came here for dinner twice while staying at the Inn for a little getaway. everything was very tasty and well made. they have unique dishes on the menu which makes for an interesting dining experience. service was excellent too. the tables are in the main house of the Inn which is a really old and quaint building. the decor is so beautiful. our first night our table was in front of a wood burning fireplace which was lit and tended to by our waitress. this place is completely off the beaten path and in the middle of nowhere. if we were ever in the area again, we would definitely stop by. also, the restaurant serves a fantastic breakfast which is only open to guests at the Inn. read more

We stayed at the Inn for 3 nights, during which time we had 3 breakfasts and 1 dinner here. The breakfasts were included with our stay, and were very nice - 2 courses each with juice and coffee. We agreed they were definitely worth the $30ish tab for 2 they would have been if we weren't guests of the inn. The dinner we had was good, but not amazing. There was only one choice available for the first two courses, and two for the main course. We don't eat pork so we both had scallops for dinner. The first two courses (a gazpacho and shrimp+grits kind of deal) were both good, but it was really the scallops that won us over; they were delicious. The cheese plate for dessert had 1 kind of cheese, and we were disappointed there were no dessert options involving chocolate. Overall, we had a nice meal, but didn't really think it warranted the $250 we spent. read more

I came here 6 years ago and returned this year and am a fan. You are served in a cozy inn and my server was awesome. Dinner is a 4 course meal. I had a beet salad, butternut soup, choice of gnocchi or filet, dessert (choose of cake or cheese). Everything was good. I do this the price tag of $85 is a lot. Breaking it down it is $15 salad, $15 soup, $15 dessert, $40 entree. I go to a lot of nicer restaurants and I think this cost is a bit high and I wouldn't pay this much for this quality but the meal and staff are great. Everything I ate was really good. Breakfast is 2 courses: sweet than savory. Really good too. I didn't like the coffee, it was a bit sour? But if I was staying at this Inn again I would have dinner again. read more

Redbook had been on our list of restaurants that we wanted to visit since we moved to the area in 2016. My husband took me here for my birthday in November 2020 and we were so looking forward to a night of fine dining. The location was gorgeous and the restaurant was set up lovely. But unfortunately we were left very disappointed by this "fine dining" restaurant. The server was not well versed on the wine list or the cocktails and disappeared to give us answers and never returned until it was too late and we gave up asking. Our cocktails were very nice. The salads were mediocre but pleasant. The soup was delicious. Our mains were average - I had the scallops, my husband had the filet. The chocolate dessert course was the highlight to my husbands meal. My cheese course was embarrassing - a single sweaty piece of cheese and condiments... cannot really be called a cheese course when there was more bread and mustard than cheese. I wish I had ordered the chocolate dessert. The main issue we found was that it was a very fast paced meal, and felt as though they wanted to get us out as soon as they possible could. Not a great feeling for the money you spend. Then at the end of the meal, our server gave us the check and disappeared and never returned; we had to track him down and found all the servers chatting in a corner. For a fine dining establishment in a beautiful location, we expected more. I suggest that they educate their staff more, and slow down the meal progression to make it more enjoyable and worthwhile. Especially as we are local residents and wanted to make this location a regular venue for special occasions. But things need to improve for us to come back. read more

We were looking for a nice place for lunch and found this place on line. Very picturesque location and decor, were anticipating some great food. We decided to come here for our anniversary. We brought our appetites and enjoyed 5 courses with wine pairings. Everything was amazing! We were each able to choose 2 Fresh Starters, 1 Main, and 1 dessert. The third course was a surprise course decided by the chef. It ended up being the best risotto I've ever had with crème fresh and chorizo. Nothing was better or worse than another meal/course. It was equally delicious. One of the more reasonably priced, without skimping on taste, 5 course meals you will have! We stayed at Hillbrook for the weekend and decided to try their restaurant for dinner and are so glad we did. Every course was to die for (see picture for the menu we had), the location is beautiful, the service was great and the wine was flowing. We decided not to do the wine pairing but instead ordered two bottles (for the same price) then took what we had left back to our room. Although it's part of your experience if you stay at Hillbrook Inn, the breakfast from Redbook was so good too! First they served this vanilla and lemon custard with strawberries then thick toast with delicious sausage, cherry tomatoes and topped with a poached egg. Even if you don't stay at Hillbrook (although you should!) definitely have dinner at Redbook! read more

