The atmosphere was one of my favorite parts--great lounge-style music and a relaxed, laid-back vibe. The service isn't the fastest, but it works and fits the pace of the restaurant. We ordered the Rainbow Bridge Roll, Spicy Yellowtail Cut Roll, and Shrimp Tempura Roll. The shrimp tempura was my favorite because of its delicious crunch, while the spicy yellowtail had a nice kick. The rolls were fresh and tasty, though they were a little on the lighter side, so if you're really hungry you may want to order extra food. Good food but terrible service. Looks like this place is for locals only. Tourists get ignored. We made a reservation and arrived on time. Waited about 5 minutes to get seated - not a big deal. After that we got forgotten. After 10 minutes we reminded the hostess about our existence and finally got menus. Waitress was simply ignoring us - people who came to the restaurant after us got immediate attention. More than 20 min after we got seated i went across the restaurant, found the waitress and asked her to come to our table. The food is excellent, but service was a disaster which ruined our entire experience. Would not recommend. We spent lot of money to leave hungry. We had planned to ordered an entire second round of food and dessert, but our server disappeared after basically throwing our order at us. There are maybe 10 tables in the entire place, so this was an impressive disappearing act during the height of dinner service. The staff worked together well which is always nice to see. I can't speak about the inside because I didn't see it. From there we were able to watch the magic happen as each sushi chef concentrated on their specialty - sashimi, rolls, nigiri and other amazing looking foods. We ordered the cucumber salad, half dozen oysters, a couple of their specialty rolls and their large sashimi, a Sapporo and their non alcoholic coco loco cocktail. Everything was super fresh, with new combinations of fish and added sauces or additions that enhanced the flavor of the seafood. For the quality we felt it was a good value, the prices were very reasonable for what we got. The restaurant has a good amount of seating and nice interior. We were expecting some life altering sushi but instead were met with the acrid odor of fish when we opened the boxes. This is a very small restaurant right in downtown that takes both walk-ins and limited reservations (highly recommend if you can get one, as they do get busy). They have a decent list of house specialty rolls, creatively named after well-known spots in Moab, as well as traditional rolls, nigiri, & sashimi, plus a great list of vegan-friendly options! I ordered a beer, some salmon nigiri and a yellowtail roll. Beer was fine, bottled. The salmon itself was good but was served on dry, stale rice with a stale wasabi. Yellowtail roll contained very little actual yellowtail so I was left with mostly stale (and expensive) dried rice. It seemed like the roll had been made some time ago. The interior is small and intimate, a little dark but clean and welcoming. What makes them stand out? Sabaku flies in fresh fish several times a week. I mean, this stuff is FRESH. And absolutely delicious! We started out with hot Gekkeikan traditional sake ($10.00 for an 8 oz.) that was fantastic. We began our meal with House Salads (mixed greens, tomato, cucumber, carrots + house made ginger dressing, $6.00). The dressing was awesome, you'll love it if you like ginger! I wish I could take some home with me. For rolls, I chose a classic Philly Roll (salmon, avocado, red onion + cream cheese and topped with sesame seeds, $12.00). This was probably the best Philly Roll I have yet to eat. There was just the right amount of cream cheese, and the salmon was so smooth and soft like butter. My husband went for a specialty roll, the Poison Spider (fried soft shell crab, spicy mayo, cucumber + avocado topped with scallops, lemon and sriracha, $18.00). It was beautifully set. I admit the crab claws at the ends were a tad intimidating but it added to the presentation. I helped myself to a couple bites and agreed it was remarkable! They probably had the most interesting vegetarian and vegan roll selection that I've ever seen(and I've been to lots of sushi places). Don't take a chance on missing Sabaku Sushi.... make a reservation! It's not a too small place, but it's not a too large place, either, so .... make sure you get in. This was one of the best meals of our vacation! We ended up "winging" it, and ended up going for a walk around town for a while ....but then we got a text (they have a very cool tech system here) from the hostess and she got us in for a cancellation table. That was a nice touch of customer service. Also, we should tell you early that the prices are VERY reasonable! On to the food.... EVERYthing was fresh and bright and delicious. We never expected to get such fresh fish in the "boondocks". Ultimately, we had to talk ourselves out of ordering more and more, it was all so good. We started with Miso, which was delicate and lightly salty, not overly so, as we often experience. The California Roll was made of REAL crab, which is so seldom found anymore... especially away from coastal locations. The Unagi Maki was so much more interesting than the typical two-piece nigiri. We loved their Spicy Tuna Roll, double-loved their Spider Roll and their Rainbow Bridge! We also got the Tempura Shrimp Roll for "dessert".... see we couldn't stop ourselves! You must be full just reading about all this food! Well, we had hiked a LOT that day, and were ravenous! The crispy cold Asahi beers were the perfect thirst quenchers, too. This is the best sushi restaurant in all of Utah - maybe even the best I have ever had anywhere! The restaurant is a small space on a side street, just off Main Street. They take reservations for half the restaurant and walk-ins for the rest - mind you there are only about 12 