A variety of buns and beverages are also on-hand which makes a stop here easy and convenient. They have a rewards program that you can sign up for in a pinch. Staff is friendly and helpful. First stop at Kettle Range Meat Co was a happy one! I needed a pork shoulder or butt for that famous NYT/Pinterest Pulled Pork recipe that's going around; and Kettle Range delivered! It was a nice cut of meat, and turned out so good! Also picked up and ate three nice boneless pork chops, and love their anti-hormone/anti antibiotic mission with pork. Looking forward to digging in to the frozen sockeye salmon I purchased, and was told that Thursday is fresh salmon shipment day. Frozen brats will be good on the grill, soon! And although the Yelp check in has 10% off for first time customers, I was given 10% off my first order, just making conversation and telling them that it was my first time there. I love this place! Some of the items in the butcher's case rotate, but I once bought a bacon and cheese stuffed burger patty and a strawberry brat to take to a BYO-meat cookout, and wow did they come out juicy and packed with flavor! I'm on their email list, so every week, I receive a list of prepared meals that feed 2, a different one each night, and their slow cooker prepped meals that feed 4-5 people. The nightly meals are only $20. The slow cooker meals are a little more, but what a brilliant idea! They know we're busy but would prefer something fresh and home-cooked vs picking up subs or burgers from a fast casual joint, so they use high quality products, including grass-fed beef and other locally sourced meats, and prepare them in heat and eat kits. Last week, I bought ramen from them. The noodles, broth, pork belly, and fixings were all individually packaged and the kit included simple, easy-to-follow reheating instructions. Bring bone broth to a simmer, heat noodles for 2 minutes in boiling water, add noodles to bowl, add pork belly and fixings to bowl, and pour the hot broth into the bowl. They said the hot broth would cook the pork belly and they were right on. It was one of the best bowls of ramen I've had in town! They also have a freezer and refrigerated case with ham, bacon, and lots of other delicious items. They are open 7 days a week until 7:00PM and there is a parking lot beside the building. It hearkens to less hectic times when one might linger over conversation with their butcher about their freshest cuts and latest recommendations. But, Kettle Range has way more going for them than nostalgia. Offering locally sourced, grass fed, antibiotic and hormone free, expertly butchered meats--Kettle Range is my go-to butcher shop. You can taste the difference. Quality meats just taste better, y'all. They also have a small assortment of wines, cheeses, as well as fresh and local butter. And, for those hectic times? Bagged, heat and eat meals. We've gotten their salisbury steaks, which come with mashed potatoes (the real, hand mashed kind) and veggies--delish. They also have slow cooker bagged meals. Everything you need to make a slow cooker meal for a family of four (we're currently slow cooking a Korean beef meal). The prices for their bagged meals is reasonable. The salisbury steak meal (feeding four and completely prepared) was $30 and the slow cooker meal for four was $25. I am so happy to have this place in our fair city. UPDATE 1/19: Owner/Manager responded and took care of the problem. Called 12/19 for a prime rib order pickup on 12/22. Illness caused plans to change, so I called morning of 12/22 to cancel and I asked about deposit refund/policy. I was told then that "they had a system for this" and they would keep my name in the back office so I could use that $25 for a future order. At this moment, had I been told differently, I may have kept the order and frozen it or grabbed something else. My brother was even considering grabbing it, but since I had the $25 to use later, I figured we could just keep that there for NY/St. Pats, etc. I then called back 1/5 and 1/6 and was told the policy is actually "no refunds, no credits on Christmas orders". The woman I spoke to was polite and apologetic but I was told two different things and the end result is I'm out $25 where I don't think I should be. I should either have that back or a frozen rib in my freezer. Wish I could comment on the meat/service. read more

