The best part, though, was the fried shallots. People don't realize how much they tie the whole dish together. I don't need to fly all the way to Hat Yai to enjoy great Hat Yai fried chicken anymore. Popcorn Chicken: If you've ever had KFC Thailand's Gai Zap, you've had something very similar to this. I honestly have no complaints. It was flavorful, tangy, spicy, and incredibly aromatic. If I had to describe it another way, I would say it's popcorn chicken seasoned with larb spices. The biggest surprise was the ranch. I've never had ranch like this before.
