This is one of the best restaurants in Manassas... it is attached to the Murlarkey whiskey distillery... The atmosphere is a chic whiskey/cigar bar esthetic (not actually for cigars)... warm tones of yellow and leather with brown leather throughout! The food is absolutely immaculate in presentation and taste... every ingredient is perfectly combined with intentionality and nuance. The fries are crisp... the sourdough bread freshly baked and cut to the perfect width. The coleslaw might be the best coleslaw I've ever had... not too much mayo or overly sweet... perfect crunch. The Birria grilled cheese is intensely rich and the pickled red onions are essential... I wish there was far more on the plate. It's the essential acidity that will break up the richness. Take a few with each bite. The fish is fried to absolute perfection... light and crisp and the batter was not too heavy... absolutely golden in color and light and crisp on every bite. You'll need to spritz the lemon for the acidity. My wife loved the fried pickles (frickles?!)... and we will definitely be back to try the other items on the menu! read more

The space is a little bit more removed from the craziness of 2 Silos so it was the perfect spot for my family to spread out, enjoy the sunshine, and enjoy good food and drink. From gen alpha to boomer, everyone had a great time! What's great: - Flexible outdoor seating that allowed the children to run around out without bothering anyone and family members to stop in and out throughout the afternoon - Food: We shared a variety of appetizers such as the crispy whiskey frickles, wok charred brussel sprouts, birria quesadilla bites, and crab rangoon dip and they were all a hit. Kiddos also loved their mac and cheese and cheeseburger sliders. - Drink: Whiskey flights, muralkarita (a salsa vodka margarita), pom g&t, and the pear mule mocktail were delicious and beautifully prepared. The only thing that would have made our experience better would have been a dedicated server but I'm guessing that might change as the weather starts to warm up permanently. I've been hearing about Proof Kitchen for a while and finally made it in for lunch. The restaurant is beautiful and has a very cozy atmosphere perfect for a date or a small group. The food was the highlight. We started with the pork belly lollipops, crispy frickles, and the crab Rangoon dip, all of which were excellent. I had the pepperoni flatbread, and my husband really enjoyed the veggie burger; he noted it was well-seasoned with a great texture. The only downside was the seating. Despite having a reservation, we had to wait about 10 minutes. The host offered us a couch area with a low coffee table to avoid a longer wait. We took it so we could eat sooner, and while there was plenty of room for the plates, eating from such a low table was a bit awkward. Overall, a great experience! I've now visited Proof bow since they opened in May 2025 and the food has been great both times. The menu has a variety of cuisines, all of which are great. My favorite appetizers are the pork belly and the brussel sprouts. For entrees I've had the japchae and one of their burger. Their cocktails are appropriately priced and pretty good, though a bit on the smaller side. Service is attentive and friendly. Came in for brunch on a Saturday morning soon after they opened. When we got there it was dead, but by the time we left, the place was hopping and very lively! This is a BEAUTIFUL venue, with large chandeliers and modern, somewhat artsy furniture throughout. The brunch menu is a combo of their typical lunch menu plus a brunch menu, so there's plenty to choose from. Our server was really good and did a nice job keeping an eye on us. Everything we tried was excellent and they provided large portions too! The Reuben Egg Rolls were very tasty and the corned beef in there was excellent. The dipping sauce really topped these off perfectly too. I got their birria grilled cheese sandwich and WOW - that was a LOT of food! It was a huge sandwich with an amazing consommé which was flavorful and had fresh cilantro in it - great for dipping! We've been to Black Sheep several times and honestly, this place was so much better (yes, I know they're the same ownership, but both Black Sheep and Proof have been much better than my recent visits to Villagio in Clifton too, so it's possible that they seem to focus on one project more than another). Overall we really enjoyed this visit and most definitely look forward to returning for dinner to try more. read more

