Absolutely stellar experience. The atmosphere of the restaurant is nice, our food came out quickly (without feeling rushed). Our server was absolutely fantastic, she kept our waters filled and checked in just frequently enough without hovering or having us feel deserted. I feel terrible for not getting her name, but she was amazing. The food itself is absolutely delicious, my steak was perfectly cooked as was my husband's salmon. The vegetables and mashed potatoes were divine and the Brussels sprout app was perfectly crispy. I had the Liberty Lavender Lemonade as well - it was delightful. It was strong (which I prefer - kudos!) but well balanced and not overpowering. We're already looking forward to our next visit and I'm excited for our kids to come - it's rare to see a restaurant offer a kids menu with real food on it (not just frozen chicken tenders, Mac and cheese or pizza). I'm ONLY giving 2 stars. We came looking for an enjoyable dinner. My husband and I ordered the same meal, 2 steaks med rare. We ordered a side salad which was the best part of my dinner tonight. The steak came and I anticipated a juicy steak...Well, It was obviously not a tender steak. I had to saw quite a bit to get a bite. The glaze on this was overly sweet, and there was no seasoning that had been done to it. I had to ask for salt and pepper. As I continued...it was obvious there was no more meat to be had! It was all tendons and fat!!! Mind you...this is just about half the steak! Just completely disappointed! We spent over 70 dollars ... I believe it was on these horrible pieces of meat! Not sure what the cook is thinking or where they procure their meats, but they need to address this issue! I voiced my complaint to the waitress. She replied, "oh I'm sorry, I'll tell the cook" Also on the plate, was a small ice cream scoop size of mashed potatoes mixed with what tasted like sour cream and a few green beans, those were good, just not much. The place is quaint. They have quite the selection of whiskey. Food needs work. And if I may add, your outside chairs could use some chair pads. Very uncomfortable and left groove impressions on my legs. When we arrived home, we were both looking for something to snack on...as we were still hungry! BLUF: Really tasty food, but be prepared for a crowded space and rough service. Food (4/5): Overall, the food is fantastic and full of delicious flavor. The cheesecake was a huge highlight! I was pretty let down by the Commander's Cut, as half of my steak was cartilage and just not edible. Also, if you order the crab dip with pretzels, just know the pretzels are already completely covered in the dip. I prefer them separate so they don't get soggy, so it wasn't a hit for me. Service (1/5): Service was definitely the low point of the night. Our waitress just seemed incredibly distracted and not quite listening. She brought over the wrong drink after nodding through our order, snatched my menu out of my hands, and brought us a completely wrong check at the end. Getting the right quantity and size of to-go boxes took a few tries, and she even scoffed and made a mocking comment about my leftovers. Ambiance (2/5): The inside of the restaurant is adorable but very cramped. We actually started at a table outside, but our waitress asked us to move inside because she couldn't handle the patio tables. Even inside, it seemed like too much for her to handle. If someone tells you to go visit Berkeley Springs, you should do it, and this is one of the reasons why. This adorable little restaurant served up some delicious food and cocktails, and had a staff that was so sparkling and friendly. It really made you realize that there's no excuse for poor service. Well, I will say one person was trying to argue us down that a baby wasn't a real person, (front of staff gentleman. Will, other than that, Trinity, the gentleman who I believe was a chef in the back (we didn't get his name), and even the owner Scott, were so kind and so welcoming to this amazing restaurant. But let's get into the food. We ordered three of the items off of the kids menu the Mac for the militia, the minute chicken tenders, and the sliders, all of which came with fries that seemed to be spiral flat fries that were sliced into individual slices, and seasoned to perfection. Absolutely amazing. The steak and cheese, which should always be cheesesteak, but I'll allow it, was good, but could've used a bit of of sauce and also came with those delicious fries. The winner was the Powderhorn Chop, which was a perfectly cooked pork chop, with a cherry Demi glaze, Parmesan risotto, and fresh and crisp green beans. The cherry bounce was their signature drink, and never in a million years would I have put bourbon and Prosecco together but here we are, and it was delicious. Recently arranged a large party here