Where do I even begin? We stopped by Casa Chloe on a Friday night for drinks and live music, and it was the perfect way to spend the evening. The cocktails were fantastic, and our server recommended the queso, proudly mentioning that it had recently won a competition. It impressed us so much that we came back for dinner the very next night, and it absolutely did not disappoint. We ordered the ribeye tacos, pork tacos, and the award-winning queso with borracho beans, and every single dish was incredible. Everything was fresh, flavorful, and beautifully prepared. The only downside was that we were so full we didn't have room for dessert! The service was just as memorable as the food. Every server we interacted with was friendly, attentive, and incredibly knowledgeable about the menu, making the entire experience even better. It took a while for us to be greeted and seated (5ish minutes) but once seated, our server Emmalee was very attentive, apologetic for the wait in getting our cocktails to us, and even for accidentally spilling a very full plate of chile rellenos on the floor near my foot. It barely spilled on my dress but she offered to give me her personal Tide stick! We loved the Hootenanny cocktail (I'm a mezcal girl), the Grulina Tobola (shot of mezcal), shrimp aguachile verdes, chile rellenos with beef, and the enchiladas poblanas. Aguachile - perfect citrus to spice balance. Shrimp were medium size and perfect! Their house made tortilla chips were incredible. Chile rellenos - I've never had red caldillo but um, I only want this version of chile rellenos from now on. Enchiladas poblanas - the best spicy, creamy version of poblanas sauce I've ever had. This restaurant has all the vibes. I was in Fredericksburg to take care of family business and found this place looking for dinner spots. WHAT A FABULOUS PLACE! The food was outstanding. I had the chicken enchiladas. Reading an earlier interview where someone complained the plate did not come with rice/beans. A completely ridiculous review to say the least. My place came with three large enchiladas, overstuffed with the most flavorful smoked chicken, covered in a rich poblano sauce and drizzled with sour cream. The best enchiladas I've had since leaving California 10+ years ago. Talking to my server I was not at all surprised to learn all of the recipes are family recipes from Sonora and Oaxaca Mexico. The restaurant is family owned by a father and son with the son being the chef. All of the tables, chairs and decor are straight from Mexico and very high quality. I sat outside listening to modern Mexican music and enveloped by huge hand blown glass pieces serving as lighting. There was a huge art piece recently brought from Mexico which was just incredible! I also ordered and glass of wine and chips and guacamole. The wine was very good and the bartender complimented me with a nice heavy pour. The guacamole was at least a 1/2 pint portion surrounded by a large portion of chips, a great appetizer for 3 or 4 people. I did ask about rice and beans. They are sold separately and feed 3 - 4 people. The server was very attentive without being intrusive and a pleasure to talk to and learn the history of the restaurant. We picked this restaurant for my husband's father's day celebration dinner. I had looked over the menu beforehand so the prices weren't a big surprise. We ordered the chips and salsa, two margaritas, queso flamedo, shrimp tacos, enchiladas poblabo and refried beans. Everything was delicious and fresh. We couldn't decide which entree was better because they were both amazing. The downside was they didn't offer anything my son would eat at a reasonable price so he ate some chips and we got him something afterwards. This meant that some members of our party had nearly finished their meals while others were still waiting for theirs, entirely disrupting the communal aspect of dining together, especially for a special occasion. It was evident that your team was struggling; the staff appeared visibly strained and under immense pressure, leading to what felt like an overwhelmed and understaffed environment. Despite our repeated attempts to politely voice our concerns to the waitstaff and management throughout the evening, we observed no improvement in the service. In fact, the situation seemed to deteriorate as the evening progressed, leaving us feeling neglected and our special occasion tarnished. While we had truly wanted to enjoy our time at your restaurant, the consistent delays, disjointed service, and apparent lack of effective management completely overshadowed what should have been a joyful celebration. The food was expensive, but to be fair, on par with the area pricing in general. We enjoyed the salsa sampler-especially the honey infused and spicy selections. Anyway, with some light research and quick reservation we got to Casa Chloe, and were presently surprised by the live music, and cute decorations. Our waitress came