Our waiter (Drew) was so knowledgeable about the bourbons and the menu - recommending the meatloaf and the cheddar jalapeño tots. We sat at 2 tables to avoid a high top but enjoyed passing starters between the tables. Birria quesadilla bites were my favorite - gorgeous crispy cheese exterior with decadently tender beef inside. We also had the pork belly pops, pierogies, and Brussels sprouts. All very good with great flavor and textures. I tried a bite of the meatloaf - infused with little pockets of cheese, which I'm totally copying at home. My entree was the smothered roast chicken, served with buttermilk mashed potatoes and crispy leeks, shredded little bites fried giving a great crispness to the dish. Another nice addition to the area around Two Silos. All of the entrees we tried we very good, burgers, fish special, and the jambalaya dish. I would also highly recommend the tater tots, they were ridiculously good. The negatives, we didn't really enjoy the apps or the dessert. The crab dip was pretty much just cheese with some crab flavor, no meat at all, and the fried pickles were all batter with very little pickle. I have visited Proof Kitchen and Bar twice since they opened. We are huge fans of Black Sheep and knowing that it was by the same peope behind Black Sheep, we were excited and had high expectations. First, the interiors are hands down the most beautiful restaurant interiors in the area (aside from Black Sheep). It can rival a fancy hotel lobby in a major city. The food is modern American - with inspirations from various cuisines. For appetizers, I have tried the Fries Sampler and Crab Rangoon Dip. For soup, we had the French Onion Soup and the She-Crab Soup. We also had the Truffled Mushroom Flatbread. I loved the Fries Sampler and we were impressed with the soups. The Flatbread was really delicious too! For entrees, we tried the Shepherd's Pie, Smoked Salmon, and Beef Bibimbap. All of them were delicious. However, one of the components of the bibimbap was slightly too salty. Not to miss are the cocktails. I love their espresso martini and my date likes their old-fashioned. As for the service, our servers have been fantastic each time we visited. It would be great if they know their menu better so customers would not be overwhelmed with the choices. Still, really impressive for a restaurant that just opened. I highly recomment this place to people who likes to have a cocktail (or two) with delicious food and those who don't mind spending a little more than usual for an awesome meal. The service was top tier, our waitress was knowledgeable about the menu, responsive, and really on top of her job. Unfortunately, The food wasn't anything to write home to mom about, we were shocked it wasn't taster. We started our visit with the reuben egg rolls which were good. Then we had the conflicted sandwich and medium well proper proof burger. The burger came out well done and had minimal flavor and the meat in the conflicted sandwich was dry, but the sauce helped. The drinks were the highlight, so so delicious, we had the peach sage smash, blackberry sage smash, and the lavender lemon drop martini. The seating was super comfortable from leather to plush chairs and couches with a nice view. My friend and I had a brunch reservation for a Saturday at 11:30. We were seated promptly. Our waiter Jack was very attentive. We both had the Proper Proof Biscuit. It's "house-made biscuit with applewood bacon, American cheese, scrambled eggs, and hot honey." The biscuit was weird - not really biscuit-textured - but somehow it worked. Due to its crumbly consistency and the height of the sandwich, it needed to be eaten with fork and knife. It was quite tasty. It came with breakfast potatoes (not mentioned in the menu) which were too spicy for me. The coffee was good and Jack kept our cups filled. So the food was good, but not great. For me, the big downfall was the noise level, it was loud when we arrived, and got progressively noisier as the time passed. By the time we left, I was happy to walk out into the quiet. It was cloyingly sweet and did not seem to have the "kick" I was hoping for from their homemade spirits. The food was... average. We started with the Crispy Brussels, which came in a VERY saucy liquid that made the sprouts quite soggy. The flavor was pretty good, notwithstanding the sauce. We also had the short rib nachos as an appetizer. They were tasty but the black beans on the bottom caused the nachos to be soggy almost immediately, which (again) defeated the purpose of ordering a crunchy appetizer. For the main items, my friend had the Reuben sandwich. It looked nice but was lacking in flavor, cheese, and seasoning. I ordered the Birria sandwich and fries. In true birria fashion, the sandwich was accompanied by a savory sauce for dipping. However, neither the sandwich/meat nor the sauce had any flavor. Since this venue is new, they have to work out their flavor profiles. Additionally, our server was generally unfamiliar with most dishes... only able to say what people seem to order a lot of. A good kitchen would ensure the staff tasted the dishes and had an appreciation for the ingredients and the menu as a whole. Ate here for the first time (lunch). We were promptly greeted and seated in the warm, inviting dining area. After a few minutes of perusing the menu our waitress arrived to introduce herself. Her level of training, and personality, were noticeable right away as she asked us about allergies, our reason for visiting, and what we liked. She answered all our questions and never rushed us at all. I had the chicken rigatoni while my wife had pastrami. We shared perhaps the best Brussels sprouts appetizer that I have ever had. We had an amazing waiter, the ambiance was beautiful and had tables for dining in and then more of a cocktail lounge vibe with couches as well. Their kitchen is 95% from scratch. We tried a bunch of soups, burger, Mediterranean sliders, banana foster French toast and, fried pickles and monkey bread. Overall everything was very good. Only complaint was the French onion soup had an inch of grease on top of it and the garlic monkey bread was cold. First--the interior is *gorgeous.