I have been wanting to get over here since they opened and since I was in this mood for a good piece of red meat with nice sixer of some quality brew I ended up here. A grass fed locally sourced boneless ribeye and some Central Waters brew was on my menu for tonight, yah I like going out to eat but I also like to cook so have to locally source the meal i.e. The liquor store and some form of a food store. When I walked in the two women behind the counter welcomed me and I let them know that I'm just looking right now and I would step up when I'm ready because it's a lot of carnivore heaven to absorb before I'm ready to cash out. The place is done very tasteful for a butcher shop with a clash of county/industrial/old school that crashed into each other and settled in the space with wood, pipes, sheet metal, old school meat cases which worked really well. There was nice cuts of meat, prepared meals, wine, cheeses, dog treats, sides, soups, sausages, hams, sauces, condiments etc to take in all at once but I was on a mission and I left with a ribeye, thick smoked pork chop and some amazing looking Canadian bacon. The two women were super nice and very helpful with explaining the concept of the business but they had me at meat. I read the review of the woman who felt that she was not properly respected by the guy and I have been there also so it's not just a woman thing and people are jerks because I'm a working slob and I have experienced that also but I must say that two ladies were spot on as the face of the business, nice job. Ok enough of the first impression experience ya ya and let's get to the meat for my steak and beer night. The grass fed beef ribeye looked super fresh and amazing, see the picture but how would it turn out because I have been to this rodeo before and felt let down. It was too thin for a thick Char/Sear while keeping it rare which would be tricky so I had one shot at this and I got with in 90 % of where I wanted it to be. Man it looked pretty good and it was super tender/juicy with no chewy weird pieces, I had no grisly pieces on my plate to throw away. This ribeye so tender bite after bite and I was waiting for that weird gristle chewy piece to show up and it never did and before I knew it the steak was gone. The resting period did its job and every bite was juicy and tasty. I was very impressed with the quality of my steak and even though it's a little pricey compared to the store it was worth every penny and I can't wait to try the smoked pork chop and Canada bacon. This place is a definite must for the carnivores out there. read more

Well, I've given this place the rigamarole. I've purchased quite a few items and they were OK, but now my verdict is final. All the Yelp hul·la·ba·loo, hmm, I must be wrong. But no, I'm not. I'm no amateur when it comes to butchering or sausage making. With that preface, I purchased some breakfast sausages and bulk Italian. Some standard fare to see what they have to offer, and maybe, just maybe, I'll find something new and spectacular. I found something new all right. WTH are the spices in that breakfast sausage?? The meat was good and cased up well, but they tasted weird as hell. Now, I'm afraid to f up a recipe with that bulk Italian sausage. You know, in case that's weird AF too. They are no bargain by any means. There are plenty of other butcher shops that offer quality product, and there are no worries of taste weirdness and disappointment. I drop my dog off at a daycare facility next door and have stopped in a couple times. Whenever I have questions they are always willing to go at length to answer them. They offer high quality meats among other things like condiments, dog treats, chili and pre-made meals, bone broth, cheese, etc. The pre-made meals are what I have come back for because you can throw them (already chopped and prepped) into a crock pot. I wish they had some pre-made meals that came without the sides though (like the rice) because I end up wasting that and don't want to. The staff know every stage the cattle/animals go through to get there, and I like being able to ask about that. I highly recommend Kettle Range Meat Co! read more

