Moab is pretty small, and as such, there aren't a whole lot of restaurants there. It's also in the middle of the dry and arid west, so It's not necessarily a place you'd peg for good sushi. However, this place is the real deal. Like the town, the restaurant itself is pretty small, and there was a line of people waiting outside for it to open, so as usual these days, promptness and patience are key. The maze roll was unique and tasty, while the nigiri was all fresh and adequately portioned. We tried the southwest edamame, which was a little spicy, but not too much for the spice averse. It's not the best edamame I've ever had (that honor belongs to truffle edamame) but it was different than the standard sea salt variety, which we liked. The service was a bit slow, but they were busy in house, and also with take out orders, so I'm not holding that against them. You've got limited options in Moab, but this place is a good choice for fish in the desert. read more

When I first dined at Sabaku it was really delicious. However, as a return customer, I can see some changes in the Sushi. Not as nice as it used to be and definitely not as tasty and way overpriced. We've been in for sushi every time we've visited Moab (3 times) and every time the sushi is good. We even scored oysters once. Service is friendly. But they are SLOW. They had our order for nearly an hour before we saw any food this time. This is not unusual for us to experience. Wish they were more efficient because the sushi is really great. read more

Underwhelming and overpriced. We got 2 appetizers and 2 rolls and the total was like $75, and we're still hungry when we left. My tempura veggies were literally dumped out frozen sweet potato fries, and lightly tempura fried. The flavor of the sushi was bland and it took forever to come out. Yes our bill was almost $100, just the three of us, light dinner, no drinks. But you're paying for upscale quality here. A lot of thoughts were even put into decorating the bathroom! I had no doubt my food would be top notch. Sabaku's menu has a few surprises with items I've never seen offered back home. I had to ask if the "Spicy raw kelp noodle salad" was like "zucchini pasta" or an actual noodle dish. The answer is it's more like the former, i.e. no carb. It's basically Kelp (some sort of algae) sliced really thin to create that magically crunchy bite. Topped with macadamia nut sprinkles, this is one refreshing dish you're unlikely to find very often elsewhere, I highly recommend it! Edamame was standard but I also see they offer a spicy version. The night's special was some sort of wild caught salmon (I forgot where she said it was caught at), in either Sushi Roll or Sashimi form. We had the roll, it was quite good. Later we also asked for the Sear Salmon entrée, which I'm not sure if they used the special salmon. But it didn't matter as the thick piece of fish was perfectly seared, with a nice crust but still a bit raw in the center, a hint of sweet chili sauce made it even better! It sat prettily on top of a bed of grilled vegetables. A simple but satisfying dinner. Two other rolls we got were: - The Maze (Tempura green onion and crab, topped with albacore, ginger serrano sauce and tobiko). Never had tempura green onion before and the distinctive taste really shines through in this creative roll! - White Rim (Tempura shrimp, cucumber and avocado, topped with tuna, eel, eel sauce and sesame seeds). Very fresh ingredients. There's not a lot of sauces on Sabaku's sushi, they prefer to let the ingredients take center stage In the end I had the Ginger Beer Float for dessert (it's on the dessert menu, not the beverage. But for the leftover ginger beer not fitting inside the glass, they'll bring the bottle out for you to enjoy; check out my picture!) Again, never found such a thing at any other Japanese restaurants I've been to before. Not sure if the Ginger Beer was locally made but it has an awesome label on the bottle and tasted pretty interesting. Makes for a nice contrast from the (great) vanilla ice cream. We were really craving for fried rice, too bad it wasn't offered here. If the owner is reading this, I hope you consider having such a standard dish but putting the Sabaku touch on it. Hear me out. I realize that Moab does not really scream sushi. But they get their fish 3x a week from Hawaii, and this place is excellent for the price point. - Fish is super, super fresh. I had a pretty decent amount of sashimi and wish I'd ordered more!! - Rice. This gets an incomplete because there was about an hour lag from "getting the sushi" to "eating the sushi." But even an hour later it certainly wasn't terrible. - Rolls. We ordered the Delicate Arch, Rainbow, and Sunshine. I didn't love the first (thought the ratio of "krab" to tuna and salmon was very off; would have wanted twice as much tun and salmon and half as much "krab"), but the other two were great. - COVID. Really dealing with this sensibly and carefully. Great, streamlined pickup. Strongly, strongly recommend if you're feeling like something tasty and healthy when you're down in Moab!! read more