tables plus the sushi bar. The hostess and server (owner's right hand she said) were excellent! We ordered the Wagyu Tataki which was presented beautifully and tasted amazing! We also ordered 5 rolls- White Rim (my fav), Castleton, Sunshine (2nd fav), Surf & Turf, and Delicate Arch. The fish was so fresh and melted in your mouth! The flavor combinations where perfect! Wow! Let me just say - I'm visiting from Santa Monica, CA and this had to be probably 1 of the Top Best Sushi I've ever had, and I've had plenty! A great variety to choose from, and i sat at the bar and watched them prepare the rolls, and they made them with perfection and great detail. The amount and taste was just mouth watering, i was full from my first two but they were so good i had to order another. The Pickled pear Margarita was delicious, it had a wonderful presentation and tasty delight with just the great amount of tequila. The front host staff, Sarah and the trainee were so welcoming, sweet and accommodating because if you don't have a reservation it can be a little bit of a wait so be prepared. Our server, Andy had just a smile on her and great attitude...she remembered every item you needed and wanted and all the substitutes. Plenty of parking, and great ambiance. The only bad thing i saw was the $1.00 surcharge for extra Eel Sauce which no sushi restaurant does, it's only complimentary to provide with no extra charge but it is what it is. Incredible quality! Everything we had was great. I've found of recent that the better a sushi place can do a basic roll, the better quality they are. I had a Philadelphia roll and it was probably the best I've ever had. Had some other spicy tuna type of roll and a spicy tuna hand roll and they were great also. Wife and I both had miso, it wasn't my favorite miso, but it was my wife's favorite. Wife had a Poison Spider and a spicy yellow tail roll, and she said hers was incredible also. We are from a smaller town in Florida where the sushi spots are just a tad cheaper than most places, and to us this did seem a bit high priced, but I gotta admit I just cannot complain when the quality is so high. We walked into this establishment around 5:45 and was asked by the hostess if we had a reservation. At that time, it appeared that the dining room was half empty. I asked if we needed one and was told that "it would help". She spent the next minute or so looking through her reservation book and told us that she MIGHT be able to seat us outside in 20 minutes or so. Did we want to wait? Her posture and body language were not what one would expect of a hostess. "It would help" who? It would have been appropriate to say that we're booked up with reservations. Did you prefer a table inside or outside? And then give us a reasonable time of seating so we could make an intelligent decision on whether to wait or not. We eat out quite frequently and can tell when people want our business and when they can't be bothered. I stepped outside to let the rest of my party make the decision. What a wonderful surprise! FRESH SUSHI in the "outskirts" of Utah! The menu had some signature items, and many of your favorites, We had so many things that we finally had to resist further temptation! The Rolls (Maki and Uramaki) were flavorful and lightly sauced (so many places over sauce everything.... not here!) The Nigiri are flawlessly presented, varied, and the ratio of fish-to-rice was just right! They have the best Japanese beers, which we love c-c-c-cold, to brighten up the sushi and replenish the nutrients we burned during our hike that day. Sabaku Sushi always seems to be hopping, so be sure and take advantage of their reservation system. We wanted to return for a second time during our stay in Moab, on a whim cuz' we liked it so much the first time, but were politely turned away because they were very well booked. They have an outdoor area that is shaded well enough so that you don't even realize that you're in the parking lot, so that kept it charming (and Covid-safe feeling). We had - seaweed salad: supermarket quality - cucumber sunomono: too much vinegar - delicate arch roll (tuna and salmon with avocado encased in cucumber): super mushy. Hard to pick up the roll with chopsticks given that cucumber is slippery to pick up. I have seen something similar with avocado on the outside with much better taste. - small portion (appetizer) portion of udon soup. This is worse than what I could make at home. Super salty soup. Chicken is chunky chicken slightly grilled. - New Zealand mussels with quail egg. Sounded exotic but the execution is poor. The diced mussels is done ceviche style with onion. And the quail egg just sits at the end. I had many Japanese shooters with quail egg. The taste has to be subtle so one can devour most of the shooter with the quail egg. Here the mussel concoction was too sour to do that. The dish just didn't make sense -trying a bit too hard. If you are Asian, you probably won't like this place...for ones who don't have Japanese food often, this may not be as bad as what I had perceived. read more

This place is an amazing find! Being born and raised in Hawaii, I have high standards for sushi. This place did not fail to surprise! The sushi is so fresh! I had their half and half salad which was seed weed salad and their squid salad. I never had squid salad and I was worried I wouldn't like it but I loved it even more than the seed weed salad. I also had their tofu that was perfect. I ended with two rolls. The class shrimp tempura which did not disappoint and the fiery furnace! Most balk at the idea of sushi in the desert. Just as with all other restaurants in big cities, the fish is flown in. This restaurant delivers consistently good service and better sushi than anywhere I've been in SLC. Instead of one or two cuts of fish being good out of a sashimi platter, every piece was clean, crisp, delicious even without soy sauce.
