This place is perfect for both wine beginners and aficionados as they offer a basic wine list in the menu, as well as a 10-page packet of their full wine catalogue. While the fried calamari itself was lackluster, it comes with fried jalapeños, which was a nice twist to the dish, and a delicious house-made sauce. Both pizzas I tried were delicious, with the dough being the perfect texture with a hint of sweetness that made me think whole wheat or tomato basil. Came here around 7:00 was seated right away. We had a pizza and the chicken parm and salad. Pizza came out was a good size really enjoyed a side of hot honey. The parm was huge. It was delicious. They have a large selection of wine to choose from. The food was great. My pizza was done just right! Crispy crust. The parm was crisp. They do it a bit different here. Went for lunch, one weekday couple of weeks back. Prometheus was recommended by several locals in Fredericksburg, so we decided to try it. As we entered, there was only two tables of people seated, and it was noon, so I was a bit concerned with the lack of crowd. We ordered a salad to share and a pepperoni, black olive and mushroom pizza for the two of us. The salad was large enough for two to share, and then some. When the pizza was delivered look great, the crust was nice bubbly around the edges just the right amount of chewiness. I would have to look to find fault with the pizza, but then the only thing I could say I would've changed was a few more slices of pepperoni added to top it off. I could not believe the number of Wine cases stacked around the restaurant everywhere. They were up against the front wall, the back wall, the walkway to the kitchen, and behind the cash register. You couldn't see a spot in there that didn't have a case of wine; but that's a good thing. They had more wine to offer than just about any restaurant in town, including the "high-end" restaurants. The crust is referred to as Neapolitan/New York-ish style which is accurate (thin on the bottom , crusty on the end) and tasted great. We started with a caesar salad and then shared a couple of pizzas The "spaghetti western" was very tasty with a hot honey drizzle that is a winner. We also had one with pepperoni and basil that was good but could have used a little more red sauce. There are a few good looking sandwiches on the menu that we will have to come back and try. My husband and I have been here numerous times because it is great food, service, and ambience. We especially appreciate the quality of their locally sourced meats and vegetables. We have started eating pizza again because they use fresh milled organic grains to make the dough, as well as any other grain products on the menu. They actually make the buns for their smash burgers (ask about specials). Opening a pizza place is a bold move. Pizza is democratic. It's joyful. It's one of the few foods that can be both cheap and transcendent, messy and holy. When you open a restaurant devoted entirely to pizza, you are promising something special--flavor, balance, maybe even love. Prometheus wants to make that promise. It just doesn't keep it. It feels less like a fine meal and more like a corrupt politician shaking hands, promising transformation, and delivering a slightly warmer version of what you already had. But pizza demands joy, confidence, and generosity--and this place feels cautious, pretentious, and oddly detached from the very food it claims to celebrate. Heard nothing but great things about Prometheus Pizza and have tried their pizzas at pop ups in Austin too! Stopped in the brick and mortar and loved the space. It was quiet in there for an early lunch on a Monday but as we left, lots of people came and were sitting out front in the cute patio. Got a Caesar salad and the Roxanne pizza. I also appreciate the use of local grains, etc. Sadly, I was disappointed with my sandwich. I mean, don't get me wrong, I ate all of it, but it was listed as focaccia. Fredericksburg isn't usually some place you go to get pizza, but if you've been at the wineries, antique shops, or lavender fields and feel that hunger coming on, Prometheus has the best pizza in town bar none! My husband and I would frequent their food truck and were thrilled to find out they opened an actual brick and mortar. The lovely pizzeria has the cutest, vintage feeling outdoor dining area with great views, or a nice quaint indoor dining if that's what you prefer. The weather was perfect the day we went so we sat outdoors and ordered a custom pizza with picked onions, Kalamata olives, and fresh basil. The crust is so insanely perfect with a nice char along the edges, the sauce is light but bold, and the cheese has this wonderful salty, brininess to it. We also ordered the olives which came with some citrus peel, it was such a nice fresh, bright flavor! The olives are so cute and small, and they do have pits in them so they bring you a little dish to place the pits. We love tiramisu so ordered it for dessert and we were so glad we did! The flavor was flawless! It tasted like it had toffee and sea salt in it, though the waitress would neither confirm nor deny, LOL!! It was absolutely wonderful. And to finish off our meal she brought out small glasses of a lemon flavored sake to wash it all down. They are still in the "soft opening" phase and we were told that for those visiting they were giving the small samplings as an after dinner drink as a thank you. It was the perfect touch! This will always be a stop for us when in Fredericksburg, even if it's just to pick up a pizza to bring back home with us.
