There's a great nee player hidden out in the shipyards of Copenhagen. A former chef of Jordnær and a new team of various well regarded dining establishments have opened a year and change ago. Its a tasting menu of mostly seafood but some meats with the produce being clearly shining of what's best of the area.
My menu had a lot of Japanese influence in technique and ingredients but t flavors were purely their own. As they say delicious is what really matters. But the creativity has warned them a Michelin star and the service is impeccable yet fun. The seafood for sure shines and the langoustine simply grilled and dressed is still sitting in my mind.