This is quite the popular place for dinner! Fresh fish sounds about right! Wait time was about 15 minutes. Each sushi dish that we ordered was right around the $12-$15 range. All the house speciality rolls were named after all the famous arches...very fitting. However being that the arches were an orange based color on a sunset and sunrise I was expecting more of the salmon throughout the rolls but was only found in a couple. With that being said we ordered the following: Delicate Roll: a mix of tuna, salmon, crab and avocado rolled in a rice less wrap of cucumber topped with onion ponzu. This was a delicious delicate roll! $15 2 Spider rolls: this is a traditional maki sushi. Fried soft shell crab with sprouts, avocado, cucumber, spicy mayo, eel sauce sprinkled with sesame seeds. An all time favorite. $9 each. Shrimp Tempura Plate: comes with 3 fried shrimp tempura with a mound of speckled sesame seed rice, and eel sauce. This was a bit disappointing for the price especially when it comes with rice. Should have subbed it with at least 3 more shrimp tempura. This is a typical appetizer muncher. $7 Surf and turf roll: this is up to the chef. You just tell the server what kind of taste you're looking for. For me I went with the sweet, savory and citrus notes! Seared elk....yes I did write elk is placed on top of the freestyle roll. I essentially had tempura shrimp and cucumber with the tuna and thin slices of seared elk on top with a ginger Serrano to decorate the roll and lemon bits to competent the roll. Very tasty! If you're not into the whole elk idea then you can easily remove it. You'd be surprised with how it tastes! $15 The server and the Service was great! I wish I could say it was good. Our server was great, as were all the runners. But . . . Miso soup? Watery and lacking substance. E dame? Way over salted. Drinks? Over-priced. Hamachi? Thinnest ever and not close to firm. Spider roll? No substance, is there really crab? And avocado? I get that we're in a tourist town . . . Far from the ocean . . . in Utah, but if you're going to call yourself a Japanese restaurant you need to do it better than this. Not a good experience overall. The sake nigiri was not melt in your mouth buttery. The soft shell crab had a bitter taste to it, and to top it off my waitress didn't check on me/ask how everything was til the end. Very expensive, definitely not $$, rather call it $$$. Mandatory 20% tip with no service, so you can add 20% to the price directly, a sushi roll is $20 for 6 pieces after that. Noodles is not Japanese style at all, with big chunks of chicken tasted like wood. The sushi is also quite common, no special flavor, not worth the visit. Let me start with the positives: the waitress was very nice, the squid seaweed appetizer was fairly good My dissatisfactions are -The host seemed to be seating people at random. People would just show up and get seated before me after I already put my name down - Whatever came out as the "udon" cannot be called udon. Neither the noodles, broth, toppings can be considered udon. I think it was just some type of spaghetti noodles thrown into some beef broth - The 2 sushi rolls I had were below average at best. I may be harsh living in LA for ten years and just having visited Japan this past year, but I feel no sushi chef would approve of the rolls. Something was off with the rice, whatever sauce was used didn't really compliment the fish, and they were just really small for the price - I've never seen a bill where it was handwritten the total "if" I were to tip 20% Is this something unique to this restaurant? As someone who lives on the Gulf Coast, I avoid eating seafood in landlocked states, but the bartender at Moab Garage's Parlor bar strongly recommended we eat here. The sushi was actually VERY good. I'm told they fly in fresh seafood from Hawaii every single day they are open. Service was nice. But the food itself is overpriced for what it is. 1. The sushi rolls were ok. Not bad but nothing special. 2. Poke bowl was pricy - $14 for only a few pieces of fish. 3. Udon noddles were the worst that I've ever had. Noddles were basically soaked in a bowl of soy sauce. They were too salty to eat and we had to ask for a bowl of water to dilute them. I wouldn't recommend this restaurant but if you really want Japanese food in this small town this is probably the only option you have. read more

