    My new favorite ramen spot! There's always a waitlist during the weekends but it normally goes by pretty fast. Love that the restaurant is next door to Mercury so you can go over to Mercury while you wait for a table. We ordered the traditional ramen, pork gyoza, chicken karaage, sushi set, tempera roll and the spicy tuna chips. Really enjoyed everything on the menu. They gave so much chicken karaage for how much they charge. The ramen broth is the perfect balance of creamy. The spicy tuna chips, ramen and the sushi set highly recommend!

    RAMEN NORI @ BELLEVUE Parking is available right out front, but since it's in a really busy plaza, it can be a little tough to grab a spot. Luckily, I was able to find one pretty quickly when I arrived, but I could see how it might take a bit of patience during peak hours. My friend and I came here on a Wednesday evening just randomly craving sushi, and we were surprised by how packed it still was for a weekday. We got seated right away though, and the staff were super friendly from the start. They also have a happy hour menu, which is a nice bonus if you're coming earlier in the evening. We started with the avocado salmon roll, and honestly it was one of the best rolls I've ever had. It had way more salmon than avocado, which I loved, and the balance of rice to fish was perfect. The quality and portion together were seriously a 10/10. We also ordered the calamari, which came out perfectly crispy and really flavorful. My friend got a spicy ramen, and I ordered a few more sushi rolls to try different options on the menu. Everything came out fresh, and what stood out the most was that we never felt rushed at all we were able to take our time and just enjoy everything. The restaurant itself is really modern, clean, and well-kept. Bathrooms were spotless, the vibe was relaxed but still lively, and overall it just felt like a really solid sushi spot. Between the food quality, friendly service, and comfortable atmosphere, I'd definitely come back here again.

    First time in- celebrating a couple birthdays and we were blown away! Love the simple & clean look. The staff were friendly and attentive! Food came out shockingly fast! The premium hand-rolls were hands down the best I've ever had- the fish melted in your mouth and the top quality ingredients such as the truffles and wagu really elevated it to the next level! I was also pleasantly surprised by the uni (I've always claimed uni to be the worst thing I've ever eaten- turns out I've just never had good quality fresh uni until today) & the fresh grated wasabi on top was a real treat as well! The wagu bowl is rather unsightly looking but absolutely delicious. I do wish they had a few more options for the non sushi/ramen eaters (even just a simple teriyaki chicken)- a dinner bento would be a great addition! We arrived right at the 5pm dinner opening on a weeknight and the parking lot was already filling up, so get there early. Can't wait to come back!

    This place is bustling!! Came with girlfriends on a Friday after work dinner. There was a line and we got on a waitlist. After a bit of a wait we were sat down. The rolls we tried were delicious and my vegetarian friend even complimented saying it's the best veggie roll she has had...I think it was evergreen roll. Seahawks roll was delicious too. I would definitely come back!

    It was a long wait to be seated on a Saturday lunch. We had high hopes and did not meet our expectations. The broth seemed like it would be full of flavor but lacked depth. The pork chashu was tasty and tender. I wish the ramen had some bamboo. The noodle was cooked well. The soup was a bit disappointing. My daughter liked the salmon roll. There are many other ramen places in the area. This was just fine.

    Japanese cuisine has always been a favorite of mine. Seeing that this restaurant had high ratings, I decided to give it a try today, and it mostly met my expectations. Ambience: The overall feel of Japanese dining feels more refined than Chinese food. This can be interpreted in two ways: First, the serving style of Japanese cuisine involves clearing each dish before the next is served, so the table remains clean at all times. Second, Japanese cooking uses very simple ingredients. Anyone who grew up in China shares a common memory of opening a kitchen cabinet and being greeted by a mix of strong seasoning smells--this is not the case with Japanese food. The dining environment was very clean, which I highly appreciate. Taste: I ordered the wagyu noodles, and the beef was excellent. For hand rolls, I tried five flavors--the ingredients were fresh, and the scallop one was the best! However, the crab roll turned out to be made with imitation crab sticks from a supermarket, which was quite puzzling. Service: The staff were well-trained, spoke softly, and provided a perfect experience. As someone who grew up in China, I often think about the differences between Japanese and Chinese cuisine. In simple terms: Chinese food is fire, Japanese food is water. Chinese cooking relies heavily on muscle memory, requiring the chef to skillfully use fire to prepare everything. Japanese cooking, on the other hand, focuses on dashi (broth), marinating, and so on. Given the natural advantage of being near the sea, I highly recommend that everyone come and try this place.

    Food was mid, nothing special tbh. I kind of expected it to be much better seeing that it is in the Bellevue area and with their prices food should've been great. Service was cool, space was cute.

    Came here for the first time and I was pretty impressed. The service we got was excellent and place was really clean. It was pretty busy but we got seated right away. All of our rolls tasted great, fresh ans excellent. The reason for the 4 out of 5 was the prep of the handroll. Its super nice that they have the seaweed wrapped up for freshness but wow, it makes a mess. Thankful for the heaping filling but having to tear the wrap off made a mess. Also, their chicken karaage was terrible. Everything else, wonderful!

    I came in today for lunch. The shop lights were on but no one was eating inside. I went in and then the staffs said it was closed but then a sec later the owner or manger said they are open. I guess there maybe confusion with the snowy situation? My husband and I eventually got our lunch. We asked for tea instead of ice water, but it never came.I got the bento and husband tried the ramen. The ramen looked good, the portion leaned towards smaller size. The bento was ok. The sushi level was mediocre. It's not bad, but not worth the hype.

