That said, the coffee itself didn't quite hit for me. I ordered a seasonal latte and was excited for something distinctive, but the flavor felt pretty muted. It tasted more like a standard latte than something seasonal or layered. Not bad by any means -- just not memorable. I'd still come back to try something else because the space and concept are strong. I just hope the drinks lean a little more bold next time.

When I get the chance to sit somewhere for awhile, Astute is my first choice. It's generally quiet enough to read or study, and the pour over service is truly exceptional. The roasters they choose to work with are some of the best around. Astute's employees' commitment to serving their clients well and learning about the nuances of each coffee make for an excellent adventure each time. ++also, they carry Pettit's Pastries and you're gonna need to grab a donut while you're here. I was pleasantly surprised that a waffle comes included with the skillets, and even more surprised that it's a house-made protein waffle. Such a nice touch! The coffee was just as impressive as the food. They have a huge variety of flavors and customization options. Their lattes are on the sweeter side, which I personally love, and the coffee itself is smooth. The cold foam is fantastic. I also appreciate that all drinks come in to-go cups. As a slow coffee drinker, I love being able to take my coffee with me when I'm ready to leave. The atmosphere is great as well, especially the patio. Our first visit was during a busier time, and while our server was incredibly friendly, the patio didn't get checked on very often beyond ordering and food delivery. When we came back a few days later and sat inside, the service was fantastic. Multiple staff members checked on us throughout our meal, and the experience felt much more attentive. It may have just been a difference between the patio and indoor seating or the level of busyness. Overall, we were impressed enough to come back within three days, which says a lot. Also, This is a different type of restaurant, they're a church restaurant. Odd, but interesting. Either way, great waffles, cool staff!

I like that they offer items from local businesses such as Lola (for baked goods), Grove (juices) and Fermented Felon kombucha. Indoor and outdoor seating available. Windows are huge with a great view of the river. They serve a good iced tea, which can be not so good at other places. Also a nice hot drink selection. I like to go for a walk across the river, then come here and relax with a brownie or a slice of sweet potato cake. There is an entry fee to the museum if you want to go...or you can just meander over to the gift shop for free. It's a really good gift shop, if you are a nerd like me.
