Their pho was good, big portion and full of meat. Unfortunately the sirloin was overcooked and the other parts of the meat have too much fats in them, so it was down on the score. Their shaking beef was also meh, very thin and overly sweet, probably not their strongest dish. Banh xeo was full of meat and fillings, but not particularly crispy. I was a big fan of this place when it first opened and used to rave about their pho. Unfortunately, my visit on 5/2 was a huge letdown. From the moment I walked in, the service began with a bad start. The staff were chatting and joking behind the counter and too distracted to notice me. I had to grab a menu myself and ask in a loud tone if I could sit anywhere just to get their attention. Once seated, it took nearly 10 minutes for a server to come by. I ordered a boba drink and pho with brisket. The server returned after another 8 minutes to say they were out of both the boba flavor I wanted and the brisket. After I reordered, the replacement boba arrived extremely sweet -- basically tasted like watered-down sugar syrup with almost no tea flavor. The pho was even more disappointing.. the broth was watery and bland, there was very little beef, and the bowl was light on noodles and toppings. It felt like a shadow of what they used to serve. It's sad to see a spot that was once one of the best pho places in Salinas (in my opinion) decline this sharply. The restaurant was unusually empty, and the few other customers looked just as unimpressed. I understand rising food and restaurant operating costs, but cutting quality this much will only drive more people away. 8.7/10 Food was great!!! Started with the spring rolls not the most perfectly wrapped and a little light on the shrimp, but still fresh and tasty. The dipping sauce wasn't bad either, and I'd definitely order them again. The pho was delicious! The noodles came out a bit clumped together at first, but once broken up the flavor was spot on and every bite was worth it. The real highlight, though, was the chicken bánh mì warm toasted bun, perfectly grilled chicken, crisp veggies, and just the right kick of spice. A must-try! Service was fast and efficient with a great waitress. The space is big, lively, and even though it was fairly busy, everything came out quickly. Coming from the Bay with tons of pho choices, this one was a little disappointing. Our party all got pho, the broth was on the sweet side and lack of flavors. Definitely the sweetest broth I've ever had, in a bad way. The beef in the soup was kind of tough and chewy. Service was alright but they brought out all the noodles and never brought the appetizer shrimp spring rolls. I had to go ask them at the counter. Came here for some pho after a long workweek, and the Medium #2 (rare steak pho) totally hit the spot - absolute comfort food! I also tried their "new" garlic pork spring rolls and they were BOMB! Topped it all off with a taro boba shake to satisfy my sweet tooth :) The pho here is so good, a fellow customer approached me at my table asking what I ordered - because it looked delicious - so she could order it too! I didn't even add any condiments; the broth is so flavorful on its own, the rice noodles perfectly al dente, the beef tender and savory, with onions, cilantro, sprouts, basil and jalapeños to round out the dish. The restaurant is cozy with plenty of seating, and the staff are friendly and attentive. They also have bánh mì sandwiches, noodle & rice plates, and other variations of soup. Coming from the Bay Area, we have a lot of pho restaurants to choose from that are much better, so if you're also from the Bay you might be disappointed here too. I used to order here once a week ever since we moved to Salinas, but we slowed it down due to errors and just QOS. Such as my order will be ready 15-25 mins but done in 45mins. No Jalapenos except 1 but they all have it. No rice & salad on one dish and asked for extra meat (charge more if need to), but come home with rice & salad and small amount of meat. This is on going. This used to be our go to noodle spot. Mannnn was this a fall from grace. We came back after trying them out after the obvious new ownership. The shaking beef had hardly any beef (as you see I haven't taken a single bite of it yet) and it's a new recipe that they are serving up. It used to be thin tender slices now big hunks they were soft just so so different. My hubby had the same but over garlic noodles that were so thick and oily it was inedible. His stomach is bothering him this morning. Literally the best part of the meal was the egg roll. The chicken wings were fried rubber.. Like I took one bite spit it out and threw the others out. A bit later we got our food and we didn't get checked on until the very end where we were trying to get their attention for the bill and some boxes but we had to go up in order for them to bring the bill which was a little underwhelming way to end a great meal. Hmmm... food quality definitely went down! I used to order the shaking beef garlic noodle all the time. They change the beef quality. It taste like fake airy tofu meat. I was VERY very disappointed when I got home to eat. Also, I did a phone order and clearly said fried chicken. When I got home, I opened the container and it was grilled chicken. WTF! The last few times I've gone in the past months my orders aren't as good as I remember. It feels like they are cutting corners. The last straw for me was when I found a piece of metal string from a scrub sponge in my garlic noodles. Threw the whole thing away! The pho isnt as flavorful anymore, the food isn't cooked properly sometimes. The noodles are sometimes undercooked or the veggies are kinda raw and just the overall flavor in all the dishes I usually order are lacking.
