Proof Kitchen + Bar is an absolutely beautiful venue, replete with lush seating, eye catching art, and a distillery in the background. There's also ample parking and a cute shop with bar items and related merchandise for purchase. To start, I ordered the Blueberry smash. It was cloyingly sweet and did not seem to have the "kick" I was hoping for from their homemade spirits. The food was... average. We started with the Crispy Brussels, which came in a VERY saucy liquid that made the sprouts quite soggy. The flavor was pretty good, notwithstanding the sauce. We also had the short rib nachos as an appetizer. They were tasty but the black beans on the bottom caused the nachos to be soggy almost immediately, which (again) defeated the purpose of ordering a crunchy appetizer. For the main items, my friend had the Reuben sandwich. It looked nice but was lacking in flavor, cheese, and seasoning. I ordered the Birria sandwich and fries. In true birria fashion, the sandwich was accompanied by a savory sauce for dipping. However, neither the sandwich/meat nor the sauce had any flavor. Since this venue is new, they have to work out their flavor profiles. Additionally, our server was generally unfamiliar with most dishes... only able to say what people seem to order a lot of. A good kitchen would ensure the staff tasted the dishes and had an appreciation for the ingredients and the menu as a whole. Proof Kitchen + Bar is up and coming and may likely find its footing in time... read more

Proof Kitchen has been open only for three weeks and has a following already. Located in the 2 Silos Complex this new concept will be a hot spot. From beginning to end service was outstanding and management checked on us as well. I have no complaints; especially for a new restaurant. The food is very good from the appetizers to the desserts. The Parmesan Bread leaves you wanting a second order. I truly enjoyed the chicken rigatoni. It's a simple dish with a lot of flavor. After the entrees we of course had to have dessert. I was impressed with the small size of the dessert and the amount of satisfaction in one bite. Plenty of chocolate and marshmallow!! I definitely suggest going to Proof Kitchen, you won't be disappointed! read more

Warning: the Parmesan Monkey Bread is addictive! We stopped here for lunch on a beautiful Saturday early afternoon but didn't have a reservation. There was plenty of seating on the patio so we enjoyed the weather outside. The customer service was wonderful and the food was amazing! We definitely found a new favorite restaurant but will make a reservation so we can actually dine inside next time. read more

Absolutely incredible. I had a humongous salad, the Parmesan monkey bread, and some fried tater tots. The whole meal was delicious and I was so glad I stumbled upon this place. read more

We really liked this place! Our biggest problem was that there were too many things on the menu to choose from! First--the interior is *gorgeous.* It has a speakeasy vibe, with falling water chandeliers and velvet chairs and booths. It's a super cool date night vibe. Our service was also wonderful. I got a Pineapple Ranch Water to drink, which is a vodka twist on a spicy margarita--it is definitely a "star of the show" flavor profile that will get your attention, nothing subtle about it! For food, we got the reuben eggrolls, crab rangoon dip with delicious sweet-smokey pita chips, the pastrami burger that was stacked so high I'm not quite sure how I was able to take a bite, and the tiny lemon meringue mason jar dessert. All of those things were delicious but I think next time, I will try some of the other amazing sounding food on the menu. read more

Proof is proof a speak easy has arrived in Virginia. The decor is beautiful and welcomes you inside for an amazing new restaurant feeling. The comfort food is unique and the quality of the originality leaves you looking forward to each course. A birthday card was on our table and signed for our celebration. Our amazing waiter, Octavius helped our birthday party select items and every selection from the drinks to the appetizers to the entrees and desserts was spectacular and tasted yummy and sophisticated. We also met Dominic who was a soux chef and we let him know how much we loved the fish and chips. You will love this new addition to a terrific location in Manassas. Thank you to all the team making this new restaurant so special. read more

Another nice addition to the area around Two Silos. All of the entrees we tried we very good, burgers, fish special, and the jambalaya dish. I would also highly recommend the tater tots, they were ridiculously good. The negatives, we didn't really enjoy the apps or the dessert. The crab dip was pretty much just cheese with some crab flavor, no meat at all, and the fried pickles were all batter with very little pickle. We tried a couple of the desserts and just didn't think they were very good at all. read more

I have been here a few times, and will continue to go back. Great food and drinks, wonderful service, and nice atmosphere.

