    This is what a sandwich with no arugula looks like.

    Date of visit: November 9, 2025 It's clear from the lines in and outside the bakery that this place is a neighborhood favorite, and while some of the items were good, the entire experience fell into the "just OK" category for us. Seating is super limited so if it's not nice outside, you're taking your chances on grabbing a seat; though the patio is quite extensive and I am sure is lovely in the summer. We started out with a couple of breakfast sandwiches. The one I wanted came with pepper jack and that's not my jam so I asked if it could be done with another cheese and was told, "No, we don't have any other cheese." I switched to a Ham and Swiss, no arugula. Geoffrey did capture this correctly, however when the sandwich came it somehow had extra arugula. Like they made it rain on my order. Good thing I am not allergic... #goodtimes Before leaving, we grabbed some bakery to go. I went with the Cranberry Oatmeal Cookie, which was decent but not stellar. I also grabbed a Pumpkin Spice Babka for later and while it came in a super cute container, it really didn't have much flavor. On the positive side, the Almond Joy coffee drink I had was quite good and I appreciated that apples are an option as your side item.

    This was my second time here. It's a small shop with a welcoming exterior design. Inside there are several small tables. They have a nice patio on the side of the building, a great option for a nice weather day. Inside it's bright and well organized. You pass the bakery case on the way to order, which helps you see all the amazing bakery and pastries. A huge menu board is hung on the wall, which lets you see all the drinks and food options. There are a couple of registers that allow for quicker checkout. If you order online, you have options to come in, use the outside pickup windows, or curbside delivery. We got here right after they opened (8 a.m.) on Sunday. There were already people in line or ordering. Got a super friendly greeting and patient help from the staff. They gave us some tips on what were favorite items or suggestions. We ended up with the Espresso Chocolate Chip Scone and the Monkey Bread, with the offer to heat them up. They offer a London Fog Tea Latte (a little vanilla, a little lavender, and extra foam), and my friend got the Chai Latte, hot. Grabbed one of the few inside tables and waited for our order. It didn't take long before everything was ready. The London Fog was very good. Even though they don't offer mugs, they did a good job with the paper cup. The bakery items were heated up and offered in a paper bag. All the items were super yummy. The scone had great texture (a little dry, a little crumbly) and just the right amount of sugar icing. The Monkey Bread is a generous size and could satisfy two people. Glad we got a table because it soon filled up (really filled up) with people ordering or picking up. The place was packed with people, with some even waiting outside. This place is very popular. At one point the noise level inside was almost deafening, but it didn't last long. While this place is not technically a coffee shop, it does a nice job offering items that I would expect, with the exception that it doesn't open until 8 a.m. (I'm an earlier riser). Definitely would recommend this place for coffee, bakery, breakfast, or lunch. Would you like me to always standardize time references (like "8am" "8 a.m.") in your future reviews, or leave them as you originally write them?

    I come here almost every weekend for their homemade bread! You can order online and pick up at the window or go inside and order. There's only a couple tables inside but the have a nice outdoor seating area as well. The bacon cheddar chive pastry and the lemon ricotta muffins are my favorite. They also have one of the best breakfast sandwiches!

    I've heard about this place being the best bakery in town for ages, but I've only had bits and pieces from friends in the past, and not always fresh. So i finally gave it a good try this time to give it a proper review. Perhaps it has been so hyped up for me that i was a bit disappointed. They are solid. But not "knock me off my socks" good. Because there are so many up and coming bakeries and coffee shops that are doing a stellar job. I actually really wanted to try the morning bun, but a guy just in front if me cleared them out. So i went for my second choice, kouign amann, and bought it. But when my order was up, i was told they had oversold. They were very nice and apologetic and would have refunded me or i could choose something else. So i went with the chocolate croissant. Chocolate croissant When i proposed going here, one of my friends voted it down and said let's try somewhere else. She had tried their croissant here before and thought they were the same as Walmart. But i said let's try anyway, cuz I've heard better. Unfortunately, the chocolate croissant did disappoint. I would have gotten the almond ones but they were out of those. These were so so, and more dense than flaky. I'm pretty particular about croissants. Thankfully, other items didn't disappoint. Blueberry cream danish This was really good. Like, wow, size and taste, one of the best garnishes I've had. Bacon cheddar chive danish Another really good Danish, especially if you prefer savory over sweet. Could really taste the chives. Multigrain bread Good bread. Not sure that it's the best bread I've ever had. Ft. Anodyne coffee Inside is not much of a cafe, and there is very limited seating. Outside, there is a huge pavilion-like area with huge tables. So overall, SOLID bakery with rustic vibes. But not your trendy cafe to hang out. There were a lot of takeouts, including LARGE orders of pastries - I kept seeing them disappear before my eyes.