around and took our order, and that was when the problems started. We put in some apps and drinks, and they took nearly 30 minutes to arrive. In that time we didn't see our server once. Not to check-in, not to explain the wait, just radio silence. Finally one of our appetizers came out, and it was the flaming queso. Credit where credit is due, it was really good, but it took another 10 minutes for our chips and salsa to come by. 40 minutes, to get an order of chips and salsa.... That about encapsulated the night. It took, Over two hours to get our entrees, by which point our appetite had dissipated. In that time we saw our server maybe 4 times, and had our water glasses refilled 3 times. Here's the thing. I have a lot of grace for restaurants, but the lack of communication partnered with the face the restaurant wasn't even filled (empty tables abound), really ruined the whole vibe. Casa Chloe has never disappointed. My husband and I have been here several times. Their food is spectacular, especially the ribeye tacos and beans. The service has always been great, my husband and I usually sit at the bar and they make great margaritas. My biggest issue is that their website, instagram, facebook, and answering machine state their hours as mon-sun open at 4pm. This was not the case yesterday. My husband and I show up at around 4:30 pm and it is closed. No explanation, nothing. I would expect a business to be true to their hours of operation and at the very least have some kind of alert either on social media stating they will be closed today. Very disappointing. read more

Be prepared for a delicious surprise! Our main dish was the Ribeye Tacos and the come served with a side of bone marrow... OMG!! If you get this dish, remember to scrap the bone marrows from the bone and add it to your tacos, game changer!! Their drinks are excellent and service is wonderful. We came in from Dallas to spend the day in Fredericksburg and we thoroughly enjoyed our time until we arrived at the hostess stand at Casa Chloe. I called Casa Chloe over a month ago and specifically asked them if I could or needed to make a reservation due to my party size and I was told reservations were not needed. All of that just to be turned away and told by Roxy this evening that they could not accommodate our party of 12 even if we split it into 6 and 6 or 3 groups of 4 because "it's just some guys cooking in a kitchen with a dream", Roxy's exact words. She even suggested that maybe I had them confused with another Mexican restaurant and I told her unless they have multiple locations in Fredericksburg that's impossible and I know exactly what restaurant I called. Roxy said reservations are recommended with parties over 6. I told her recommended and required are two different things and she still refused to accommodate us. I am hoping this review will encourage everyone to find some place else to dine that will provide the best customer service and will not be dismissive and unaccommodating. Absolutely horrendous experience. Do not recommend. We made a reservation for 12 people, confirmed two days in advance, and upon arrival were seated outside in 30° weather on January 18th. This is not an exaggeration. When we asked to be moved inside or to a warmer area, we were flat-out refused. No accommodation, no solution, no concern. We were seated at 8:00 PM and did not receive dinner until 10:00 PM. For a party of twelve with a reservation, this is completely unacceptable. To make matters worse, food came out so inconsistently that some people had finished their meals before others even received theirs. It ruined the entire group experience. The service was disorganized, unprofessional, and indifferent. There was zero ownership of the situation despite obvious issues from start to finish. As if that wasn't enough, the bill was wrong and we were overcharged, forcing us to spend even more time correcting yet another mistake after an already miserable night. Cold, ignored, delayed for hours, poorly served, and incorrectly charged -- this was hands down one of the worst dining experiences I've ever had. A reservation clearly means nothing here. From the multiple times they had to tell us my daughter was doing something wrong (she is.extremely well behaved) it felt like we were being constantly watched and treated as if we were not welcome by the hosts and manager. Our server Devan saved the night from disaster because of her ability to ease our discomfort. Our food took a very long time. She noticed that we were kind of looking around and came to let us know that out food would be out soon. She asked if we needed more drinks or maybe some more chips and salsa while we waited. A couple of minutes passed and she came back and said that there had been a mistake and the other server delivered our food to the wrong table. She difused our anger with her kindness. She brought us a beverage and we relaxed and waited for them to make our food again.