I have been here once for a special occasion. This place is really gorgeous inside and out. It has a great atmosphere. The food I had here was honestly wonderful. We had a roasted red pepper soup that was one of the best things I've ever ate! Obviously that wasn't the only thing we ate but I definitely couldn't forget that soup! We will be coming here again in the future. It is a really great fine dining experience. Some fine dining places take it too far with weird food choices. This place has "normal" food but has made it even more modern, prettier, & tastier! Also on the plus side we saw the chef outside the restaurant picking his own herbs. My wife and I received a 2 night stay at Hillbrook Inn and it included a discount dinner at Redbook Restaurant. I was amazed no one had reviewed this restaurant yet as it is very nice. The ambience is serene and romantic as there were only 10 diners at the 7:00 pm seating. We chose the 5 course dinner. All the food is prepared using fresh ingredients. The chef is very versatile and we were informed that the chef chooses the night's offerings, taking into account any diners particular dietary needs or allergies. First Course: Salad- fresh greens, apples, blue cheese crumbles with very light dressing. Tasty and refreshing Second Course: Roasted Cauliflower soup - fantastic taste, many layers of flavor, would love to have this recipe Third Course: Sea Scallops - this is my favorite seafood when prepared correctly, and these were braised to perfection. They had great taste and were placed on a bed of kale and sauce. I have had only a few better scallops and one was over in Winchester VA at Butcher **** (you will have to yelp that one). Fourth Course: Beef tenderloin with potatoes and carrots. The meat was prepared to medium (best temp for flavor) and was very flavorful. Potatoes were scalloped and very light but deep flavor, carrots were a little underdone for my liking. Fifth Course: Dessert was a chocolate and coconut pate (think very firm chocolate nut fudge). It was very good and the Raspberry mousse served with it was light and delightful. The berries were fresh and sweet. Wait staff was very attentive and allowed time to digest each course and have good conversation. The entire dinner was a dining experience. Yes, you could find better food for the price and larger servings but you would also get noise, less taste, less attention to food detail. read more

The Redbook Restaurant is in the amazing Hillbrook Inn & Spa. The Hillbrook has so much charm and beautiful scenery, we are excited to go back for a stay. The redbook is their "fine dining" restaurant and it is absolutely worth the trip. It is a chefs tasting menu with 5 courses for $79 a person (+$30 a person for wine pairings). We were very impressed with all but 1 of our courses. The butternut squash soup, steak, and pork belly were all DELICIOUS! The chefs menu changes every night. We would absolutely recommend this to anyone looking for a delicious, unique dining experience in Charles Town. Service was also great. Dress code is business casual or nicer. read more

This place is amazing! The food is delicious, the wine parings are perfect and the atmosphere is charming. Did not stay overnight at the Inn but plan on doing so in the near future. We had the potato leek soup - heavenly, shrimp with popcorn grits, chicken roulade, filet and dessert. Everything was delicious. We got there quite hungry and had two starters, one entree and dessert with three wine pairings and we were stuffed! One of us was gluten free and this was not a problem with most of the dishes. We discovered the Redbook for a last-minute anniversary dinner, and were pleasantly surprised. We had a choice of three, four, or five courses, and opted for the five. I believe it was about $80, with a four-glass wine pairing for $35. Prices seemed quite reasonable, and much lower than comparable food in the DC metro area. The salad course came with a warm thinly sliced crouton that was quite tasty, but I found the Gravlax to be the better choice. It was chilled and served with a good labneh (rather than the expected crème fraise) along with cous cous and cucumber and tomato accents. It was a beautiful plate, delicious and probably the highlight of my meal. A second course seemed to be reminiscent of shrimp and grits, wiith andouille flavors and a medium egg. It had good flavor balance and a nice presentation, tasty but it was hard to measure up to the first plate. The next courses were a well-prepared lobster claw and tail in a beurre blanc with a nice addition of shredded kale. I found the contrast in texture interesting, but my wife did not care for it as much. It was followed by a small filet served with near perfect asparagus and a small potato cake. In all it was quite tasty, but - to be very particular - the proportions of the filet, being small in diameter and thick, would make it nearly impossible to execute a medium rare steak with a good crust. Additionally, given its dimensions, it was a bit hard to eat delicately. The wine pairing was quite good - the light Austrian selection with the salmon was again the highlight. The offering served with the shrimp had very strong passionfruit notes, and the chardonnay worked well with the lobster. The Cab blend (?) served with the filet was a bit soft. The staff was friendly and courteous, particularly since we were last minute additions. The old manor house which hosts the restaurant was beautiful. All in all, it was a memorable dinner and a pleasant surprise. This seems a talented kitchen who can balance flavors well, and can put together a very fine meal. I would recommend it and would rate it between four and five stars. read more