for my friends birthday and we sat in their outdoor seating area which has been winterized with sides and heaters. It was not cold at all! Our waiter was Dennis and he was fabulous.. attentive and so helpful. Our food came out pretty quickly and not many complaints on our end other than the steaks ordered were switched and a few got the wrong temps but still said it was delicious.. The portion sized of the chicken entrees varied which was disappointing as one may had smaller chicken pieces and the others were much fuller. I wished that the had a printed version as the did for specialty cocktails. Schweety chose the Troeg IPA and I had a glass of who knows what Sauvignon Blanc. Both entrees were very good! My family (two adults, two kids) walked into Proof on a weekday evening around 6pm and were happy to 1) see a bustling restaurant, and 2) find ourselves able to be seated right away! Our server was lovely and so good with our kids, who kept dropping the cherries out of their Shirley Temples. She brought them new ones and also understood that was vital they receive exactly the same number of cherries. As for us, we loved the house-smoked old fashioneds, which were smoke-infused right in front of us at our table. (It's why their table cloths are fire-proof! Sparks do fly.) We also enjoyed every bite of food we had, from the brussels sprouts appetizer to our main entrees. My husband had the pork chop with risotto and I LOVED the bourbon-glazed meatball dish with mac & cheese and collared greens. It was the epitome of "girl dinner" but restaurant-style, so thanks for seeing me, whoever created that menu item! Really hoping that Proof sticks around. As far as ambiance, improved dining chairs would make a big difference in the overall vibe. I had the salad with grilled chicken, and the chicken was incredible--perfectly cooked and full of flavor. The Redcoat Daiquiri was fantastic, and I finished with the most delicious slice of cheesecake, beautifully presented and every bit as good as it looked. Proof on Washington is a charming, beautifully renovated old house with a lively bar on one side and a warm dining space on the other. The atmosphere was one of the best parts of the experience. The music was great, people were singing, and the whole place felt fun, relaxed, and like somewhere you genuinely want to spend time. The hostess was wonderful, and our server, Trinity, was extremely friendly, helpful, and welcoming. She genuinely seemed to enjoy what she was doing, and that made the experience even better. We started with drinks at the table, and both were excellent. The Washington's Rebellion Cherry Bounce was memorable and very well done, and the house smoked old fashioned was also delicious. We then had the Roasted Brussels, and they were absolutely amazing. The combination of honey, balsamic glaze, candied pecans, and parmesan was outstanding. For the main course, I had the Powderhorn Chop, and the flavor was very good. My only critique is that it would have benefited from a stronger sear and a bit more crust on the outside. A little more Maillard reaction, that browning of proteins and sugars that creates deeper savory complexity, would have elevated it even further. We also had a salmon special that evening, and that was outstanding. Dessert was another highlight, especially the warm pecan bourbon pie with ice cream, which was absolutely delicious. Service was a major strength. In addition to Trinity being so warm and attentive, other staff members, including management, came by to make sure everything was going well. We also appreciated that they offer a military discount. This was our first time here, and so far it is the best restaurant we have tried in the Berkeley Springs area. We were told they are expanding, and we are already looking forward to coming back, especially if outdoor seating is added in the future. SERVICE DOG FRIENDLY! A group of us were caught after a day at the dirtbike track with limited options of somewhere to eat, we've been looking for somewhere with a patio, but could not find anywhere. After calling around, we found proof on Washington and asked them about our situation. Since we were out riding all day, we didn't have my dogs gear, but they were still more than willing to accommodate. The table across from us legitimately got up and left after seeing the staff allow me and my dog to be seated, but the staff made sure to let us know we were welcome, no matter what. The food is good. I had the habanero wings, not online it's only on their menu at the restaurant. Separate night. Now I had a to go order and I was by myself as a black man and that's when things got weird. Saying things like oh you look just like the black man that was here 5 mins ago saying I was the managers son when I clearly I'm just a customer trying to get food.
