Some of the best pho in Madison honestly. I got the saigon deluxe which came with flank, steak, meatballs, tripe, and tendon. The flavor was great! I do wish they had more toppings though, like chili oil. The regular pho was a great size for me. My partner ordered a rice dish, but the rice to meat ratio was really off (a lot more rice than meat). The flavor was amazing though. The place is huge and there are customers non stop. I gave this place a two star review based off service. It took a very long time till someone attended to my husband and I. The food is now consistently mediocre. I have order the pho on multiple occasions over the past year. The chicken is tough and dry. The ratio of chicken to other ingredients is also disappointing - it's not really a meal. This time we ended throwing away most of it. The vegetable ingredients that were to be put in also sub par. The peppers were wilting. The limes were discolored and released only a drop or 2 of juice. Additionally, the broth is bland and without flavor. We used to like this place a lot, but we have been disappointed the last two times we went. The broth is watered down, not rich like it used to be, the shrimp in the spring rolls were rubbery, and my pho only had one meatball and two pieces of fatty beef. The older lady who brought our water was nice, but service was slow, and to make matters worse, when we went to pay with American Express, which their sign said they took (see photo), the server got snotty and snapped at me, saying "No, we don't. You're wrong." When I showed her her own sign, she said, "Well, we take Mastercard and Visa." Sadly, the food wasn't good enough for the attitude we were served. Saigon Noodles serves mostly Pho Noodle soup, rice dishes, stir fried noodles, Vermicelli Bowls, Banh Mi Sandwiches, & some weekend only specials such as Banh Cuon. They offer a few vegetarian options such as Stir Fried Vegetable with Mushroom in Teriyaki Sauce served with rice. I always crave their super fresh Vietnamese Spring rolls appetizers which are made with shrimp, steamed pork, lettuce, bean sprout, fresh herbs, vermicelli, wrapped in rice paper, served with a delicious peanut dipping sauce. The real star of the show, is the Pho which they currently offer in two different sizes which is the regular and large bowl! The regular bowl seems kind of small to me so I always order the large bowl. Pho is the national dish of Vietnam which is a delicious soup thats amazing for the soul and the body often made with bone broth, rice noodles, and thinly sliced meat (usually beef) served with bean sprouts, fresh herbs, limes, chiles, and other garnishes. Saigon Noodles offers different variations such as steak and meatball pho but if you are feeling adventurous order my favorite: the Saigon Deluxe which is made with Slice of eye round steak, beef meatballs, flank, tripe, and soft tendon which is packed full of flavor! The broth is so rich and comforting!!! I always recommend tasting the broth first and then adding more seasonings because they offer a bunch of condiments and garnishes to flavor your Pho soup to your personal liking such as fish sauce, chili, lime, & Thai basil. To complete your meal, Saigon Noodles has a large delicious variety of beverage selections such as Boba teas, fruit smoothies/fruit teas, milk teas!! For coffee lovers I always recommend ordering my absolute favorite beverage: Vietnamese Iced Coffee With Condensed Milk which has is satisfying sweet but you can still taste the coffee! We used to like this place as the food and service were both acceptable in Madison standard. Came at 4:45 pm on Wed for early dinner and we were seated almost immediately (good sign). Water was given afterwards. However, it was more than 15 minutes before the young waitress took our orders. Ordered 2 items: beef and egg roll vermicelli bowl and pork and egg roll vermicelli bowl. It took more than 20 minutes for the food to come. Since when this is fine dining? Both bowls had very little noodles and protein, lots of bean sprouts and lettuce. Both came with a tiny small dish of fish sauce. I asked for an extra fish sauce and was told there is an upcharge of $1. I have eaten at uncountable Vietnamese restaurants from NYC to LA and this was my first time hearing there is a charge for fish sauce. A bottle of fish sauce is probably $5 or less. The restaurant's fish sauce is highly diluted with lime juice, sugar and chili. I'm unsure how Saigon Noodles can justify charging customers $1 for a tablespoon of its diluted fish sauce. Other restaurants place the entire bottle of fish sauce at the tables. The bowls were $12 each. There is surcharge for using credit card. However, you don't save money when paying with cash meaning you still pay taxes. That will be our last time visiting Saigon Noodles. read more

I'm a hybrid worker so the two days a month I have to go into the office I go out to lunch with my lead worker. This past Thursday we decided to go to Saigon Noodles. I ordered the Spicy Beef Noodle Soup (Bún Bò Hué)- thin slices of marinated boiled beef shank and steamed pork. The soup was okay but it was not spicy at all! It was a bit chilly outside so I wanted a kick of spice but I was disappointed. Overall it was a nice restaurant but I have had better noodle soups elsewhere. Visit this place a few times a year, and have for years. I was surprised how many yelpers are complaining about the portion sizes and service declining. This was not my recent return experience. The dish that has come to be my fave (vermicelli bowl with egg roll) is consistently good. Service is fast, not chatty but you're here for the food. Take your check up to the counter to pay instead of complaining they're not paying attention. They have sauces and condiments at each table if you want to customize the flavor. This is good vietnamese food especially considering the area-- and I'm from Little Saigon and eaten at the most local places in Vietnam so I was surprised to see this place in Madison! Nestled in a plaza on Odana Road, Saigon Noodles looks like any other storefront in the area, but once inside the vibe is cozy. There are so many dishes to choose from, but I found myself gravitating toward the Vermicelli with egg rolls. I definitely made the right choice, because I honestly could go back and have nothing but that and I would leave so full every single time! I was a big fan of the sliced egg rolls on top of the dish. The flavors complemented each other so well, and I am a huge noodle person, so I'm sure the pho would be delicious too. Egg rolls were also fairly small, especially for $7, although they were really good. You might be able to share the Pho though, it looked bigger in the pictures, although we didn't order it or see it this time around.
