Okay wow a spot I've driven by multiple times but finally made the time to go to! I loved the vibe at Taigu and it was obviously a popular spot to the Middleton community. While they were busy, the service was so friendly and smiley- it made for such a fun time. Although they were busy, through a quick smile and usher to a table, somehow my sister and I were convinced to sit at a table with two other customers. While it was odd sitting at a table enough for six people with two strangers, we felt comfortable enough to have our own separate conversations because of the hustle and bustle around us. We ordered a plate of the housemade cat ear noodle four color vegetable. The vegetables could've been cooked through a bit more but their sauce was perfect for the dish and the noodle texture complimented the rest of the dish. We did think there might've been a higher ratio of noodle to vegetable which made for a heavier meal, so balancing those two could've been nicer. I've been a big fan of Taigu for years, I have no idea why it took me so long to review. I am OBSESSED with the dandan noodles - the spices and peanuts make the perfect flavors. I've had them both cold and warm, and you can't go wrong with either! I do prefer warm, just because I like my food hot, but I was surprised by how much I still enjoyed the cold. If you order from here, you will get at least 3 meals out of it! SO many noodles, it's incredible. If you do opt for an appetizer though, I highly suggest the scallion pancakes. YUM! There were a couple of take outs in the counter. Spicy ginger beef cat ear noodles was my favorite item here. Beef was vary flavorful. Pasta was soft and fluffy. It is slightly oily though. Yesterday our group made a return visit to TAIGU for lunch. They have scrapped the lunch menu I t was confusing for the staff to have two menus. Then we ordered. Two people were served right away. My friends came down to visit me in Chicago and kept telling me how amazing this noodle spot in Middleton is. I told them I would try it the next time I came up to the Madison area, and that's exactly what I did. Parking wasn't a problem as there are spots out front and along the street. Ambiance was anything special; yet, was clean, climate controlled, and welcoming. My family and I were pleased to see that their seating arrangement is that of several large booth style seats. I have two minor complaints about the ambiance and that is the flies that were annoying us (and not very sanitary), and the lack of background noise. There was no music, no instrumentals, and nothing to damper the sound of slurping noodles and patron conversations. Coming from Chicago it is rare to dine at a place without background noise, and coming from Chicago it could have helped my family because we are loud! The service wasn't bad, but wasn't particularly good either. For some reason the waiter offered everybody else chopsticks or regular utensils but us (this is me being sensitive as I would have preferred chopsticks but only got a fork). They also didn't check in to see how we were enjoying our meal or to see if we needed refills. Now that I have my petty complaints out the way let me get to the noodles.... The noodles were BANGING!!!!!!!! The texture of the noodles was perfect: soft, but not too soft. Chewy, but not too chewy. We got three different plates: cat ear something, spicy beef, and not spicy beef. All the noodles were distinctly flavored and paired perfectly with vegetables. The spicy wasn't too spicy but wasn't weak either. The meat was tender, marinated, and seasoned well. The veggie spring rolls were super crispy, didn't taste or drip oil, and were delicious, especially with the sauce! The plates are about $20 each, but they are huge and appropriately balanced. Next time my wife and I will definitely share a plate considering pricing and portions. Overall, I found Taigu noodles to be amongst the most unique Asian noodles that I have ever had as a world traveler. They are a true hidden gem in the Madison area! read more

I have talked to Gao Hong about a spicy baby squad dish for some time and today we had our first sample. AMAZING! Baby squid have been hard to get but are finally available. The baby squid and larger squid pieces were perfectly cooked--not rubbery or tough. The texture was soft and tender. Made with red and green peppers and onions, the mild spice even surprised my wife who doesn't like to try unusual flavors. She enjoyed it enough to help me eat the leftovers . The amount of squid was generous and goes well with scallion pancakes. This is a dish you MUST try at least once. Right now, it is not on the menu but will be if enough interest is shown. I suggest calling first to be sure they have enough ingredients to make a dish for you. Ask for Spicy Baby Squid. It will make a wonderful addition to your Chinese food adventure. Hun hao! read more

