Since it was a special occasion, we went for the seven course dinner with wine pairings. Though I'm not usually a white wine drinker, favoring bold reds instead, I tasted three white wines that became instant hits because of their complexity, balance of acidity and refreshing minerality, accenting the dish paired with it. A few of the most memorable courses were: umami beans, egg, and truffle; fried hake fish with paper-thin potato slices and roasted malt (even my seafood-avoidant partner said she loved this fish); ribeye and beets with a tangy and savory refined BBQ sauce; and raspberry sorbet with peach and cream.
