was definitely the best meal we've had in Colorado and I cannot wait to return to try more of the menu. read more

My husband and I love NM food. One of our favorite restaurants is "The Shed" in Santa Fe, NM. We were excited to try a NM restaurant closer to home and finally made it to Santo. We loved the appetizer, salmon tostada. It was very fresh. I had the posole as a main dish. It lacked the intense flavor of the roasted peppers. It just needed a flavor kick and was underseasoned. My husband had the chicken enchiladas with Xmas sauce. He rated his red sauce a 5 out of 10 and mentioned that his green sauce was pretty much flavorless. We will definitely return, but probably just sit at the bar for drinks and appetizers (it was hard to get the attention of our waiter, maybe new?). The atmosphere and decoration of the restaurant are very nice. read more

THE BEST BREAKFAST IN BOULDER! Hosea is a master chef going on culinary genius. Have been multiple times for their weekend brunch and have recommended everyone that visits go here no matter what. You start your meal with coffee that is so good it reminds me of the coffee I drank while living in Costa Rica, this coffee is so good that I drink it black with no sugar. Then if you have been fasting in preparation for this meal try the green chili biscuits, with chorizo gravy. I go to school in the south and I can tell you this is one of my favorite renditions on biscuits and gravy. The main course is where this place sets its self apart. The best and most unique item on the menu is the blue corn grits with a "90 minute" egg and I always add pork belly. This dish comes with grits that would make any southerner croon over and the pork belly is blackbelly butchered and is cooked and sliced to perfection. The egg wraps up the whole dish with the perfect balance of runny gooey yolk and firm and textured white. If grits are not your thing that is fine because everything is delicious and if you are feeling adventurous try the duck egg. read more
