Shumai and Spicy Rock Shrimp

Prior to becoming ruby city, this was known as Ruby's Asian bistro and it was my husband's favorite Asian restaurant and our staple for getting the Yaki Udon stir fry noodles around. At the close of 2023 they rebranded (or got new owners) that made it into an AYCE sushi restaurant instead. We were excited to try it out since Wasabi was our usual spot but another AYCE location in the area would be nice to switch between. Unfortunately the sushi wasn't good and the appetizers were very disappointing. The fried calamari was fried batter there wasn't the faintest taste or calamari in there at all. The seaweed salad had a fishy taste to it and was hard to get down. The shumai was steamed rather than pan fried (we like it pan fried better it gives it more flavor and crunch to enjoy). The rock shrimp, similar to the calamari, was just a lot of fried batter, that didn't have any seasoning to it and there was barely any spicy mayo added to it to make it "spicy rock shrimp". The edamame was slightly undercooked and lacked enough salt but that was the one appetizer we finished in its entirety. There wasn't a lot of variety in the special rolls that were being offered and even the basic everyday rolls didn't live up to our sushi loving expectations. Even the California roll was disappointing. It was full of rice and had a quarter of the amount of imitation crab that most places will put into a California roll. We were happy we gave it a try so that we wouldn't feel like we missed out on an AYCE experience somewhere in the capital region, but moving forward we'll continue to be loyal to Wasabi as long as we're living in the capital region.

The confusing disclaimer, should say "must eat all food ordered for AYCE, or pay an additional charge for each roll left"

We ordered a lot of food for AYCE (my gf and I), there's a disclaimer on the menu saying to "take the food appropriately. Waste of food will result in additional charges." Thinking we could TAKE the extra food home, we finished about 80% of the food and went to pay, the waitress that told us where to pay looked very nervous when she saw food back on our table, she called the owner over and the owner quickly became frustrated with us. She said we must eat the food we ordered and gave us two options, we could not leave and to keep eating, or she should present the additional charges. Even though it was confusing, we see that it was a possibility. We asked what the charges would be so we could leave, and that simple question could not be answered because of the emotional tension by the owner. After a couple minutes to calm down the owner, we ended up settling on a made up additional price based on the 10 pieces of sushi that we left. It wasn't about the price, but we had a bad taste in our mouth after our interaction with this person on the staff. Mind you, the sushi and the food service was just fine...there just should be IN CLEAR PRINT, 1.what the protocol would be if we did not finish everything we ordered, 2. how much to expect on additional charges, 3. a calm explanation before and after eating AYCE, especially by the owner. It seemed like this was a problem in the past and we were the victims of this unclear policy on this day.

The interior is no-frills and a bit tight for a family of five, but the staff made it work and got us settled comfortably. We started with edamame, which was perfectly seasoned, and shrimp and vegetable gyoza that the kids absolutely devoured. I also grabbed a Sapporo to wash it all down--solid start. Then came the main event. We ordered a mix: chicken ramen, beef stew ramen, two tonkotsu with double chashu, and a red curry ramen. The only dish that didn't quite stand out was the chicken ramen--it wasn't bad, just not as flavorful as the others. The tonkotsu ramen? Total hit. Both of my kids demolished their bowls--nothing left behind. My wife went all in on the beef stew ramen and loved it so much it sparked a debate at the table about how it stacks up against some Manhattan spots. And then there was my dish--the red curry ramen. Shoutout to our waitress for the recommendation. It had the perfect balance of salt, savory depth, and heat. The broth was this vibrant, bright red that just looked incredible--and tasted even better. Easily one of the top three ramen bowls I've ever had. I had my doubts walking in, but don't make that mistake. This place is a hidden gem. My only knock on the place is the table size for a family of five. Service was great. The menu is small, reflective of the size of the establishment, but you can see they are serious about doing fewer items but doing them right. The portion sizes are generous and the prices are good. I ordered a Tonkatsu Ramen and added some corn. Everything was flavorful and there were plenty of noodles, but I have to subtract a star for the fact that my ramen had only two slices of Cha-siu pork, whereas my friend who ordered the chicken curry ramen had his bowl overflowing with pulled chicken. Also have to take one star away for the uncomfortable booth - straight back wood and too close to the table, felt as if I was hunched over my bowl the entire time. I will say though, that there is a long two-sided counter option for sit-in dining and that seems like the right place to sit so next time I will definitely sit there and try one of their teppanyaki dishes. One star gets tacked back on for the friendly and sweet server with blonde hair - I did not catch her name, but she was quick, knowledgeable, personable, and with just the right amount of interaction to make you feel like you're the most important guest in the room, so kudos to her for working hard and working fast.

Even though I've been here many times, the salt-and-pepper fish was new to me on this visit, and it was fantastic crispy, perfectly seasoned, with little bits of fried garlic and a sweet-and-sour dipping sauce that was so good. She said portions of her chicken were cold and also not crispy, which was also a bummer. The rice was good, and in fact better than some I get at more expensive restaurants. My wife also liked the miso soup that came with the meals. Service was very good. I counted at least 9 employees on a Wednesday night and at one point there were more staff than customers. Food was quick, they were friendly, and the place was clean. The music was a mix of everything but not too loud, which was appreciated. Their menu had lots of nice pictures, which was helpful. My daughter had soup but I can't remember which one. My meal was wonderful. The beef was actually bulgogi. It came with rice and an assortment of marinated vegetables and pickled vegetables or kimchi. The side dishes are included. I always look forward to them. They are so tasty. They are usually varieties of kimchi and fish. I've been to this restaurant a number of times. It usually has an all-female staff. This time, the restaurant was staffed by young men. They were friendly and good communicators. I mentioned that they seemed remarkably busy. They agreed and they said they had no idea why. They were new and had never seen it so bustling at lunchtime. Overall food really isn't bad but it isn't amazing either. If this cuisine is what you're craving go for it, it's fairly priced. I would support a small business. But don't expect a clean restaurant or friendly service - unless youre a regular or fits the server preferred demographic. Not the best experience for me. Whole heartedly believe if service was better this could be a solid place!