    My family and I came around 6 PM on a Saturday night and the restaurant was about half empty. But I did notice there started to be a little bit of a line/wait when we left so I would say around seven or so you should expect a little bit of a wait on the weekend. We had all ordered ramen and a few rolls. We thought the ramen had a great taste to it and there were some unique flavors being offered, like black sesame squid ink. The roles also tasted fresh and were nicely bite-sized. The servers were very nice and try their best to give a heads up about dishes because we had noted a dairy allergy. I think this is a great option for dinner if you want ramen and or rolls!

    I went here on a Saturday dinner and it was quite busy. It apparently has won a few awards which justify the hype, but the wait was not too bad. 8 people on the waitlist and we were seated in less than 15 minutes. We shared the Wagyu seafood bowl, green pesto ramen, and the honeycomb nigori (serves 2). The wagyu seafood bowl is a splurge - $48 but the wagyu is well seared and flavorful, and it really melts in your mouth. The salmon, tuna, uni, scallops, ikura, etc are so fresh. You can make small hand rolls with the seaweed served on the side. It is very aesthetic and high quality, worth to try once! The green pesto ramen is the intersection of Italian and Japanese, also well executed. The pesto flavor is apparent but not overpowering, so you can still taste the essence of the ramen broth. Parmesan in ramen sounds weird but works well. The chashu is like a bowl shape, capturing the broth well. The ramen noodle itself is standard. The honeycomb nigori is 2 honeycomb cups with a bottle of nigori sake, prepared tableside. As it's Saturday and quite busy, we were not surprised that there's not much honeycomb left in the box, but we still got the standard portion served. Service is decent as water refills are served periodically. I would recommend swinging by if you're in the eastside, and be wowed by a selection of more unique ramen and chirashi and sashimi options

    Food was great. We came around 6:30pm on a Friday night. We joined the waitlist and got our table ~20mins later as a party of 3, and were initially 8th in line. Everything we tried was delicious. For the wagyu seafood bowl, it comes with several pieces of nori, so you can make your own hand rolls with the rice, sushi and Wagyu. The quality and freshness of the fish were great. The black sesame ramen was better than I thought - even though I normally associate black sesame with sweet flavors, this ramen was quite savory. The pork chashu was just ok - not extremely tender or anything. The egg was not ajitama, it was just a half of a boiled egg. The Godzilla roll had the right balance between the rice, fish, and sauces. Has a slight spice, something to keep in mind for kiddos. The matcha tiramisu was matcha forward and no hints of coffee flavor. It was subtle in sweetness and the cake was moist. A great end to our meal. We came with our toddler, who made a mess and had a hard time because he was too hungry. The staff were very polite and helped tidy the mess and give more napkins. I did see quite a few families with 1-2kids in tow. Only mine seemed to be messy though. ‍ The staff does not check in after you order and receive your dishes - so if you want to order any additional items or dessert, you will have to flag them down! Would love to come again for date night with no baby next time. :)

    It was our first time visiting this restaurant. Clean and new but they should "clean up" the host stand. There was a table with a bag of donations and just clutter which is not the best first impression. They have Happy Hour from 5-6 so we ordered some rolls and they were very good and fresh. The black sesame ramen was just average for me. They do use squid ink in the broth and you can taste the fishiness of that. It's subtle. I did not like the noodles. They were chewy enough but not cooked long enough for me. Overall this was my least favorite dish. Maybe because the broth was just too heavy snd creamy and it felt very monotonous. Loved the Hamachi collar but it isn't the easiest to eat. It's a solid place for sushi but I will skip the ramen for future visits. They also have a lunch menu so looking forward to trying that someday.

    They do take telephone reservations, but most people show up and register on their waitlist system upon arrival. Although they often have five to ten people waiting, they move through the waitlist quickly.

So they bring back the bowl less than half full of broth with noodles on the side. Argh. At this point it was getting embarrassing for me so I just dealt with it and spent the meal pissed off that I was paying full price AND the staff were anti customer service. Beware. Unless you're ordering exactly off the menu and have no special requests, STEER CLEAR of Hokkaido Ramen Santoku.

The waiters were polite and lenient with my preferences and gave excellent service, no complaints there. I came in on a Tuesday or Wednesday at 2:00 ish by myself, so it wasn't crowded. I can't say for weekends but judging by other reviews the waitlist can take a while (not sure if it's different if you come on a weekend but by yourself). There were some people there hanging out over ramen and some people working on their laptops, so it was the perfect environment to get work done (not sure if wifi is free though) and/or chat with friends without having to raise your voice. Overall I rate four stars; good food, good service, and an okay drink. I packed up the broth for home and mixed the leftover with instant ramen, it was delicious!

Update: we called staff and with great thoroughness they even checked and confirmed that we had actually left with the gift box, and with that we were able to confirm that we would have left it at the next venue we went to for dessert. With relief we found it and grateful to Alan for reaching out and letting us know so we could continue our search more fruitfully. Such an excellent experience with the staff at this store. My dad was honestly pretty pissed circling around the area for an hour for parking, but said it was all worth it, even waiting in a long line.

As an example, when I pulled out my credit card to pay, a server was there in literally 3 seconds to present me the bill. The restaurant is very cozy and not too loud. There is often a line here, but don't let that deter you. It moves fast, and people in line seem to be having fun. This is definitely on my list of one of my favorite restaurants in the Seattle area.

The sides and condiments are well thought out too. I'm a big fan of the tomato & cheese add-on. The curry add on, on the other hand, was too overpowering in flavor and masked the pork's natural flavor. Definitely a Seattle staple and worth checking out if you enjoy pork cutlet!