We came in during Valentine's hoping to get a seat at the bar and after a few minutes we found a spot. Service and staff were attentive and accommodating. The food was great along with the house mule. Saw many people getting flights which also looked intriguing. Tastings are done in the space next door. (Booking is advised due to space.) the space and ambience is lovely. We popped into the distillery portion and ended up walking away with a bottle. read more

We ate here on a Sunday for lunch as a group of 7 and had a great time! I reserved for 6 and had a last minute add that the receptionist handled easily when we walked in moving us from a booth to a high top table. Our server, Drew (aka Jim from The Office) was a gem. He gave excellent recommendations and was hilarious throughout. Our food and drinks came out quickly and he was on top of water refills. He split the checks for us easily and accurately (even more impressive because we played musical chairs and weren't sitting with our partners). I could've gotten by on apps alone. There were so many good things on the menu but we chose the Ruben eggrolls and crab Rangoon dip. The eggrolls were fire but the dip was meh. Couldn't find the crab. I got the poached pear salad with grilled chicken and loved the schmear of whipped goat cheese. My husband got the Thank-ya-very-much burger because of its odd combination of fried banana and peanut butter. He enjoyed it but raved more about the jalapeño cheddar tots. Said they ruined him for all other tots. The drinks were all delicious too. We tried the blackberry sage smash, pumpkin martini, bees knees, and cartel. We'll definitely be back to try more of the menu! read more

We had an amazing waiter, the ambiance was beautiful and had tables for dining in and then more of a cocktail lounge vibe with couches as well. Their kitchen is 95% from scratch. We tried a bunch of soups, burger, Mediterranean sliders, banana foster French toast and, fried pickles and monkey bread. Overall everything was very good. Only complaint was the French onion soup had an inch of grease on top of it and the garlic monkey bread was cold. Would definitely make it a priority to try proof again maybe next time in the bar area for apps and drinks! read more

This spot is sooo good and I would expect nothing less from a villagio restaurant! What a beautiful space inside, they could just dim the lights a little bit! This place was actually super busy on a Wednesday night. The food was all delicious! I tried the house rolls as well as the brussels sprouts as appetizers. The brussels sprouts had a lot of flavor and the rolls were really great, but they did come out room temperature so I think they would have been better if they were warm. For my entrée, I tried the chicken rigatoni which was so good, especially with the addition of the ricotta cheese! I also tried a bite of the prime rib, which was cooked to perfection and was a huge serving size. The prices are really reasonable here and I would come back! read more

Ate here for the first time (lunch). We were promptly greeted and seated in the warm, inviting dining area. After a few minutes of perusing the menu our waitress arrived to introduce herself. Her level of training, and personality, were noticeable right away as she asked us about allergies, our reason for visiting, and what we liked. She answered all our questions and never rushed us at all. I had the chicken rigatoni while my wife had pastrami. We shared perhaps the best Brussels sprouts appetizer that I have ever had. We had a few Mularkey cocktails as well. Both our dishes were fantastic and the pastrami was enough for 2 people. Unfortunately we didn't leave room for desert. Prices were reasonable IMHO. Noise level was never an issue. Service and food delivery were prompt. Overall vibe was very relaxing, and again, we never felt rushed. We will definitely return, and next time, we're getting desert. read more

This was such a cool hangout spot that's right by the 2 Silos stage and next to the Murlarkey distillery. We sat at the couches with the cocktail table in between and it was perfect for our group of 6. Their featured drink was their old fashioned with the whiskey from the next door Murlarkey distillery! And the espresso martini was a great pick me up too. For food, their pork belly lollipops and chicken pesto flat bread were just delicious. We had to order more of the pork belly lollipops! And their gift shop in front was very quaint. Definitely coming back! No happy hour menu per se, but prices weren't too crazy. read more

Wonderful cozy atmosphere with great service and delicious food. Nice whiskey selection and simple and rich food menu. Prices are very reasonable which is something I personally feel very important. The place is part of black sheep restaurant family which is by the way a walking distance from each other. I highly recommend visiting. One last thing the place normally fully booked but they managed to squeeze me and my family in keep that is mind in case online reservation doesn't help give them a call. read more

This was my first time here. We had a 5:45 PM RESY reservation with my family of eight including two elementary school children. We were seated at a large table across from the bar. I enjoyed my two proof old fashioneds with Murlarkey distilled spirits including heritage whiskey, papi's elixir, orange peel and amarena cherry for $14 each. We shared and enjoyed the twice baked hand made potato pierogies topped with scallions, horse radish crema and bacon jam for $13. We also shared and enjoyed the crispy fried whiskey frickles or pickles with house made dipping sauce for $10. We also shared and enjoyed the warm parmesan pull-apart monkey bread with garlic butter and house made boursin cheese for $9. I enjoyed my Charleston Perlou, a southern twist on jambalaya with andouille sausage, blackened shrimp, and chicken confit, served over Carolina red rice with roasted peppers and herbed gremolata for $28. I ended my dinner with a double espresso for $5. Kenneth L. served us very well. My total bill was $455 including a large party 20% gratuity of $70. We all agreed we will likely return here. After our dinner we stopped by 2 Silos Brewing, therefore more to come regarding 2 Silos Brewing. read more