I have stayed at the Hillbrook Inn twice this year and been impressed with the consistent high quality of the meals offered for breakfast and dinner. Although they currently aren't offering à la carte selection of food, each time they prepare something fresh, approachable, and thoughtful. Breakfasts are always served with two courses - the first typically being more sweet, such as homemade coffee cake, waffles with apple butter sauce, blueberry muffins, delicious fluffy yogurt parfait with homemade toasted granola. Second course breakfasts are more hearty and always thoughtfully done, typically involving a thick, fluffy egg frittata / omelette, crispy potatoes, and fresh pork belly. Dinner here is also fantastic. Each course is presented beautifully and thoughtfully with just the right portions of food. Although a bit pricey at $85 a person, I can guarantee the consistency of quality food and an intimate environment is worth that price. read more

My wife and I recently stayed at the Inn and dined at the restaurant three times. Each time we were treated to creative meals that were both beautiful and delicious. We enjoyed a variety of delights, including the smoked tile fish salad, white asparagus soup, halibut tortellini, and brined chicken and waffles. The menu changes frequently, so I cannot recommend any particular dish, only the dining experience of being pampered by artists who take pride in their food, and a service staff who are among the best I have ever seen. I was surprised with an amazing birthday dinner at the Redbook for their 5 course dinner. It was one of the best meals I've ever had and an experience I will not forget. For the first course we had the watermelon and feta salad with a chili lime oil... It was one of my favorite meals of the night( I can saw that about every course however). You could taste every ingredient and the chili added an unexpected but welcomed flavor. Second course was the potato vichyssoise with cilantro oil.... I love soups, very rarely do I eat a cold one... I could have this every day... The oil paired beautifully with it. Third course was an adobo pork loin with corn and salsa.... Again just like every meal you could taste all the different layers of flavor. I also had gotten the wine pairing with the meals, I can't remember the name of the wine we had for this course but it was a fantastic pairing. For the entree we had an amazingly cooked rib eye with mushrooms, zucchini, and egg yolk.... I'll have more please :) Finally for dessert (by this point I wasn't sure I could eat any more but I made it happen for this) was a sticky toffee pudding with honey yogurt and bourbon caramel... The caramel sauce needs to be canned and sold The staff was amazing we felt extremely welcomed and couldn't have had a more perfect night to celebrate. We've eaten here a few times and have NEVER been disappointed. The food is always prepared with great care and beautifully presented. Tonight we were surprised to learn that we could choose the number of courses, as well as enjoy a choice within each course! This is a game changer. The 5 course, chef choice tasting menu was always a special treat, but not for everyone. My husband and I ordered different items so that we could taste more. Each dish had a surprise element that added to the experience. For example, my salad was topped with a wafer thin slice of buttered, seasoned, toasted bread that was still warm; the best crouton I've ever had. As always, the presentation was gorgeous, without leaving you wonder, "what is this?" Our dishes were composed in a creative way, yet were approachable & would appeal to my friends and family. This was my first time trying the Redbook Restaurant' located in the Hillbrook Inn and Spa. I was so impressed with it, I just had to write a review. My daughters and I ate lunch there and it was fantastic. The atmosphere and ambiance was delightful and the food was fantastic! They prepared a special lunch for us since we were celebrating, so we didn't know exactly what we were getting. We were pleasantly surprised when they brought out a printed card for each of us detailing our lunch. It was a four course lunch with beet salad, butternut squash bisque , scallops with broccoli and a barley risotto, and finally a chocolate dessert that was to die for. Each course was fantastic. The salad was very fresh; the bisque was thick and creamy, and the scallops were cooked to perfection. My pregnant daughter cannot eat seafood so the chef made her chicken breast that was sliced thick and cooked exactly right to retain its moisture. Both the broccoli and barley risotto were very tasty, and need I say more about the chocolate dessert? The atmosphere, the food and the customer service were excellent.