    Stopped by Rocket Baby Bakery recently for some coffee and breakfast and they're great for both! I got their egg and cheese breakfast sandwich. It comes on a fresh baked ciabatta roll and comes topped with their house made melty cheese. It was divine. My dining companion ordered one of their vegetable goat cheese pastries. I had a bite and it was good (the lamination was perfection) but I would have definitely preferred it warmed. For my coffee, I got one of their specialty mochas. I got their almond joy mocha, which was a bit sweet for me (I mean, that was my bad--I should have known by the title). I'm excited to get one of their lattes next time. The service is lovely. They have a small seating area but in warmer months, they have an expansive patio. I'm looking forward to returning in pleasant weather! Get to it!

    Stopped by to do a bit of work and get a snack. Inside and outside was cute with a nice picnic area outside. There's only 3 tables inside but thankfully I snagged one. They had a pretty big menu and I would definitely come back to try a drink and another sweet treat. This veggie goat cheese croissant was great and warmed up for me.

    My best friend recommended I try Rocket Baby Bakery, a small bakery in Tosa. I loved it! It was my first time going and it did not disappoint. When I arrived there were a lot of people inside which is when I knew their food and coffee would be good. I ordered a Caramel Macchiato and a Chocolate Croissant. I love coffee and trying new cafes especially when I travel. Therefore I can honestly say this was the best Caramel Macchiato I've ever tried. The bakery had lots of widows but only about three tables. I had my croissant and coffee while talking to a friend and doing some work. All this to say I had time to observe the bakery and its staff. I had a pleasant experience with the staff when I interacted with them. However, another customer had issues with his order, he ordered a sandwich on his lunch break and arrived around the same time I did. As people ordered and left a staff member asked if he had received his food which he replied with an attitude no, he explained his frustration and how others came and went with their orders. The staff was extremely apologetic and informed him that his order was taken by another customer. They offered a pastry on the house for the inconvenience and with attitude he did not accept. They made his meal fast and gave him a few free bags of chips. All this to say the staff handled the customer and the situation respectfully and with lots of patience.

    We love Rocket Baby! The multigrain sourdough and Tosa sourdough are staples in our house. The pastries are fantastic - you can't go wrong. Kouign Amann is one of my faves, and the bouchons are a perfect little sweet treat. They make great sandwiches for lunch, too! I love the turkey club with the lemon aioli. There are a few tables inside, and lots of outdoor seating. We love grabbing a few things to share and sitting outside. Great service and great food keep us coming back often!

    Get the Tosa Sourdough (or don't, so I can have it to myself). We don't eat a ton of bread so we splurge at rocket baby and we LOVE the tosa sourdough! I would highly recommend especially for toast and grilled sandwiches.

    Normally I come for their almond croissant (hands down - best in the greater MKE area), but we took a chance on their holiday stollen and was impressed. I'll be honest and saying that it's not as good as the kind you will find in say Dresden, Germany, but it was the best I've ever had Stateside. I particularly liked the pockets of marzipan throughout. Would I order again? Absolutely! I believe they only open the orders for the stollen in once a year in December, so don't miss out next year.

    Cutest bakery! They are also on the Goodie App and often have really good bags! I really like the sourdough bread loaves for home.

    The lemon rosewater danish is sublime. The other bakery is also delicious and always tastes fresh baked.

It's a good thing Collectivo serves flat whites in their smallest size, because if it had been any larger, I could not/would not have finished it. I'm by no means a coffee connoisseur, but I *am* a bit of a coffee snob. I love a good coffee. I love a well-made coffee. I know good coffee. I typically buy local freshly roasted beans, and make myself a coffee at least 1-2 a day at home. NONE of the coffee I've ever made at home--or that I've had out and about at any other shop--has tasted as bad as what I had at this particular Collectivo. I'm not saying they're all like that, I'm not even saying any other drink at this Collectivo is bad, but I anticipated--and expected--much better.
