5 stars for the bossam. The thick-cut, tender pork was rich and delicious. I could have used a bit…read moremore pickled radish and greens to balance it out, but honestly, it was the best I've ever had. We ordered a half serving and we couldn't finish. Dwenjang jjigae had an interesting twist. It was lighter and more radish-forward than the traditional version, which I didn't mind, but it felt a bit unusual to call it dwenjang jjigae. It came with mushrooms, radish, tofu, and thin slices of beef. Overall, it was light and very enjoyable. Soondae was different from the typical version I'm used to. Here, it's made with an innards casing and the filling was also different, like meaty with less noodles. It had a strong flavor and aroma that I didn't prefer but the texture was soft, not chewy, and it paired nicely with kimchi and radish. It was fine to try but I probably wouldn't order it again. We ordered a small, and couldn't finish. Side dishes were limited to three varieties (fish cake, kimchi, bean sprouts) and served in small portions. With the richness of the bossam and strong taste of the soondae, we needed more kimchi and pickled radish but it was hard to get our server's attention, likely because she was busy attending to all the tables. We enjoyed the warm ambiance, and it seemed like many diners were enjoying the army stew. We'll be back to try more items and for the bossam.

There were 6 of us and so all dishes were served in bigger platters for us to share family style instead of individual small dishes as shown on the menu. Would have been nice but oh well, it's just as good. All the dishes were good, not superb except for the spicy pork and bulgogi which in my opinion, should be better from a Korean chef and a restaurant at that! There is something quietly confident about the cooking at GlassHouse. The menu draws from the…read morePacific Northwest, but it doesn't feel confined by it. Local ingredients meet global techniques, fermentation brings depth, and acidity is used with enough precision to keep each dish feeling bright and alive. The Salsa Fresca Clams were a particularly compelling introduction. Plump clams arrived with fermented garlic, lemon and dill, creating a broth that moved between briny richness, citrus brightness and the gentle savouriness of fermentation. The accompanying sourdough was almost impossible to resist, especially when there was that fragrant broth left behind. It was a dish that rewarded taking your time with it. The Bison Burger was my favourite. The spiced miso aioli brought savoury richness, while the pickles provided acidity and crunch. Bourbon tomato jam and balsamic onion added a deeper sweetness that rounded everything out. The result was a burger with remarkable depth, where each ingredient had a purpose rather than simply adding another layer. But one of the smallest details may have made the biggest impression. The ketchup served with the fries is made in-house, and you can taste the care that went into it. It has the fresh, unmistakable flavour of tomatoes that seem like they were picked moments ago, almost as though they had come straight from a rooftop greenhouse. Bright, ripe and intensely tomato-forward, it makes the familiar bottled ketchup seem positively flat by comparison. What makes that detail stand out isn't simply that the ketchup is made from scratch. It's the fact that someone cared enough about a condiment to make it properly. Something that could easily have been an afterthought becomes part of the experience. The fries don't just come with ketchup. They come with a little expression of the kitchen's philosophy. That same attention carries through the rest of the menu. Fermented onions, preserved lemons, cucumbers and other ingredients are used to build acidity, umami and subtle funk, while seasonal and local ingredients give the food a genuine sense of place. Yelp tip: Come for lunch. An appetizer and a main for $21 makes this an especially good way to explore the menu without committing to a larger dinner bill. GlassHouse's cooking feels thoughtful without being precious. There is technique behind it, but the food remains approachable. More importantly, there is a sense that the kitchen genuinely cares about what ends up on the plate, right down to the ketchup. It's the kind of attention to detail that you taste.

My recommendations are the fried oyster mushroom, and the bison burger for the non-vegans. There's only 1-3 items on the menu that are meat based to accommodate more people dining in your group. Great service, the owner is very friendly and happy to converse with you:)