One star? Yes. I'd love to give them 5, but my last (and only) two experiences put this establishment at the lower end of the scale. Both times I've entered I have left empty handed. Today's experience will paint the picture. Enter around the noon hour. Wanted to see what ready to serve meals they had. I was the only customer, three guys were behind the counter. No welcome. No acknowledgement. I perused the many selections & still not a word said to me. No "Hello." No "Do you need assistance?" No "Are you looking for something specific?" Nothing...... Enter another customer. The boys woke up & welcomed him. Service kicked in. I walked out. This happened twice over a period of 4 months so I can't mark it up to an off day. Really appreciate Kettle Range. I rarely eat meat anymore because I'm completely uncomfortable with the factory farming industry and can't imagine supporting cruelty towards animals. However, when I host family dinners (and for some social gatherings) I'm thankful to have the option to purchase humanely raised and harvested meat from Kettle Range. In fact, the only meat I eat is what I purchase here a few times per year. Since I don't buy or eat meat otherwise, I'm always looking to the folks at Kettle Range for direction on what to buy, portions, and how to prepare whatever it is I'm getting. They're super knowledgeable, helpful and because of them the meat I serve is always well received! My sister in law used to consistently comment that the meat I get is better than what they purchase from the supermarket and they ended up purchasing a portion of a cow that was humanely raised. Humanely raised meat is better in every way. I have also purchased prepared meals for others before (recovering from surgery, after losing a loved one, etc.) from Kettle Range and heard rave reviews. I don't promote eating meat but for those occasions when you'd like to serve a meat/based meal, I highly recommend Kettle Range! read more

Today was the season opener of Saturday grill outs at their storefront. Cheeseburgers $4 and Brats $3. Both were cooked to order and could be enjoyed on a couple of picnic tables they provided. Both offerings were fresh meats from their market and were delicious. Stop by and after stay for a brewski at Saz's which is their next door neighbor to the west or take a tour at Miller Brewing a few blocks east on State Street. What a gem of a place in our city! A "boutique local butcher shop" is how I define Kettle Range Meat. The inside is not huge and reminds you of old time places with a barn like feel. There is a big dry aging cooler where you can observe the big cuts of meat hanging with farm origin signs above each cut. Kettle Range doesn't have a huge selection in the case with mostly grass fed beef and heirloom pork varieties but that speaks to the freshness of what they produce. There are more cuts available in the freezer but I had to try the porterhouse durco pork chops. Beyond just fresh and frozen meat they also have a chef who creates yummy to-go meals. I picked up the pork belly mac and cheese that will make everyone at work envious. Kettle Range also has some cured and uncured bacon along with sausages and other items. They are going to produce some pancetta that I can't wait to try! With fresh, amazing product it does come with a price. You have to be ready to spend at least $10/# for quality beef or pork. My porterhouse pork chops were $14/# and were the most expensive cut of pork available. If they don't have a particular cut available you can call and see when they will have it for you. I highly recommend this place because it is so local. The majority of the products sold there are from Wisconsin and many from southeast Wisconsin. Instead, the folks at Kettle Range and their delivery service helped my husband and me arrange a special birthday dinner, delivered to the house and prepared by or son-in-law. When I wanted to include items not on the standard delivery menu, Kettle Range staff added them personally for us. All reports are that it was the best steak my son-in-law ever cooked. They also get their meat from small farms, that treat their animals better. How do you know when someone is "the one"? This is a question I have often pondered when contemplating the art of butchery. I read a book by a guy named Meathead Goldwyn about the science and art of BBQ. In the book he talks about how critical it is to have a great relationship with your butcher. A good butcher knows his/her craft and has cultivated relationships with farmers and customers. There are a lot of ways to get edible, salable, passable meat into the city; but precious few ways to bring the kind of meat in the kind of way you can feel good about. Joe, the Kettle Range butcher, is "the one" for me here in MKE. (He even gets a shout out in Meathead's book, so you're practically doing business with a celebrity in the world of meat!) He's a master at his craft and takes time to explain things for the uninitiated. When it comes to which cut of meat to buy, he cuts the bull and doesn't try to up-sell you into something stupid. Everyone needs a butcher, a baker, and a barber they can trust. I think Kettle Range is an outstanding option. Do them a favor and call ahead big orders. Joe is good, but he can't break the law of thermodynamics for you. ;) read more