Turns out, once seated 1 hour and 20 minutes later by the unfriendly hostess, that it takes 10 minutes to be acknowledged once seated, another 20 minutes for an alcoholic beverage and then another hour for the sushi to arrive. Eating fresh sushi at a small town in the middle of desert, how cool is that. It's been13 yrs since my last visit to MOAB. The development of this desert town really surprised me. It turned into such a nice trendy town full of vibe. The sushi place is quite popular, almost totally packed at dinner time. The waitress is quite nice and professional. Since we're sitting at outdoor table, it's less attentive than the indoors but still got good service and our water got refilled in time. Sake sampler is excellent. They got some unique flavored sake like lemon grass. It might sounds weird but actually very pleasant. All the dishes are fresh and well executed, which is quite a surprise for me honestly. From the seaweed salad, to seared beef appetizer, to the sushi rolls we ordered, all in good quality and delicious. The meat is juicy and tender, the raw fish is fresh and nicely flavored. They even have a gluten free sushi roll made of cucumber and tuna. A few minor things to improve, though. The gluten free roll is quite spicy, which it should be stated on the menu. For steak with garlic and black truffle roll, the black truffle oil was quite overpowering and does not really fit the whole flavor. The bill was not cheap, about $100 for us three adult and one child. Considering we're in the middle of the dessert, it's reasonable I'd say. Now here is a fun thing. While we were waiting for the bill, a staff went out to the parking lot at the back. When she came back and passed us, we smelled very strong earthy scent...we all know what it is. We don't feel offensive since we're Ok with it. We just thought, it must be quite stressful there in the kitchen at rush hours. read more

If this was any other sushi bar in an urban area, I would rate Sabaku two stars without batting an eye. However, as with all my dining experiences, I take into consideration the context and location of the business. Since fresh fish is difficult to come by when you are in a barren area of land with no oceans in sight, I commend Sabaku Sushi for opening shop in Moab. And not only that, Sabaku is quite successful with a loyal following. The locals say that the fish is flown in fresh from Hawaii almost daily (which is why Sabaku is closed on Mondays because there is no mail service on Sundays). This restaurant is dedicated to providing quality cuts. For a resort town in the middle of a desert, the sushi is not terrible. It's definitely more expensive than average sushi places but that's because fresh fish is a luxury here. If you come with the expectation that your meal will be acceptable but pricey, then you will leave satisfied. Sabaku offers Happy Hour from 5-6, which I highly recommend if you want to dine here but have reservations about racking up a large bill. The sushi rolls are discounted (not half price but still cheaper than regular prices). They're rather stingy with the time so don't expect any leniency if you're a few minutes past 6. Sabaku is one of the hipper and more modern restaurants in Moab but I found the service lacking and inattentive. My boyfriend and I arrived 10 minutes before HH ended. We managed to quickly decide on a few rolls. HAPPY HOUR ROLLS: *Tempura Shrimp Roll *Sake Maki - essentially a salmon roll *Hidden Valley - fried apples, mango, avocado, macadamia nuts and sweet sauce We also ordered a bottle of Asahi and Lev Black Lion. We hoped the three HH rolls would partially fill us up but we were still starving so we ordered two more rolls (it was no longer HH). REGULAR ROLLS: *White Rim - tempura shrimp, cucumber and avocado, topped with tuna, eel, eel sauce and sesame seeds *Delicate Arch - rice-less roll with crab, tuna, salmon and avocado rolled in a cucumber, topped with onion ponzu After finishing those two rolls, we were STILL hungry so we decided to try their salmon nigiri, which was disappointing because it didn't taste like salmon at all. Unfortunately, none of the rolls were noteworthy or particularly tasty. The rice was pretty hard, although they're fair with the fish to rice ratio. However, the rolls themselves are on the daintier side (be mindful of this if you're famished and just completed a day hiking in Arches or Canyonlands). The fish tasted alright but I couldn't have guessed it was flown in fresh from Hawaii. In fact, the texture was a bit funky and the color of the eel was oddly lighter than what I've ever had. After finishing the nigiri, we were sadly still not quite full, but we weren't going to throw more money away on disappointing sushi. So, we paid and went to get gelato instead. This is a surprisingly good sushi restaurant. I enjoyed everything we ordered but I particularly liked the ELK TATAKI which is not really a common sushi menu item when you think about it. Moab is a small town near Arches National Park and has limited quality spots for grubbing which Sabaku happens to hit the mark. The fish smells and tastes fresh which is crazy since the area it's located in is like a desert. My guess is they get their catch from the Salt Lake up north. I would definitely come back here again if I go to Arches National Park once more. Our server was also extremely attentive until the end when some party called in and arrived 5 minutes to close and took their sweet time ordering and wouldn't let our server go to attend to other matters like say my table that required the check. It wasn't our servers fault but the pretentious customers who lack the common decency to get things done in a timely and rapid manner especially when it's already 30 minutes pass closing time. C'mon...Who do you think you guys are? Anyway, good sushi considering the location. read more