* It has a speakeasy vibe, with falling water chandeliers and velvet chairs and booths. It's a super cool date night vibe. Our service was also wonderful. I got a Pineapple Ranch Water to drink, which is a vodka twist on a spicy margarita--it is definitely a "star of the show" flavor profile that will get your attention, nothing subtle about it! For food, we got the reuben eggrolls, crab rangoon dip with delicious sweet-smokey pita chips, the pastrami burger that was stacked so high I'm not quite sure how I was able to take a bite, and the tiny lemon meringue mason jar dessert. I reserved for 6 and had a last minute add that the receptionist handled easily when we walked in moving us from a booth to a high top table. Our server, Drew (aka Jim from The Office) was a gem. He gave excellent recommendations and was hilarious throughout. Our food and drinks came out quickly and he was on top of water refills. He split the checks for us easily and accurately (even more impressive because we played musical chairs and weren't sitting with our partners). I could've gotten by on apps alone. There were so many good things on the menu but we chose the Ruben eggrolls and crab Rangoon dip. The eggrolls were fire but the dip was meh. Couldn't find the crab. I got the poached pear salad with grilled chicken and loved the schmear of whipped goat cheese. My husband got the Thank-ya-very-much burger because of its odd combination of fried banana and peanut butter. He enjoyed it but raved more about the jalapeño cheddar tots. This place was actually super busy on a Wednesday night. The food was all delicious! I tried the house rolls as well as the brussels sprouts as appetizers. The brussels sprouts had a lot of flavor and the rolls were really great, but they did come out room temperature so I think they would have been better if they were warm. For my entrée, I tried the chicken rigatoni which was so good, especially with the addition of the ricotta cheese! We sat at the couches with the cocktail table in between and it was perfect for our group of 6. Their featured drink was their old fashioned with the whiskey from the next door Murlarkey distillery! We shared and enjoyed the twice baked hand made potato pierogies topped with scallions, horse radish crema and bacon jam for $13. We also shared and enjoyed the crispy fried whiskey frickles or pickles with house made dipping sauce for $10. We also shared and enjoyed the warm parmesan pull-apart monkey bread with garlic butter and house made boursin cheese for $9. I enjoyed my Charleston Perlou, a southern twist on jambalaya with andouille sausage, blackened shrimp, and chicken confit, served over Carolina red rice with roasted peppers and herbed gremolata for $28. I ended my dinner with a double espresso for $5. Kenneth L. served us very well. My total bill was $455 including a large party 20% gratuity of $70. We all agreed we will likely return here. I have dined at Proof Kitchen & Bar in the past and previously enjoyed my experience, which made this visit especially disappointing. Our group of six made two reservations weeks in advance--the first for drinks and appetizers in the winter cottages, and the second for dinner inside the restaurant. Unfortunately, upon arrival for dinner, we discovered that the table reserved for us was a very small booth that could not comfortably seat six people. In fact, it would realistically fit four people at most, and I would not recommend trying to squeeze five or six into that space. When we brought this to the staff's attention, the manager explained that the restaurant does not have tables that seat more than five or six and that this booth was the largest option available. We were told that tables could not be moved or adjusted. While the staff did make an effort to accommodate us by seating us at two separate tables, this solution was disappointing. One table was the original booth assigned to our reservation, and the other was a standalone table with four chairs. This separation meant that our group could not sit together and enjoy each other's company. Two members of our party had traveled from Maryland to join us, which made the situation even more unfortunate. Had we been informed at the time of booking that the seating would be split or that booths were small and inflexible, we would have gladly reserved two tables or made alternative arrangements. However, during my phone call weeks prior, the hostess never mentioned booth size limitations nor suggested booking multiple tables for a party of this size--especially considering the amount of money spent across both reservations. While the staff was polite, the lack of transparency and flexibility left us feeling disappointed. This is not a restaurant I would recommend for groups larger than four who want to dine together, and based on this experience, I will not be returning. read more
