Bartender was a really nice girl, pretty young and didn't seem to know too much about the history of the bar so when I ask a couple of questions, she walked over to an older gentleman who seemed to know everything about the bar, (he was instructing the bartender which lights to turn on and which lights to turn off, etc.,) but he was much more interested in doing shots with his friends so that was little disappointing, but we did get our questions answered. Apparently once a year, just to honor the old traditions, they allow people to ride their horses up to and even in the bar. Really fun. Google says it's haunted and the bartender said she never had any experiences with the old guy drinking with his friends didn't have anything to say about anything. It could be made into something very, very cute and nostalgic, but it's just a bar and I didn't think it was much worse going to. But we got to check the box that we went to the oldest bar in the area.

First, you line up at the entrance, then you ring the doorbell, but only once as the sign warns. You are greeted through a peekaboo window in the door where they ask your party size. You are then taken in groups of three or less to a vestibule where they lock down your phones so you can't take any pictures and then you are seated in the dark and moody atmosphere. They don't split checks, so be ready to order as a group. There's a 90 minute time limit as well, so don't dawdle. Highlights of our order included the Butter Pecan Old Fashioned (so good!) and the Banana Daiquiri. We stayed for the full 90 minutes and when we left there was a long line waiting to get in. Go early if you want to get one of the few seats inside or be prepared to wait. We loved our experience.

This was a really cool speakeasy!…read more You can only make reservations on certain days, and we happened to be in the area when they allowed for them on a Thursday. We ended up checking in at the restaurant next door and they told us where to find it and to let them know that we had a reservation. (Not sure if everyone has to do this extra step or if you can just go here) We let the gentleman working know that we had a reservation when he popped out from the peep hole. We first went into a very small room full of books and he explained the process and locked our phones in a bag. They take this seriously. You were not going to have access to your phone. I'm sure the material was made to protect it from getting anything sneaky through. They do, however, tell you to keep the phone with you so it is always in your posession. The inside was quite beautiful. It felt like a speakeasy, quiet and through magical doors where you are not meant to be found. We were seated at the bar and were immediately given water. I first started with a raspberry mojito. I forgot what my husband got the first time. For his second drink he tried their version of the Grasshopper which claimed to taste just like mint and chip ice cream. He was absolutely blown away and said "Wow!" every time he took a sip. I tried it and it was spot on! I didn't want another alcoholic beverage so I got their mocktail version of an Orange Julius and it was delicious! We told the bartender (I forgot his name) how amazing the drinks were and especially the Grasshopper and he got into it and told us how it is made and what processes they go through. It actually has milk but you would never know by looking at it. Service was great. When we left we had to hand the bartenders our bagged phones so they could use a machine to unlock it. I told them this felt like Fort Knox. Too funny.

We had the bone-in bbq wings and the cranberry chicken salad. There were 8 wings in the order. They were meaty and dressed with the right amount of sauce and worked perfect as a light meal. The cranberry chicken salad had a generous amount of chopped chicken and with the mixed greens, candied pecans and dried cranberries was a great balance of flavor and texture. The pacing of service was good. There were the right amount of people dining and drinking at the bar and tables to give the spot a good energy. The only downside was that they only serve wine by the glass. We would have brought our own bottle and paid the $15 corkage if we had known. Other than that, it was a great late night choice for dining and drinks.

a place that's leaning heavily on shortcuts in the kitchen rather than built-from-scratch…read moreexecution. Here's how your breakdown lines up: Burger (main miss) --frozen patty, no crust, unmelted cheese, weak sauce--usually means: * Pre-formed frozen beef puck (not fresh ground) * Cooked on a grill instead of a ripping-hot flat top (so no smash crust or Maillard flavor) * Cheese added too late or heat too low to melt it properly * Sauce under-portioned or used as a light spread instead of a flavor layer Result: bland, dry, and flat tasting burger Mac & cheese That "pasta + runny cheese water" texture is a classic sign of: * Pre-boiled pasta sitting in liquid * Cheese sauce broken or watered down * Very little actual cheese base (often just milk + starch + seasoning) So yeah--more "pasta dish" than mac & cheese. Salad (surprisingly the win) Good olive oil + vinaigrette can carry a salad hard. That's usually the only thing that doesn't rely on heavy kitchen execution, so it makes sense it stood out. Fries (another win) Crispy, salted fries usually come from: * Proper double fry or high-temp fry oil * Frozen fries done correctly (ironically, frozen can still be great if cooked right) Pulled pork Cheap BBQ sauce + pre-cooked pork is pretty standard for mid-tier spots. Not amazing, but at least it has flavor, unlike the burger. Beer Hard to mess up--good call there. Overall read of the place This is the vibe I'm getting: * Strengths: fryer, sauces (salad dressing), bar program * Weaknesses: grill station, mac & cheese, burger execution * Kitchen style: "assembly + reheating" more than scratch cooking

We've only ever come here on a whim, and because of that we usually end up sitting at the bar, but most recently we did get a regular table on a Saturday afternoon. They do take reservations if you want to make sure you secure a spot when and where you want. Favorites are still the tacos and Aguachile, especially the short rib tacos. We've also gotten nachos, oysters, ahi crudo, and taquitos, all of which we would get again. Food comes out pretty quick, but still seems to be very fresh. So it's a great place if you want to sit down, but still get out quick to go back to the wineries.

The restaurant is right in the heart of downtown Paso Robles, making it an easy stop if you're exploring the area. We had reservations through OpenTable and arrived a little early. They seated us within a few minutes, and although outdoor seating was available, it was around 97°, so we were happy to wait for an indoor table. The inside has a really cool Spanish hacienda vibe with rustic wood beams, warm lighting, and plenty of unique décor to take in. It's a fun space with lots of character and is connected in the back to the tiki bar next door, making it easy to continue the evening with a drink. The atmosphere was lively without being overly loud, and we really enjoyed the classic '80s music playing softly in the background. The oysters were fresh and very good. My wife ordered the ceviche and enjoyed it. I had the hanger steak salad--it was decent, but I'd probably skip the beets next time and order something different. Overall, the food was good, but it didn't quite rise to the level of "great." Service was friendly and attentive throughout the meal. Overall, Fish Gaucho is worth a visit for its downtown location, unique Spanish-inspired atmosphere, and solid food. While there are probably stronger culinary options in Paso Robles, we'd happily come back to enjoy the ambiance, check out the connected tiki bar, and sample a few different menu items.