I have been here twice and while I thought I was a good cook/ griller I have to say I failed with my short ribs and my hanger steak. (I also bought a prepared chicken meal for my friends so I'm going to keep going back and trying new things). My short ribs didnot cook as my recipe indicated so I called and spoke to butcher Bill who remembered me and we had a long conversation about short ribs. He was kind, patient and willing to replace my short ribs with a different cut next time I go in. Can't say I would get that service from anywhere else. Next stop... I stopped in Kettle Range Meat's Elm Grove location to buy a couple of strip steaks. The person in front of me happened to be ordering the same thing. The butcher pulled out the tray of steaks and let him select each of his steaks. Meanwhile, another butcher asked me what I wanted and when I pointed to the strips, he quickly grabbed two, turned his back, wrapped them out of view and rung me up. After I left, I felt his behavior was suspicious, so I opened the package in the the car and lo and behold he sold me the end cuts, where two muscles meet and an arc of connective tissues and globules of fat run through the middle of the steak. In essence, it's no longer a strip steak. At best it's good trim for kebabs or a premium grind. How do I know this? I've worked as a butcher and grill chef. So I turned around, returned to the shop and asked for nicer steaks. The owner or head butcher, a Jim Hopper-like fellow, inspected the return and as he reached for some new steaks lectured me that he couldn't sell the original steaks, and it was my responsibility to ask next time not to receive the end cuts. I tried to explain to him that the person in line before had the option to choose his steaks and I did not, but he brushed me off with a canned response that he didn't see what happened. I'm not mad that they tried to pass the end cuts on to me (its still a cheap trick and sign of a butcher you should avoid), but in my 20 years of working in the hospitality industry I have never seen anyone argue or disagree with a customer in any way, ever. The steaks are good, but not that good. For what amounts to $20 in food cost, they lost a good customer. read more

Kettle Range is FAN FREAKING TASTIC you guys. I waited until I had visited a couple times, and now that I've recommended it to everyone I know, I think it's time I recommend it to ya'll. It's a small and unassuming location nestled in a space next to Saz's on State St in Wauwatosa, just enough out of the village to always find a parking spot. Inside is small, you can tell that every product has been carefully chosen. The fresh counter is jam-packed with cuts of meat that a veg-head would switch sides for. Their prepackaged meats are just as exceptional. They have jerky and sausages and even treats for the pups. Not to miss are the pre-packaged meals. They have different price ranges, options for cooking and slow cooking. I recently grabbed a Chicken Gumbo slow cooker meal for $25, came with a package of boneless skinless chicken thighs, sausages, pre-chopped veggies marinating in spices, a roux, and the best rice I've ever had. Yes, rice. I simply threw it in the pot in the morning, came home and enjoyed an AMAZING gumbo. Not to mention Porkchop knows when I've been here and is sniffing my bag for her pig ear the minute I come in the door. Purchased a boneless 4.5 pound ham for Easter over the phone and picked up on Friday paying $10 per pound. Before cooking trimmed off much of the outside fat, the fat weighed over a pound! This morning I trimmed fat from remaining ham and had at least another pound of fat waste. Overall at least half of the ham was waste. So actually paid $20 per pound for what was edible. I wanted to like this place and have tried it several times, but my recent purchase of some bone in beef short ribs will keep me going elsewhere. They were 50% fat and nearly inedible. I spent 6 hours bbq/smoking them on the grill, and when I finally cut into them it was hard to find meat to eat. Save your money and go to Metcalfes, Bunzel's or Whole Foods. read more

First visit here on a Tuesday around 230pm. There were six other customers in there. We were greeted as soon as we walked in. There was a lady st the register picking up her share and a bunch of other stuff. People were at the meat counter picking things out. This place is pretty small. Decent selection of meats and cheeses. We bought the pork belly taco kit for $20. I also bought a natural cheese bacon spread($14!). They have vibes and pig ears for your pooch. I highly prefer this location over the Elm Grove location. The meat display is smaller but usually is stocked regardless what time after work you come in. Steaks are beautifully trimmed and appealing to the eyes. Great selections of weekly sausages and specials. Though as of late, the selection has rather been mediocre (slower season I assume).