Great place!!! I loved talking to the lady there who was our server, I came in earlier than the rest of my party and the place was pretty dead so she kept me company there. Cute restaurant decor and a nice place to meet up with friends. Food is good too, for the Madison area it's a great find for Asian food, try the beef shank appetizer!! Visited Taigu for Sunday dinner one night with friends. The venue was conveniently located in downtown Middletown and there was no wait when we arrived for my party of 4. We ended up sharing the scallion pancakes, spicy ginger beef, and Taigu Special Cat Ear Noodles. The scallion pancake was honestly not great. It was around $9 and tasted a bit too floury and wasn't served with any sauce (making it quite dry) - wouldn't recommend. The spicy ginger beef was super flavorful and well spiced. I thought the seasoning was on point and the beef had a great char flavor. My favorite was surprisingly the Taigu Special Cat Ear Noodles. The noodles were chewy and aldente while also being the perfect vessel trapping the sauce from the dish. Overall, the dishes were good and the venue was reasonably priced for the portions of food. We are so lucky this place is on the West side! The noodles are handmade and soooo good. Have not had a bad dish here but my favorites are the dumplings (honestly some of the best in Madison including from dumpling places), Dan Dan noodles, and the cat ear noodles. Also really enjoyed the cat ear noodles, which have the consistency of a thick flat dumpling or homemade spaetzle. Taigu Noodles is an authentic and unusual spot in Middleton serving homemade noodles and hearty Chinese dishes. It also labels all its vegan items, which is super helpful. The vegetarian spring rolls ($6) were decent-tasting but slightly mushy and starchy. We enjoyed the Spicy tofu with pickled mustard and jalapeno ($17), which is vegan by default. It was interesting, spicy & savory. The Four Color Veggie Stir-fried Cat Ear Noodles ($20) is vegan by default. We loved the noodles, though the dish is light on vegetables and barely has any sauce. This dish, as such, mixes well with others. The Shacha Tofu Stir-fried Noodles ($16) is vegan by default, though the sauce tasted fishy (I wonder if it got mixed with something in the pan?). It wasn't bad, but I wish it had more vegetables. All told, I will definitely stop by Taigu Noodles again when I'm in the Madison area. read more

Lot of things to break down here. When we arrived we were seated relatively quickly but then it took about 15 minutes for someone to come around again and give us water or even to check in. After we ordered we sat for another 20 minutes unchecked by staff before our apps came. There was a hair in our crab Rangoon. Our food came out and was cold, and not just like sitting for 5 minutes cold like felt like it was removed from a fridge. We tried to bring it to the attention of staff but no one came over to us nor did we see anyone. After we brought it up they did not offer us any solutions nor compensation. At the time of this review, they have two locations: the original location is turned into a takeout spot most of the week due to staffing issues. We ordered takeout from there last night and it was possibly the worst dinner we've had from Taigu, and we have been here multiple times and have had great experiences. This time around? Not so much. The crab rangoons tasted like they were fried in old, rancid oil. The sesame chicken and General Tso's that we ordered were mushy and had an off aftertaste. The portion size is massive to probably justify the cost of each plate and we wound up having to toss it out because it made us suffer a bit later in the night. We will have to try to new location one day, too far into the future because this has us suffering. Their original location is simply not up to their normal standards. read more

I had a good experience at Taigu. A group of 4 of us got 3 entrees and an appetizer, which was more than enough for all of us. While pricey, the portions are large. One entree can likely feed 2 people. We got the scallion pancakes, which were not very good. It didn't have dipping sauce, and wasn't as chewy and flaky as I would like. We really enjoyed the cat ear noodles because it had a nice chew to them. The Taigu special had a good spice to it. It had a generous amount of toppings and was delicious. The ginger beef was good but had a little too much char. We also got the beef hor fun and that was decent. It wasn't as flavorful as the other entrees but it was still tasty. I promised myself I would update my previous words to positively reflect my delight regarding my favoritist (I know that's not a real word, but it's my way of saying "...but this goes to 11, and that's louder than 10 innit?" or similar) One negative experience that perhaps I shouldn't have written, considering I otherwise love Taigu and the lovely chef owner putting this all out for us! She recommended something special for my (I've actually visited a couple times since the words I'm writing are for) take out that these words directly relate. Pork belly and jalapeño tofu with the meow-licious cats ear pasta. To date my absolute favorite dish. I'm glad this chef offers items that us untraveled Norte Americanos (since I don't know a way to express this from a humorous Chinese wording) otherwise wouldn't know to order. I grew up thinking I didn't like Chinese food, until I got my first job washing dishes at a Chinese restaurant. That family tried and somewhat succeeded in making me learn to like at least the basics. Years later I Laotian family revealed to me that practically everything they enjoyed, I enjoyed as much. These days I want to experience some tastes that might only be offered in Thailand or Japan or China, but for now I have to seek this out here in the Midwest, namely Middleton. So Taigu currently shall be the source of the Chinese versions of this endeavor. This little place is spotlessly kept, courteously represented and generously offered to us in the area. My friend recommended this place as I haven't found a good Chinese restaurant in Madison. Came here for an early dinner on Sat and there were 3 young ladies working in the front desk. We were the only customers at the time and were seated immediately. We were told that they put the entrée in styrofoam which wasn't an issue. They advertise that the noodles are made in house, so I wanted to try that. I have had cat ear noodles in China before but was never a fan. I ordered the regular one. My eggplant with pork was flavorful and came in generous portion. Hubby had the 4 color veggies noodle dish where he enjoyed as well. I just thought the noodles weren't chewy like what I expected.
