Are your sinuses plugged worse than Rapunzel's shower drain? Eat here. I ordered the Spicy Beef and Noodles (med heat) and I haven't breathed this easily since I visited the desert. Beyond the sinus-clearing magic, the food is extremely flavorful and fresh. The broth in this dish is simply scrumptious. I also ordered the Scallion Pancake...wow, just wow! So crispy and sweet. Ruyi's flavors and spice level are very authentic relative to my past trip to China (Hangzhou). You can (and should!) specify spicy broth for any protein, including my long-researched favorite, Braised Spare Rib with the Hand-Pulled Noodles. This place is absolutely delicious. Completely worth a one hour trip to Madison. I had the beef noodle soup with hand pulled noodles. The beef was tender, and the broth was so flavorful. The portions were perfect, and very hefty. This is my first time having hand pulled noodles, I actually do not like the texture too much. I do think that this is a personal preference and not anything against the restaurant or the quality. Overall loved Ruyi! It's on state street near the University but we didn't have any issue finding (paid) parking. The staff was very nice and efficient, our food was ready right when I arrived for pick up. I had the cold noodle vegetable bowl, which was great for summer. The crunch of the peanuts and freshness of the herbs made it refreshing and delicious. My husband had the chicken udon noodle bowl and it was great as well. It was great that the components came packaged separately to keep the integrity of the dish. Both the BBQ pork buns and the sweet buns we tried were made of tasty pillowy dough. Order at the counter, grab a seat and wait for a hot steaming bowl of noodles to shortly arrive. On our last visit, I opted for the spicy beef with sliced noodles. Flavorwise, I thought the broth packed a great deep beef flavor with just enough heat to make my forehead bead with sweat. Packed with beef and noodles, this is a perfect cure to a cold blustery winter day. It could also be a great Sunday afternoon pick me up after a long Saturday night of drinking. Great. Bangin' noodles. I'd say they're ramen-style but I'm not sure if that's accurate. In any case, the noodles are tender with a pleasant gummy firmness and slightly sweet. They come in a delicious broth. I had the vegetable noodle (broccoli, bok choy, daikon radish) and loved it. There is some subtle sweetness to the broth, as well, with equally subtle spices. (I didn't recognize much but I'd guess anise and clove.) My 1.5-year-old ate it, so you know it must be good. We also had sweet buns (bao?) and they were all good. read more

Excellent pulled spicy beef noodle soup and spring rolls! The hand pulled noodles were delicious! I like extra spicy so I added a bit of chili oil, scallions and cilantro, which were on a condiment bar. The broth was spot on! The Xiao Long Bao are more like pork buns and have absolutely no soup, so that was a bit of a surprise when your expecting a nice moist pop and you get a soft poof! They were very good, just not true Xiao Long Bao. The staff is nice and the food fresh. Recommended highly! Lots of students so get there early before the rush! read more

Several friend recommended this place just a couple days after it opened. Hands down a great place in Madison for some Asian noodles! The owner is nice, welcoming and the overall environment is very clean. The restaurant is packed very quickly during a weekend peak lunchtime. I tried their Beef Hand-pulled noodle and was surprised by the taste. the soup is fresh, noodles are chewy and the meat is extremely tender. Madison's market for restaurants is certainly a very versatile and competitive one and I'm glad that we now have this new addition to State Street. If you like authentic Chinese food you HAVE to eat here, I cannot emphasize that enough. The roast duck hand pulled noodles were amazing, the noodles are springy and taste freshly made (you'll know what I mean when you eat them). The broth is mind-blowingly good, the roast duck has that crispy roast duck aroma, and the bok choy in there really balances out the dish. It was so good that my authentic Chinese food deprived soul almost cried when I ate that dish. Their Xiao Long Bao is actually mini-sized regular meat buns (like rou bao zi), so heads up for other Chinese people who grew up with that name referring to the thin-skinned soup filled steamed buns. Those buns were also amazing and I highly recommend ordering them too. The BBQ pork buns were good, but I don't think they were special enough for me to want to order them again. Bottom line: Eat here if you like authentic Chinese food! I'm sad I don't live in Madison because I know I'm going to dream about the food here. read more

I was in town for the weekend and wanted to try out different types of food, and I came across this gem. They make the noodles in house and have such an authentic feel. I would definitely recommend trying one of the hand tossed noodles (the braised short ribs was delicious). Also, one thousand percent suggest the soup dumplings. I went to Madison for work and had a free afternoon. I was craving for some spicy food and it looked like my choices were a Nepali restaurant and Ruyi. I chose Ruyi and was rewarded! It looks like a mess or hall so as long as one is prepared, there is nothing wrong with the ambiance. I got the rice noodle broth with lamb and requested the highest spice level. It was DELICIOUS! The broth was fragrant, the meat was tender and the noodles fresh. None of the vegetables were over cooked! Servers were sweet and friendly (you have to order at the counter) and then they bring the food to you. The portions were huge so I would recommend either for dinner or a split lunch. read more

This is a new restaurant that has taken Madison by storm. I have gone here twice and both times, the place has been packed, and rightfully so. The menu mirrors Chen's Dumpling House and is a strong competitor. Just like Chen's, I am not a fan of the "soup dumplings" they sell. Both of these places have very thick bao-like skin with no soup within the dumplings, which is not the traditional thin-skinned slurp-worthy dumplings I think of. However, I am a huge fan of the hand-pulled noodles here. Both times I have had the spicy beef and regular beef noodles. The broth here is amazing! Heavenly, warm and filling. The beef slices are tender and generous. The portions are generous and I enjoy being able to add however much green onion and cilantro as I want. The second time we came, the bowls were only half filled with broth though, so I hope they are not cutting down on it, because it is the best part. I've been wanting to try Ruyi's for a while now so a Yelp elite event provided the perfect opportunity! I got the beef tendon hand pulled noodles to go and received a complimentary side of sweet rolls. The noodles were packaged separately from the soup base which was superb as the noodles didn't suffer from getting soggy in transport. The noodles were delicious and you could tell they were freshly hand made! The al dente, chewy, firm to bite texture of the noodles were spot on. The soup itself was very flavorful and filled with baby bok choy veggies and beef tendon. Next time I will have to try the spicy beef as I'm a fan of a little spice :). The sweet steamed buns were a nice addition but compared to others I've had I would say they were average. I would have liked more filling to bun ratio. Favorite was the taro bun by far. The matcha one contained matcha paste that was quite floral tasting and included boba pearls which was strange and unfortunately added an off-putting texture. My partner also tried the bbq pork buns which he loved. Overall, would definitely come here again for the authentic hand pulled noodles!! read more

Okay so my friend and I ordered for pick up and this shit is fucking fire. Our order was ready 15 minutes after we placed it and we had ordered two spicy beef noodles, dumplings, and scallion pancakes. The noodles hit the spot- especially with the cold winter weather. The dumplings were soft and flavorful. The scallion pancakes were still nice and crispy even though fried foods tend to get soggy when ordering to go. During the COVID-19 season, we ordered take-out, which comes with a container of beef and soup that's separate from the hand-pulled noodles. As a result, the noodles were a little stuck together by the time we arrived home and combined them. However, upon eating the first bite after mixing the soup and noodles, I was reminded why these foods go so well together! Ruyi's was quite generous in its portions of beef, which were soft, juicy, and flavorful. I thought the noodle to beef ratio was great, giving me a well-rounded eating experience from beginning to end. I also ordered the spicy beef noodles which mirrored the quality of the regular beef noodles--keep in mind though that the hot oil used to create the spiciness may be a little overwhelming to a semi-health-conscious individual who likes to drink the soup.