Drinks Espresso Martini - watery (IMO) I may just be used to the way i make them at home Rasp apple Martini - Kind of Medicinal Old Fashioned - Perfect! Papi never fails BlackBerry Sage Smash - also perfect! Bourbon Peach Smash - very tasty Food Reuben Eggrolls - Really tasty Pork Belly Lollipops - not tender, super chewy Fish and Chips - fresh and crispy. Fries were a tad over seasoned with the old bay, but still edible. Charleston Perlau - good flavor. Had a ton of onions in it. I didn't see onions in the description, so it was a struggle for me to get them out (as i do not like onions) Burrata Cannelloni - super delish! Dessert Sticky Toffee Pudding - delish! Mile high lemon meringue - delish! We had a reservation so being seated wasn't an issue. Nice tables and ambiance. I loved the big windows. The server was very nice, she made great recommendations. Warning- the desserts are SMALL!! Not super shareable. This place is super similar to black sheep. Same vibes and ambiance. The outdoor space was also pretty nice. Brunch coming soon! I recommend sticking with the murlarkey cocktails if you have had those at the original distillery. I'll come back to try some other dishes soon! read more

VERY DISAPPOINTED at how we were treated by the hostess today. We arrived before 11Am to an EMPTY restaurant and parking lot. Despite the lack of customers we were told that they had no tables. It is late July and we were dressed casually for the heat and the hostess just didn't think 3 old white guys didn't fit the hip vibe that they were looking for. Never setting foot in there again. read more

Proof is a must do! We had a friend in town on a Monday evening and decided to call and see if we could get a table. Fortunately, we were able to get in right away. The menu is very unique and has so many options to cover everyone's interest's. Two in our group had the Proof burger, one had a salad with shrimp and another had the burger with pastrami. We started the dinner with the crab Rangoon dip. All were amazing! The dining room is gorgeous and quite boogie! Feel like you're stepping back in time with all the little details. They also have patio seating which would perfect on a cool Fall night. Kennon was our waitress and she was so attentive and hilarious. She knew the menu well and was perfectly attentive to our table. Back again!! Fries are out of this world!! Cheeseburger was delish. I had the pastrami/turkey Conflicted sandwich. So good. The slaw & the sauce that comes with it are terrific. Pear salad was wonderful! 2 folks ordered it! French onion soup was heavenly. All in all, good time. Now. It was a bit after noon. Quite busy. However, service was very slow. Not sure if Jahrod was new or what. Forgot to put in half the bar order. Had to flag him down for that. I had iced tea. Something that should be readily available. Took a long time for a tea refill. This restaurant group is wonderful. We frequent Clifton, Silos,, Proof: all of them. Was a bit disappointed that at least the late ass bloody Mary's were not comped. Seemed the bar was overwhelmed with orders. Did one not show? Understaffed? It showed. BTW... this the first below 5 ever for any of these restaurants. One off experience will not keep me from going back. But.... Take note of my notes. read more

I have dined at Proof Kitchen & Bar in the past and previously enjoyed my experience, which made this visit especially disappointing. Our group of six made two reservations weeks in advance--the first for drinks and appetizers in the winter cottages, and the second for dinner inside the restaurant. Unfortunately, upon arrival for dinner, we discovered that the table reserved for us was a very small booth that could not comfortably seat six people. In fact, it would realistically fit four people at most, and I would not recommend trying to squeeze five or six into that space. When we brought this to the staff's attention, the manager explained that the restaurant does not have tables that seat more than five or six and that this booth was the largest option available. We were told that tables could not be moved or adjusted. While the staff did make an effort to accommodate us by seating us at two separate tables, this solution was disappointing. One table was the original booth assigned to our reservation, and the other was a standalone table with four chairs. This separation meant that our group could not sit together and enjoy each other's company. Two members of our party had traveled from Maryland to join us, which made the situation even more unfortunate. Had we been informed at the time of booking that the seating would be split or that booths were small and inflexible, we would have gladly reserved two tables or made alternative arrangements. However, during my phone call weeks prior, the hostess never mentioned booth size limitations nor suggested booking multiple tables for a party of this size--especially considering the amount of money spent across both reservations. While the staff was polite, the lack of transparency and flexibility left us feeling disappointed. This is not a restaurant I would recommend for groups larger than four who want to dine together, and based on this experience, I will not be returning. read more

Brand new spot, opened a few months ago and been dying to check it out. The parking lot is huge. No issue with finding a spot. When you walk in, it gives a distillery meets Coopers hawk. Lots of stuff to purchase. We had to wait just a few minutes to get our table. The tables are cozy, romantic feel with mood lighting. This is a great date night spot, maybe girls night or work event. There are couches in the middles, assuming it's for people who did not get a table and just want to grab a cocktail. There is an outside area with tables and the waiter said they are putting fire pits out there soon. It's just about next door to 2 silos so you can also hear the music from there. read more
