Large lot for easy parking. We walked in right at 4pm - opening - on a Tuesday. One other couple was already seated. We knew we wanted spring rolls and wontons, so we ordered that when brought water. We decided on the seven flavor beef for the meal to split. The two apps came out quickly. The wontons were SO GOOD. And the spring rolls were well done but nothing special - solid sauce. The beef came out at the perfect time, right after we finished the apps. And Woweee! It is so good! The beef is tender and flavorful with the crispy lettuce underneath and delicious spices. It went well with the rice, which was perfectly cooked average white rice. We had enough beef left to make one more meal with our own rice. We will 100% be back and are so looking forward to the beef, wontons, and perhaps something new! read more

Have had dinner at the restaurant twice. Best tasting Asian food I have had in a very long time. Have tried spring rolls, fried dumplings, fried rice, orange chicken, Mongolian beef, and seven flavors beef. Each well prepared and with unique flavors. Fast service even when busy. This was my first time visiting Red Ginger (I never visited when it was New Peking Restaurant). The place was very clean, fresh paint, nice light blue theme, and we were greeted by friendly staff. The menu is limited and interesting. It features many traditionally Chinese dishes but also other dishes (like Pad Thai). There are limited beverages (tea and soda). Seems like a missed opportunity to me (not having more beverage choices). We each ordered a appetizer, egg rolls (I think they are called Spring Rolls here) and dumplings. The eggs rolls were very hot and not very big, but they were plenty good. The dumplings were different than what I would usually find, yes, they were braised in a pan, but the dough seems different, or maybe It wasn't steamed (as they often appear). They were good, just with a thicker wrapper. Dishes can be either per person or family style, but no entrees come with rice, so not sure how this works. We each got an entree, Mongolian Beef and Seven Flavor Beef. We both remarked the beef seemed like a better cut than we would expect in dishes like these. The Seven Flavor Beef had a very flavorful sauce with lots of nuts for a nice crunch, I got 2 star (normal heat) and it was pretty warm, there quite a few dried red peppers in the dish. The Mongolian Beef was prepared with a lot of onions and the sauce was sweeter. There aren't too many decent Chinese food places in Bellingham, this one is clean, the service was good, and the dishes are tasty. Check out Red Ginger when you can. Brand new restaurant in what used to be New Peking. It is nice that the new owners freshened up the interior. Recently remodeled, it is now bright, tidy and clean. Pros: Very friendly, prompt service. Portions were very generous. Food was fresh and tasty. Mild cons: They offered "Lunch Specials", but departed from the usual combo presentation. These specials came with the entree and rice: no egg roll and no soup. (Not really that special). Also, the menu could offer a bit more of an expanded description of some of the dishes. For example: listed under Lunch Specials, what does "garlicky" mean? I was a bit surprised by the kinda' high prices, but that seems to be the norm lately. It seems a bit pricey at first glance but really isn't..our party of 4 ordered 5 dishes (plus rice) from the a la carte menu and averaged $25 pp (without drinks). And we had lots of leftovers to take home, which was intentional. Generous portions and exceptional quality, worth every penny we thought. Had the cashew chicken, ginger shrimp, 7 flavors beef (wow!), vegetable fried rice (wow again!), spicy green beans, and a side of jasmine rice. Can't wait to go back and try other dishes. We relocated to Bellingham some years ago from the San Francisco Bay Area and this is hands down the best Asian cuisine we've experienced since leaving California. We were regulars at the new Peking and sad to see them close. Sam and Jessica were such kind people and they are surely missed. They took with them much of the buildings personality and charm. Gone are the bricks loaded with fortunes and the kitschy Chinese decor. My husband described the new ambiance as "sterile". I appreciated the updated lighting, open layout and remodeled bathrooms greatly, but still missed the quirky atmosphere I was used to. We had a pot of the sticky rice tea which was fragrant and delicious. Then we enjoyed the calamari appetizer. The calamari was very tender with a perfectly fried Panko coating. For our meal we split the dry fried chili garlic green beans. The green beans were very fresh and Al dente. The sauce was spicy and plentiful with lots of garlic. There was plenty of tofu that was cooked well. I really enjoyed this dish. We got a side of rice that had great flavor and consistency. The server was prompt and courteous. She kept our water glasses full, and checked in on us to see how we enjoyed our meal, but otherwise left us alone. This is not a bad thing at all just different from the conversations we would have with Jessica and Sam coming out from the kitchen to see how our food was. Sheer delight. The spicy veggie yakisoba I got was all kinds of flavorful. The service was fast and friendly, and the ambience seemed fine though I took mine to go.
